Earlier in the day I was talking with someone about how people are drinking now. Not whether they’re drinking — that’s a different question — but what they’re choosing when they do, and why.

We started talking about the questions people seem to be asking before they order. Where did this come from? What’s in it? Does it need sugar to taste good? Can it stand on its own?

I didn’t think much more about it.

Then a few hours later I was sitting with a friend drinking La Leyenda, and he kept glancing at his phone.

He wears one of those continuous glucose monitors — the kind that sends real-time readings to an app. I had never really watched one work while someone was drinking. He was having La Leyenda neat and every few minutes he’d look at his phone again.

His glucose line wasn’t moving.

He was genuinely surprised. He kept checking.

One person, one evening. Not a clinical trial.

But it reminded me that almost exactly three years ago I wrote about tequila, mezcal and health. Back then I was asking a fairly simple question: if you’re going to drink an agave spirit, are some choices better than others?

Three years later, I’m asking the question again. I just look at it a little differently now.

A straight distilled spirit consumed neat contains essentially no carbohydrates. The American Diabetes Association describes spirits as practically carbohydrate-free.

That’s very different from what happens when we start adding things to them.

Think about a margarita. Orange liqueur, agave syrup or simple syrup, fruit juice, sometimes premade mix. An espresso martini brings coffee liqueur and usually something sweet. Canned cocktails can contain sweeteners, flavorings and juice concentrates.

None of that is necessarily bad because it happens to be in a cocktail. I enjoy a good cocktail myself.

But it isn’t the same drink anymore.

So when my friend’s glucose remained flat, I wasn’t interested in claiming La Leyenda was somehow doing something beneficial to his blood sugar. What interested me was much simpler.

What else was in his glass?

Nothing.

He was drinking the spirit neat.

And then there are the calories. Alcohol itself has them — roughly seven calories per gram. But once you start adding syrup, liqueur, juice or whatever else is going into the cocktail, you’re obviously no longer talking about the spirit alone.

The spirit and the cocktail are not the same nutritional decision.

Sometimes the easiest way to understand that difference is simply to remove everything else. Pour the spirit neat and see what’s actually there. That’s really the idea behind our Sipping Experience Kit — tasting La Leyenda without having to hide it behind anything.

Now, before somebody reads this and thinks I’ve decided mezcal is the new green juice, I haven’t.

Alcohol is alcohol. I’m not suggesting anyone start drinking for their health, and I’m certainly not suggesting anyone drink more because the spirit happens to come from agave.

That’s not the point.

I’m interested in what happens after you’ve already decided you’re having a drink.

I still have plenty of decisions to make after that. What am I drinking? How was it made? What am I putting into it? Am I drinking it neat or adding syrup, juice and liqueur? Am I going to sip it over the next hour or start doing shots? Did I eat? There’s water on the table, right

?

And frankly, what time do I have to get up tomorrow?

Those things are part of drinking too.

La Leyenda is made from 100% Blue Weber agave, harvested at full term in Zacatecas.

I’ve written enough about full-term agave that most of you already know where I stand. Give the plant its time.

I’m not suggesting that somehow makes alcohol healthy. It doesn’t. I simply want to know what I’m drinking, where it came from, how the raw material was grown and what happened before it reached my glass.

We obsess over those things with coffee. Wine. Olive oil. Food.

I don’t see why we should suddenly stop asking when somebody puts a spirit in front of us.

And time doesn’t stop mattering once the liquid leaves the still.

Some of our members have experienced that part of La Leyenda through our Barrel Program, choosing a barrel and allowing the spirit to continue developing rather than deciding everything needs to happen faster.

For me, it comes from the same place.

If we’re going to talk about choosing better, time has to be part of that conversation.

There’s another part of this subject I’ve avoided writing too confidently about because I can’t give you a scientific explanation for what I’ve experienced.

Hangovers.

I’ve been hearing the same comment after La Leyenda tastings for years.

“I can’t believe I don’t have a hangover.”

I’ve experienced it myself.

When I drink La Leyenda neat, slowly, usually with food and water during the evening, I rarely wake up with what I would call a hangover. I’ve heard the same thing from customers, friends and people we’ve poured for at tastings.

I can’t tell you La Leyenda won’t give you a hangover. Drink enough alcohol and biology will eventually win that argument.

But I’m also not willing to dismiss something I’ve heard repeatedly over the years simply because I can’t give you a neat scientific explanation for it.

There is research showing that what we drink can influence how we feel the next day.

