This week I am sharing a recipe that I’ve been making regularly for the best part of 30 years. Plus a whole new page for anyone looking for gluten-free vegan chickpea flour recipes.

And then it looks like autumn is kicking in so I’d best better start sharing some warming foods haha!

First… my vibrant basil and pumpkin seed pâté, which you could also call a vegan pesto pâté. Being fully plant-based, there is no cheese, but also no pine nuts and no added oil. All of the lovely richness comes naturally from the soaked pumpkin seeds.

Hemp oiled worktop update from my mountain cottage

Can’t actually believe I did this!!! Here’s my new HEMP oiled worktop!

So, without any DIY experience I’ve manage to create this fitted, curved oak worktop to fit in this space. I was super proud of this achievement haha. I carefully measured edges (using a ramekin dish haha), then cut the shape with my electric jig saw. Finally, sanded and oiled it. Done with LOVE of course. Then I fixed it onto a mini wooden island that I found in a second hand shop.

I’ve tried using OSMO oil to oil my worktops which was highly recommended BUT I honestly can’t stand it, so I’ve gone back to massaging HEMP OIL in and it works like an absolute dream!!!

I am excited that I finally have an operational kitchen so that I can create new recipes for y’all!

Hello my beautiful friends,

I’m home... and after a few days cooking in an outdoor kitchen in temperatures of around 35°C (plus the heat from the oven haha), I have a whole new appreciation for chefs who work in hot climates! 😂

Despite melting into a little puddle several times over the weekend, I absolutely loved every minute of it. As always, there was gorgeous food, wonderful people, and lots of colourful salads, decadent treats and smoothies.

One of the recipes that went down particularly well was this Baked Potato & Spinach Frittata. It’s gluten-free, vegan, wonderfully satisfying, and perfect served either warm or cold. I thought you’d enjoy it too, so I filmed the whole recipe while I was there.

This week feels a little different.

I’ve recently settled into my little home in the foothills of Yr Wyddfa (Mount Snowdon), and although I feel deeply grateful to be here, it’s also brought a surprising mix of emotions to the surface. New beginnings have a funny way of doing that.

It inspired me to revisit and update one of the most personal articles I’ve ever written, with my heart cracked wide open.

It began with a simple question:

Why do so many of us feel lonely, even when we’re surrounded by people?

Over the years I’ve come to believe there’s a huge difference between fitting in and truly belonging. One is about survival. The other is about being willing to be ourselves.

Podcast I’ve been listening to this week...

I highly recommend this conversation with Dr Rangan Chatterjee on the importance of walking for our health.

I’m completely nuts about walking and honestly can’t imagine life without it. It’s one of the greatest gifts we have: free, accessible to so many of us, and profoundly healing in ways that go far beyond physical fitness.

If you care about your health, I think this is essential listening.

And then then dragonfly moment happened…

Yesterday, while out walking with a beautiful friend, a dragonfly gently climbed on my hand and stayed.

Nature is incredible, sacred, and nectar for the soul.

I stood there smiling with an overwhelming sense of gratitude to be alive at all. To witness this extraordinary world. To be entrusted, if only for a few moments, with something so delicate and so utterly free.

Dragonflies have long spoken to me of transcendence. Of all the unseen growth that happens beneath the surface before we realise we’ve quietly grown wings.

My heart is full.

Hello my beautiful friends,

After almost eight years away from Glastonbury, I am finally home.

I’ve landed in the foothills of Yr Wyddfa (Mount Snowdon) in North Wales, surrounded by mountains, forests, rivers and wild places that deeply stir my soul.

Please bear with me if I’ve been a little quieter than usual. I’ve spent the last few months bringing a seriously run-down little house back to life, complete with leaks, electrical issues and a garden that’s more jungle than garden!

If I’m honest, it’s stretched me to my limits.

A year ago I’d never even used a power tool. Now I’m renovating an entire house! 🤣 There have been endless things to learn, unexpected problems to solve, and moments where I’ve wondered what on earth I’ve taken on... alongside plenty of little victories that have made me ridiculously happy.

Some days I feel proud and excited. Other days I end up in tears.

But then I head into the mountains, take a deep breath, and remember exactly why I came here. Out there, none of it seems to matter quite so much.

I feel deeply blessed to be here.

One thing I’m especially proud of is my makeshift kitchen. With a collection of second-hand cupboards and drawers, shelves, portable induction hobs and a mini oven, I’ve somehow managed to create a little space that feels like home.

Over the next year I’ll slowly build the kitchen of my dreams. I’m imagining something with a touch of Hobbit meets Lord of the Rings... warm woods, natural textures and plenty of character.

And of course, despite all the chaos, I’ve still been making sure I eat well.

This week I am batch-making. This is insanely delicious and faff-free (hands up if you like faff-free haha!!!). I am in my friend’s kitchen since mine currently has no worktops or cupboards. More on my new house and renovation soon (first garden update below too - feels like I am uncovering a hidden city in my garden right now!).

This is a super adaptable vegan one pot stew! I’ve done it in a 5 litre pot today which makes about 10 portions. It’s ideal for freezing too.

Hello my beautiful friends,

What a weekend. I spent it at Chalice Well Gardens in Glastonbury, cooking for the most wonderful group of people in a beautifully sacred and inspiring place. If you have never been, it is worth the trip for the gardens alone.

Friday night dinner was one of those meals that combines grounded filling cuisine with vibrant nourishment. I served:

• French lentil cottage pie

• A brand new roasted squash and beetroot raw slaw (the recipe is now live on the site!)

• My classic carrot and broccoli slaw with sun-dried tomato dressing

There was not a morsel left on any plate, which is always the greatest compliment.

I’ve just posted a new recipe that my friends and I are absolutely delighted with - carrot cake oat bars. Soft, lightly spiced, naturally sweetened with date syrup, and they taste like carrot cake but without any of the faff.

I’ve made a video showing you exactly how I make them, plus shared all the tips I’ve learned over the years for getting them just right.

Simple ingredients: oats, grated carrot, tahini, pumpkin seeds and walnuts. No refined sugar, naturally gluten-free, and they keep brilliantly in the fridge or freezer for batch making.

It’s wild garlic season

I’ve just made a batch of wild garlic tapenade and I highly recommend it. It contains only two ingredients and tastes beyond incredible.