One peer-reviewed study published in Alcoholism: Clinical & Experimental Research compared bourbon with vodka at equivalent alcohol doses. The bourbon contained substantially more congeners — compounds other than ethanol created during fermentation, distillation and maturation — and participants reported worse subjective hangovers after drinking it.

The interesting part is that ethanol itself was still a much bigger factor than the congeners.

Which makes sense.

Drink too much and what was in the bottle is eventually going to become only part of your problem.

The rest of the evening counts.

Sometimes I wake up tired because I went to bed at 2:30 in the morning and slept four hours. That’s not necessarily a hangover. Sometimes I simply should have gone home earlier.

If someone has five cocktails, eats something heavy at midnight, goes to sleep at three and wakes up four hours later feeling terrible, there are quite a few suspects in that lineup.

We have a tendency to blame the tequila.

La Leyenda was built to be sipped, not shot.

I normally have a glass of water for every pour. I’ve always done it that way. Not because I believe the water magically neutralizes alcohol. It doesn’t. It just slows me down.

I’ll sip La Leyenda, have some water, eat something, keep talking. An hour can go by without really thinking about another pour.

That’s how I drink our Blanco and Reposado. Neat, slowly, with water beside them.

And this brings me back to the conversation I had earlier yesterday.

For the last few years we’ve heard the same thing over and over:

Gen Z is drinking less.

They are, in some ways. Moderation is real. Fewer occasions, fewer drinks on some of those occasions.

But the numbers are a little more interesting than the headline.

According to the latest IWSR data, alcohol participation among legal-drinking-age Gen Z consumers across 15 major markets is now 74%. The adult average is 76%.

Three years ago Gen Z was at 66%.

So no, they haven’t abandoned alcohol.

Something else caught my attention. The average number of alcohol categories a Gen Z drinker consumes on a drinking occasion has fallen from 2.8 to 1.8 in two years.

Then there’s the NIQ research I found particularly interesting. When Gen Z consumers were given a fixed budget, 57% said they would choose one or two higher-quality drinks. Only 14% would choose four or five lower-quality ones.

That sounds less like a generation that doesn’t care about drinking and more like one becoming particular about what deserves to be in the glass.

I understand why the large producers see the change as a problem. Their businesses depend heavily on volume. If somebody who used to order three drinks now orders one, that’s a decline.

But what if that person is willing to spend more on the one?

That’s a very different consumer.

And frankly, it’s one I understand.

If I’m only having one drink, I want it to be good. I want to know where it came from. I’d rather taste the spirit than cover it with something else. And I don’t particularly need another one simply because the first glass is empty.

Many of you reading Agave Talks have been drinking this way for years.

Last night my friend wasn’t thinking about IWSR, Gen Z, congeners or any of this when we poured La Leyenda.

He was mostly fascinated by the little line on his phone that wasn’t doing what he expected.

We kept talking and sipping. There was water on the table. Nobody was in much of a hurry to pour another one.

Three years ago I wrote about whether agave spirits could be a better choice. I’m still not interested in calling alcohol healthy.

But if I’m going to have a drink, today I care a lot more about what it is, where it came from, what’s been added to it and how I’m drinking it.

Judging from some of the conversations I’ve been having lately, I don’t think I’m the only one.

We spend a lot of time talking about what goes into a bottle of tequila or mezcal.

Almost nobody talks about what doesn’t.

A distillery isn’t so different from a kitchen in that respect. The guest sees the finished plate. The kitchen sees everything it took to make it.

With agave spirits, we spend almost all our time talking about the plate.

Think about what actually arrives at a distillery. A fully grown Blue Weber agave at harvest can weigh between 40 and 90 kilograms. The thick leaves are stripped off before cooking. What remains is the piña, the dense heart of the plant — the part that gets cooked, crushed, fermented, distilled.

The bottle is only the part we see.

After cooking and crushing, the fibrous spent pulp — the bagazo — piles up outside the distillery. The juice has been extracted. Most of the fermentable material we were after has moved on. What remains is the physical evidence that an enormous amount of raw material went into making a relatively small amount of liquid.

There is also, after distillation, a liquid stream called vinazas.

And vinazas are where things get more complicated.

Bagazo, at least, can find another life.

It is fibrous and solid, and producers have been dealing with it for generations. Some of the solutions are fairly straightforward: fuel for boilers, compost and organic matter returned to the soil, or supplemental roughage for cattle.

Research has shown that agave bagazo can be used as supplemental feed for ruminants — not as their main diet, because its high lignin content limits digestibility, but alongside regular feed, much as a farmer might make use of corn stubble after harvest. It isn’t particularly rich nutritionally, but it is useful, available and already there.

Agave fiber is also finding its way beyond the distillery.

Adobe reinforced with agave fiber has existed in Mexican construction for generations. More recently, companies and researchers have been working with the material for packaging, bioplastics and composites. In early 2026, at least one tequila brand began using compostable pallets made from 70% agave fiber.

And then there’s something I hadn’t really thought about until recently.

The beauty industry is working with Blue Weber too.

Agave leaf extracts already appear in commercial skincare products, and researchers in Mexico are studying whether tissue discarded by tequila production can be used in sunscreens and other personal-care products. Other researchers have extracted lignin from Blue Weber bagazo and tested it for its UV-absorbing properties.

What caught my attention wasn’t so much that agave is finding its way into cosmetics. It was the material they’re actually interested in: the pencas, the fiber, even the bagazo.

Things the spirits industry has spent generations treating largely as leftovers.

Vinazas are different.

They come off the still hot, acidic and loaded with organic material. And they come in enormous quantities.

Depending on the process, producing one liter of tequila can leave roughly ten to twelve liters of vinazas behind.

Put that in terms of something familiar.

A standard 750-milliliter bottle contains less than a liter of spirit. Using that commonly cited tequila-industry estimate, producing that volume of spirit can be associated with roughly 7.5 to 9 liters of vinazas.

Neutralizing the acidity is necessary, but it only solves part of the problem. The liquid still carries a very heavy organic load.

And this is where the science is actually quite easy to picture.

Put untreated vinazas into a river and microorganisms begin feeding on all that organic material. They need oxygen to do it.

Imagine suddenly putting thousands of extra diners into a room with a fixed amount of air. The food isn’t the immediate problem. Everyone is breathing from the same supply.

Something similar happens in water.

As microorganisms consume the organic material, they also consume the dissolved oxygen that fish and other aquatic life depend on. At sufficient concentrations, there simply isn’t enough oxygen left for the ecosystem around them.

It doesn’t look dramatic while it’s happening. It’s basic biology doing exactly what biology does.

On land, repeated uncontrolled discharge can also affect the soil and eventually create conditions where plants struggle to grow.

This is why vinazas aren’t simply dirty water looking for somewhere to go.

They need treatment.

There are ways to deal with them.

Larger facilities have built treatment plants. Some use anaerobic digestion, which breaks down the organic material and can capture biogas in the process. Smaller biodigesters are also being used at artisanal operations in Oaxaca.

The problem is cost and scale.

What makes sense for a distillery producing millions of liters may make absolutely no sense for a small producer making a fraction of that. So despite all the technology available today, there still isn’t one practical answer that works everywhere.

And that distinction matters.

Because managing the acidity isn’t the same thing as treating the vinazas. Moving them somewhere else isn’t necessarily treating them either. What ultimately happens to that liquid matters.

We deal with the same reality.

At La Leyenda, making mezcal leaves us with bagazo and vinazas just as surely as it leaves us with the spirit that eventually goes into the bottle.

Some of our bagazo stays on the estate and is used as supplemental roughage for our cattle.

Our vinazas are collected and neutralized, then sent to a specialized company for further treatment. Neutralizing the acidity is only part of the process. The remaining organic load still has to be managed, which is why our vinazas don’t simply end there.

Neither practice makes for particularly glamorous photographs.

They’re simply part of making what we make.

We have spent years as an industry teaching consumers to ask what goes into the bottle.

What agave.

How old it was.

How it was cooked.

How it was fermented.

What happened in the still.

Those are good questions. We should keep asking them.

I just think there’s another one worth asking.

What happened to everything that didn’t make it into the bottle?

And before the plant became a spirit, it became something else entirely.

The first agave drink in Mexico wasn’t distilled. It wasn’t particularly strong either. It was pulque.

For thousands of years, people in Mexico had been drinking the fermented sap of the maguey. When the plant reaches maturity and prepares to send up its flowering stalk, the center can be opened and the aguamiel collected — a sweet, slightly viscous liquid that looks nothing like the clear spirit we associate with agave today.

Leave that aguamiel to ferment and you get pulque. Milky, slightly sour, alive with microorganisms and mildly alcoholic.

I’ve had pulque a number of times, and if your only reference for agave is tequila or mezcal, it’s difficult to believe they all come from the same family of plants.

In Aztec society, pulque wasn’t something you casually ordered another round of. It was associated with Mayahuel, the goddess of the maguey, and its consumption came with rules. Priests drank it ceremonially. Elders were permitted to drink it. Warriors could consume it in certain ritual circumstances.

There was even a divine world surrounding intoxication itself. Ometochtli — Two Rabbit — belonged to the Centzon Totochtin, the 400 rabbits associated with pulque and the many faces of drunkenness.

Apparently the Aztecs understood something about drinking that we’re still figuring out.

After the Spanish conquest, many of the old restrictions surrounding pulque weakened and production became more commercial. An entire agricultural economy grew around it, and pulque remained deeply woven into Mexican life for generations.

All of this was happening before tequila existed.

Sometime in the 16th or early 17th century, people began distilling agave.

Exactly how that happened is still debated. The conventional account says distillation arrived with the Spanish, who brought European knowledge and equipment with them. Other research has raised the possibility that forms of distillation may have existed before the conquest.

The truth is, we still don’t know exactly how distillation arrived.

What we do know is that by 1608, colonial authorities in Jalisco were already collecting taxes on vino de mezcal. And governments have always been remarkably good at finding things once there is money to be collected from them.

So agave distillation was clearly established enough by then to have entered the colonial economy.

The name itself tells us something. Mezcal comes from Nahuatl — metl, agave, and ixcalli, cooked.

There wasn’t one mezcal in the modern sense. Different agaves were being cooked and distilled in different parts of Mexico, by different people and according to local methods.

One of those places was a town in Jalisco called Tequila, founded in 1530.

At that point, Tequila was the place. The drink was still mezcal.

For a long time, what we now call tequila was known as vino de mezcal de Tequila.

Read that name again and you can see where we were in the story. Tequila was still a place attached to mezcal, not yet the category we know today.

During the 19th century, producers around Tequila and Amatitán began changing the way they worked. Masonry ovens became common. Steam entered production. Crushing evolved. Distilleries became larger and more consistent, and Blue Weber agave increasingly became central to what the region was producing.

The spirit coming out of that part of Jalisco gradually developed an identity of its own, but these things don’t happen as neatly as historical timelines sometimes make them appear.

There wasn’t a day when mezcal ended and tequila began.

People made something in a particular place and developed their own ways of making it. Others began recognizing the difference. A reputation formed. Eventually the name people used for it changed too.

By the 1870s, Cenobio Sauza was building what would become one of the important houses in tequila’s history. In 1873, three barrels crossed into El Paso, Texas, among the earliest tequila exports to the United States.

Sauza also began using the shorter name: tequila, rather than vino de mezcal de Tequila.

It seems like a minor change now. Drop a few words from the name and move on. But it gave the spirit an identity that could travel independently of the broader mezcal family from which it had emerged.

And it traveled.

By the 1870s, roughly 80 percent of Mexico’s mezcal exports were already heading to the United States. The American relationship with agave spirits goes back much further than most people realize.

Formal protection came later.

By the time Mexico established tequila’s Denomination of Origin in 1974, people had already been making, selling, drinking and exporting tequila under that name for roughly a century.

The Denomination of Origin put legal boundaries around something history and commerce had already been separating. Tequila became a legally defined Mexican product, made from Blue Weber agave within authorized territory and according to specific standards.

Four years later, in 1978, Tequila was registered internationally under the Lisbon Agreement.

Today we tend to learn tequila in the opposite direction. We start with the rules: where it can be produced, which agave can be used, what the categories mean, what qualifies and what doesn’t.

History didn’t happen that way.

People worked with agave first. The methods developed. Regional differences appeared. Names followed. Eventually laws were written around what generations of people had already been making.

For those who enjoy staying close to that longer story — the land, the decisions and the people behind what eventually reaches the glass — that’s really what The Legends Club has always been about.

Today’s tequila drinker holds a bottle whose name took centuries to arrive.

Long before tequila there was agave. There was aguamiel and pulque. Later came distillation, vino de mezcal, regional methods and eventually a town in Jalisco whose name became inseparable from the spirit produced around it.

Today you can walk into a bar in Tokyo, London, Madrid, New York or Mexico City and simply ask for tequila. Nobody needs an explanation.

Think about that for a second.

What started with a flowering stalk, a goddess and a cavity full of sweet sap eventually found its way into bars all over the world.

Quite a journey for one plant.

There is a moment in the life of an agave when the plant stops preparing for us.

It begins preparing for itself.

After years of storing energy underground — fructans accumulating slowly in the piña, season after season — a stalk begins rising from the center of the plant. It can climb six meters or more into the air. In the wild, it becomes something spectacular: a towering column covered in flowers, drawing bats across the landscape.

We call it the quiote.

And its appearance changes the conversation.

For most of its life, Blue Weber agave does something that no intervention can accelerate without cost.

It accumulates.

Fructans build slowly in the heart of the plant, storing much of the energy that will eventually matter to the distiller. It takes years for the agave to reach the maturity we’re waiting for. The plant doesn’t care about schedules. It responds to soil, altitude, rainfall, temperature — conditions that can’t be negotiated away.

At some point, the plant enters the next stage of its life.

The quiote is how it announces that decision.

Once the stalk begins to rise, the plant has shifted its intention. The fructans stored in the piña begin moving toward reproduction — into the stalk, the flowers, the seeds. The plant is doing what every living thing eventually does: trying to continue beyond itself.

This is why jimadores pay attention. Not because the quiote alone determines harvest timing — age, size, field conditions, and agronomic judgment all matter — but because once the stalk appears, the clock the plant has been running on is no longer aligned with ours.

The quiote is not our harvest signal. It is the plant’s.

From a distance, a quiote almost looks out of place.

You can have a field of Blue Weber sitting low against the ground — row after row of those familiar blue-green pencas, each plant compact and close to the earth — and then one plant suddenly breaks the horizon. The stalk rises straight up through everything around it. Six meters. Sometimes more.

You don’t need to be an agronomist to understand that something has changed.

That’s one of the things I find myself thinking about in the field. So much of what matters in agave happens slowly and almost invisibly. Years pass underground and inside the piña. You don’t see the fructans accumulating. You don’t see maturity arriving one season at a time. The plant gives almost nothing away.

Then it grows a quiote.

And suddenly all those invisible years have a visible consequence.

For the jimador there is nothing romantic about missing this moment. This is agriculture. Timing has consequences. But for anyone who only knows agave through a bottle, seeing a mature plant begin to flower changes your understanding of what you’re drinking.

The raw material isn’t simply an ingredient waiting indefinitely for us to come collect it.

It has a life of its own.

And eventually that life intends to move on without us.

There’s something worth sitting with here.

For years, we ask the agave to accumulate. We plant it, tend it, wait for it. Everything about the work of growing Blue Weber for spirits assumes that the plant will keep storing what we need.

The quiote is the plant’s answer.

It has stored enough. Now it intends to spend.

What happens to those reserves depends on the decision made in that window — harvest the piña while what years of accumulation built is still concentrated there, or watch the plant redirect everything into flowering.

Both are natural outcomes. One is ours.

Most people who drink tequila or mezcal have never seen a quiote.

They taste the result of decisions made before and around that moment, without knowing those decisions were made at all.

That’s not a gap in their knowledge. It’s simply what it means to drink something that carries more history than a label can hold.

Our Blanco and Reposado exist because of what happens in that window — when the plant has accumulated what years of good conditions produced, and the decision is made to bring it in rather than let it spend itself on something else.

The quiote would have been beautiful.

The plant has no opinion about denominations. No marketing strategy. No category loyalty. No opinion about which tradition deserves its sugars.

It simply grows.

Everything that happens after that is human interpretation.

For most of its life, Blue Weber is simply Blue Weber.

It spends years doing what it has always done — drawing minerals from the soil, storing sugars, and waiting.

That decision belongs to the people who grow it, the traditions that shape it, and eventually, the law that names it.

And yet, from the same plant, two entirely different spirits emerge.

Is it at harvest? The agave looks the same in the field regardless of what anyone intends to do with it. The jimador’s machete doesn’t distinguish between categories.

Is it at cooking? Over time, different traditions began asking different things of the same plant. Some cooked it in masonry ovens, others in earthen pits, and later, some embraced steam. The methods evolved. The plant remained the same. But the plant still didn’t choose any of this. Someone chose it on the plant’s behalf.

Is it at fermentation? Distillation? Bottling? Or does the difference actually begin much earlier — not in any physical step, but in the moment when two different traditions looked at the same plant and began imagining different possibilities?

That’s the question I keep returning to.

The denominations didn’t create the difference between tequila and mezcal.

They recognized a difference that human interpretation had already been building for generations.

Geography shaped the possibilities. Tradition shaped the methods. Regulation eventually wrote them into law.

But the plant was the same plant throughout.

What changed was what people asked of it.

This is where La Leyenda sits — in territory most people don’t realize exists.

We grow Blue Weber agave at around 6,500 feet. Had history unfolded a little differently, the same Blue Weber growing just 500 meters away could easily have belonged to a different tradition. Instead it enters ours — within the mezcal denomination of origin, shaped by our choice to steam rather than pit-roast, because the mineral character of our agave in our specific soil deserves to arrive in the glass without smoke added over it.

The law calls what we produce mezcal. And it is mezcal. But many tequila drinkers find something familiar in it before they can explain why. That shouldn’t be surprising. They’re meeting the same plant in a different interpretation.

We didn’t choose this position because it was strategic.

We chose it because it was honest.

The plant was already there. We simply tried not to impose more interpretation on it than necessary.

Our Blanco and Reposado are the most direct expression of that choice — Blue Weber allowed to become what it is, rather than what either tradition might prefer it to be.

Not the work.

The vocabulary.

Over the years I’ve watched certain words rise almost out of nowhere. For a while they seem to explain everything.

100% Agave.

Then Ultra Premium.

Soon enough almost everyone wanted to be Small Batch.

More recently the conversation became Additive-Free.

Now I keep hearing Craft.

None of those words are wrong.

In fact, every one of them began by describing something real.

What interests me is something else.

The words keep changing.

The work doesn’t.

For a long time I assumed that meant consumers were becoming harder to please.

Looking back, I don’t think that’s what was happening at all.

I think people simply became less willing to accept words without understanding the work behind them.

There’s a difference.

At first, a new word answers a question.

Eventually, it creates a new one.

When 100% Agave appeared, people wanted to know what it meant. Years later, they wanted to know whether that alone was enough. The same thing happened with Ultra Premium. Then Small Batch. Then Additive-Free. Now I hear the same conversations beginning around Craft.

I’m not criticizing any of those terms. Most of them started honestly. They helped people notice something worth noticing.

What I’ve come to believe is that no word can carry the weight forever.

Sooner or later, people start looking underneath it.

The interesting part isn’t that the vocabulary keeps changing.

It’s that the work almost never does.

Long before anyone was talking about Additive-Free, there were producers making decisions they believed were right for the spirit in front of them.

Long before Craft became part of the conversation, there were families working the same fields, harvesting the same agave, making the same careful choices they had made for generations.

The language arrived later.

The work was already there.

Looking back, I don’t remember anyone sitting around trying to predict what the industry’s next important word would be.

I remember much simpler conversations.

“Is this the best way to make it?”

That’s a very different question.

It doesn’t begin with marketing.

It begins with the work itself.

Not because we were trying to predict where the market was going.

Quite the opposite.

We were too busy trying to make the best mezcal we knew how to make.

Years later, some of the language caught up.

That realization surprised me more than I expected.

Not because it proved we were right.

Because it reminded me that good work often waits a very long time before someone invents the language to describe it.

And the search will begin again.

The field, meanwhile, will keep doing what it has always done.

It grows at its own pace.

The people who care for it keep making decisions that won’t reveal themselves for years.

Most of those decisions will never appear on a label.

Some shouldn’t.

Who owns the land — is it family or corporate?

What does Full Term actually mean in practice, and what does harvesting early cost you?

Why steam instead of a pit?

Why no additives when they’d solve the consistency problem so much more efficiently?

These aren’t beginner questions.

They’re not even intermediate questions.

They’re the questions of someone who already understands the surface of the category and has started looking underneath it.

There was a period — not long ago — when the category ran mostly on momentum.

The questions were broad because the category was moving fast and few people expected depth yet.

What’s changed is that momentum is no longer enough on its own.

By the time a Cognac barrel reaches Zacatecas, someone else has already spent years making decisions inside it.

Another distiller. Another country. Another tradition. Another patience.

Someone chose the wood. Someone decided the toast level. Someone filled it. Monitored it. Emptied it when the time was right. Years of judgment accumulated inside those staves as character. The wood absorbed what it held. It was changed by it.

Then the barrel was emptied.

Shipped.

Sold.

And eventually it arrived in a warehouse in Zacatecas, carrying all of that—all of those decisions, all of that time—into a completely different conversation.

Our Añejo isn’t only aged in wood.

It is aged in wood shaped by someone else’s work.

Oak is a material.

Someone else’s work is an inheritance.

And inheritance is different from raw material in the same way a letter is different from a blank page.

He wasn’t making a mezcal decision when he chose his barrels, when he filled them, when he waited.

He was making a Cognac decision.

The fact that his work would eventually travel to Mexico, that it would meet a Blue Weber agave harvested after seven years in volcanic soil, that it would spend more time quietly combining with that spirit—none of that was part of his calculation.

He simply did his work.

Carefully.

Completely.

And then let it go.

He never knew the barrel’s best work was still ahead of it.

There is something worth sitting with in the geography of this.

France and Mexico are not obvious collaborators.

Neither of them finished it.

That’s the part I keep returning to.

The French producer didn’t finish the barrel’s story when he emptied it.

The maestro didn’t begin it when he filled it.

They each completed only half of something neither of them could have made alone.

That is either a coincidence or it says something about what serious craft recognizes in itself across distance.

I think it’s the second.

Our Añejo exists at the place where those two traditions met.

Not by design.

By the logic of what careful work eventually produces when it travels far enough.

I could spend the rest of this edition talking about chemistry.

The chemistry is real.

It just isn’t the reason I keep thinking about this barrel.

What I keep thinking about is something harder to measure.

I was there to answer whatever he wanted to ask.

The first question was about the agave.

Then why we refuse additives if they make consistency easier.

Then who owns the fields.

The questions kept coming.

None of them bothered me.

Not because I had rehearsed the answers.

Because I’d been living them for years.

There is a difference.

A rehearsed answer tries to sound convincing.

A lived answer doesn’t need to.

It took me a few minutes to realize what it was.

He stopped trying to find the weak spot.

That afternoon reminded me that authenticity isn’t something you declare.

I’ve come to believe there are really two kinds of stories in this business.

The other began years before anyone asked anything at all.

The first depends on memory.

The second depends on reality.

One has to be maintained.

Every season we waited.

Those decisions meant that when someone finally asked why we do things the way we do, I never had to invent an answer.

I only had to tell the truth.

Long before agave spirits had names, the agave itself already held a sacred place in Mesoamerican life.

This 16th-century depiction of Mayáhuel, from the Codex Magliabechiano, reminds us that the story began long before anyone called it tequila... or mezcal.

Hello Legends.

I went looking into something this week that happened more than two centuries ago, and I ended up somewhere I didn’t expect.

Imagine spending years building something with your hands and your land — and then being told, by a king you will never meet and who has never tasted what you made, that it can no longer exist.

In 1785, that is exactly what happened. The Spanish crown banned the production of agave spirits across New Spain. They didn’t call it Tequila. They didn’t call it mezcal. Those names would come later — much later. At the time, it was simply a spirit people refused to stop making, and a competitor Spain wanted off the table. The ban wasn’t about quality. It was about competition: this spirit, whatever it was eventually going to be called, competed too well with the wine and brandy Spain wanted its colonies to buy instead.

Somehow... I recognized it.

Production didn’t stop. It went underground — quietly, illicitly, without anyone’s permission to exist at all. The trade became something people had to hide. The spirit itself didn’t change. The agave was still cooked the same way it had been cooked for centuries before the ban and would be cooked for centuries after — in earthen pits, a method already ancient by the time any Spanish king had an opinion about it. The ban didn’t invent secrecy in how it was made. It only made the people making it criminals for continuing to do what they had always done.

I keep coming back to that distinction. Not the ban. The part after it.

People simply kept making it.

Not because they were defying anyone on principle. Because the work itself had already become the point. Whatever this spirit was to the people making it — a living, a craft, a way of marking time — it was not something a decree from Madrid could reach. The law could make it illegal. It could not make it stop existing.

I’ve spent years now refusing the version of this business that would be easier — harvesting early, correcting in the bottle what the field didn’t have time to build, calling something Full Term that wasn’t. Reading about a decade when an entire category of spirit existed without anyone’s permission to exist at all, I understood something about my own stubbornness that I hadn’t quite put into words before.

Conviction doesn’t ask for permission. It just keeps going until permission catches up.

In 1795, the ban lifted.

Not because anyone in Madrid had changed their mind about what it was worth. Because taxing something that refuses to disappear turned out to be more useful than pretending it had.

Here is the part that matters most, and the part I sat with longest: it was not reborn in 1795.

It had never died.

What changed is that everyone simply stopped pretending it had.

I realized, sitting with that, that this isn’t unique to agave. A friendship becomes lifelong long before anyone calls it that. A family earns its traditions one meal at a time, not on the day someone finally writes them down. A reputation is built quietly, through thousands of decisions nobody applauds, long before people begin describing someone as trustworthy.

We assume the important moment is when the world notices.

History keeps suggesting otherwise. The important moment is the one before that — when the work continues even though nobody is watching.

Eventually, the spirit being made in and around a small town founded in 1530 — long before any of this — finally had a name. Vino de mezcal. Not tequila. Not mezcal as we separate them today. One name, for one family of spirit, made across many regions in many ways.

It would be nearly another century before that family began to split.

Through repetition. Through that town’s growing reputation. Through a difference in technique that eventually gave what was made there a different shape in the glass than everything else still simply called vino de mezcal. Slowly, almost without anyone deciding it, the spirit from that particular town earned its own word. Tequila. Everything else that remained closer to the older methods kept the older name, shortened over time. Mezcal.

Centuries after the ban, decades after the names finally split apart, most of what left that region was already destined for a market outside Mexico — true of both names, long before either one was protected by anything written into law.

I won’t pretend that detail didn’t land somewhere personal. La Leyenda has almost no presence in Mexico yet — a handful of private relationships, nothing on shelves, nothing on premise. Reading this, I think I finally understand why I’ve never felt strange about the order things have happened in. It isn’t a gap I need to explain. It’s a sequence. Both of these spirits have been building outward before building at home for longer than anyone currently writing about either one has been alive.

Our Blanco and Reposado — mezcal, made from the same Blue Weber agave most people only associate with tequila — carry that same sequence forward, built here, understood here, and finding the people who recognize them somewhere else entirely, for now.

Standards did not arrive to invent quality. They arrived, eventually, to defend it.

In the decades before any formal protection existed, some producers began quietly stretching what was in the bottle — cutting it with sugars that had nothing to do with agave, betting no one drinking it would notice. For a while, no one did. Until the damage to the category’s reputation became impossible to ignore, and it took the better part of a generation to recover what a shortcut had cost in a single season.

I won’t pretend I read that without thinking of this year. The names of the shortcuts change — sugar then, additives and diffusers now — but I don’t think the temptation underneath them has ever once been new. It is always faster to imitate the appearance of quality than to grow the thing itself. Someone was already choosing the harder path almost two centuries before I was born. I just happen to be one of the people still choosing it, in mezcal.

The legal protection that exists today — the denomination, the regulatory council, the standards written into law — didn’t arrive until nearly two centuries after that first ban. Reading that, I couldn’t help thinking about how often we confuse recognition with creation. We celebrate the day something receives a name, an award, a denomination, a headline. But by then, the real work has usually been happening for years. The law did not create what it protects. It arrived, finally, to recognize what had already become real.

The previous one hundred and ninety-nine rings made the final ring possible. Each one building on what came before. Each one adding to the accumulated structure that the next season would inherit. No one looks at an ancient tree and assumes the most recent growth created it.

Language is replicable. A brand launched today can use every word that serious producers spent years earning the right to say. Additive-free. Single estate. Craft distilled. The vocabulary costs nothing. It requires no history. It asks nothing of the land.

Certifications are replicable. A third-party seal can be obtained. An audit can be passed. A label can be approved. None of these require the decade of decisions that produced the thing being certified.

Positioning can be assembled. A luxury aesthetic can be designed overnight. A premium price point can be set. A brand story can be written by someone who has never visited the field.

None of this is cynical observation. It is simply the reality of a category growing faster than the agricultural system that is supposed to support it.

The question is not whether these things can be copied.

They already have been.

What Cannot

607 hectares of estate-grown agave in Zacatecas cannot be assembled retroactively.

The land was tended before the market decided terroir mattered. The plants were allowed to reach Full Term before Full Term was a phrase on a podcast. The Brix levels — accumulated through altitude, mineral soil, cold nights, and the slow biological work of years — reflect a specific piece of ground that has been in continuous relationship with a specific agricultural philosophy for longer than most current agave brands have existed.

That is not a claim. It is a coordinate.

Vertical integration — from the plant in the ground to the bottle leaving the distillery — was not built as a positioning strategy. It was built for control. For the ability to know, at every stage, exactly what decisions were made and why. For the refusal to outsource the parts of the process that determine everything about the result.

A proprietary yeast culture, developed from the same estate, carries the biological signature of the land itself into fermentation. It cannot be licensed. It cannot be replicated without the place that produced it.

Our Blanco and Reposado are not expressions of a brand strategy. They are the physical consequence of those decisions — made in that order, on that land, over that time.

The Sequence No One Can Recreate

There is something else that cannot be copied.

Labels describe. They do not create.

What Endures

The things that cannot be copied are not protected by law.

They are protected by time.
