What’s in the Fridge

Stray by Slake Brewing — Light Lager, 3.5% ABV, 355ml Toasty. Honey. Ultra-refreshing.

County Innkeeper Advice Line

Folks always ask me the same handful of questions — over the front desk, over email, over a beer on the porch. Also, visitors unload on threads on Reddit + Trip Advisor. Figured I’d set the record straight on a few things…

Should we stay in Picton, or somewhere more rural? Depends what you want your mornings to look like. Picton gives you walkability (or run-ability) — coffee, dinner, the harbour, all a short stumble from your room. And naturally you’ve booked a room at the HOF. Stay rural and you trade a bit of that convenience for quiet, for stars at night, and for the feeling that you’ve actually left the city behind and not just changed postal codes.

What are the best wineries for red wine lovers? The County leans white and sparkling by reputation, but there are good reds out there if you know where to look — ask around at a few tasting rooms and tell them what you’re after, most will point you in the right direction happily. My two fav’s this year are Trail Estate (helllllo Pinot) and Grange. That said, some fav guests (you know who you are) shared some great Pinot Gris from Stanners - 10/10.

Any good hikes or walks if we’ve got the dog with us? Yes, and bring water for both of you. The County’s trail network is generally dog-friendly, with the shoreline paths being the crowd (and dog) favourites. I love taking our doggos to Little Bluff, the Millenium Trail and Picton Dog Park. Please keep these guys leashed.

Any advice for a first-time visit — where to eat, which wineries to hit? Don’t try to do it all. That’s the number one mistake. Pick a small radius, eat well once a day instead of grazing everywhere, and leave room for the place you didn’t plan for — a farm stand (Vickies), a weird little gallery, a winery with no sign that turns out to be the best one, that long county ride to nowhere. That’s usually how the County gets you. And then you move here.

Is it worth coming for just the day? Honestly? You can do it, but you’ll spend most of the day driving and none of it unwinding. The County rewards slowness — it’s built for a night or two, not a drive-through. Come stay with us instead. We’ll make it worth the extra night.

What’s in the Fridge

We’re always on the hunt for something new to stock our fridge. Take a look at this cutie from our friends at Hinterland — a 250ml aluminum bottle of their Whitecap Mini: a floral sparkling wine with peach, apple, citrus, and a touch of tropical fruit. Perfect size for a picnic in the County, or a day at Sandbanks.

Recipe: Blueberry Sweet Corn Cake

It’s that time in the County — blueberries are dripping off the bushes and we are not mad about it. One of my favourite rides [solo or with some critters] is out to Waupoos, and honestly, you’re legally not allowed to drive there without stopping at Waupoos U Pick Highbush Blueberries (we don’t make the rules). And if you do that, you’ll probably have to stop in at Stella’s. Because why not.

Naturally, that means it’s blueberry cake season. This one’s earned a permanent spot on rotation in our café — and honestly, we’d fight for her. Here she is!

RECIPE:

Blueberry Sweet Corn Cake

Ingredients:

• 300g fresh corn kernels

• 150g medium-grind cornmeal

• 100g all-purpose flour

• 300ml sweetened condensed milk (1 can)

• 75g full-fat sour cream

• 113g unsalted butter (1 stick), melted and cooled

• 2 large eggs

• 1 tsp vanilla extract

• 1 tbsp kosher salt (or 1½ tsp sea salt)

• 12g baking powder (≈1 tbsp)

• 150g fresh blueberries (for topping)

Instructions:

1. Preheat oven to 375°F (190°C). Spray and line a 9-inch round cake pan with a parchment round.

2. Melt the butter and set aside to cool.

3. Place the blender jar on a scale. Weigh in: corn, cornmeal, eggs, condensed milk, sour cream, vanilla, salt, and melted butter. Blend until smooth.

4. Add the flour and baking powder. Blend again, scraping down sides if needed.

5. Pour batter into the prepared pan. Sprinkle blueberries over top.

6. Bake for 30–40 minutes, or until centre is set and a knife comes out clean. The top will be deeply browned. Let cool before turning out.

Lately, driving up Closson Road through all that lilac haze has become tied in our minds to another source of inspiration for us: Slab Creek House.

For Alex especially, working on the house has become something deeper than a restoration project. A necessary creative outlet. A way back into himself.

We’ve noticed over the years that working on historic places creates a strange exchange of energy. You pour life into something forgotten — something neglected, half-collapsed, overlooked — and somehow it gives something back to you in return. The work becomes generative. A renewable resource. The act of restoring these old places seems to reawaken creativity itself — as though the spirit of the structure still wants another chapter and rewards you for helping uncover it.

Slab Creek feels like that for us right now. Less like a project, more like an active source of life force and inspiration.

And maybe that’s why lilac season resonates so deeply here too. Not simply because it’s fleeting, but because ephemeral things have a way of waking us back up. For a few short weeks, the entire County feels vividly alive again. The smell through open car windows. The roadsides exploding into colour. People stopping mid-sentence just to breathe it in.

Tiny ecstatic moments. Brief, cyclical interruptions that somehow restore something essential in us.

Two New Websites!

These have been a long time coming.

A massive thank you to Marc Pereira — our star manager, chaos wrangler, and the steady hand behind getting this whole rebuild across the line — and to Creative director and Brand designer Brie Pointer, whose vision and creative force shaped how this all comes to life.

Since its completion a few years ago, House of Falconer has quietly existed in the shadow of Angeline’s Inn online.

Now, she steps forward.

Giving these two places their own online identities — while still holding the fact that they share a team, a rhythm, a point of view — hasn’t been straightforward.

But we’ve landed on something that feels true:

Two distinct worlds that still speak the same language.

One quieter, slower, rooted in restoration and retreat.
The other a little sharper, design-forward, and right in the middle of town.

With these new sites, it finally feels possible to experience each place more clearly — and find the stay that fits exactly how you want to spend your time here.

The rebuild also gave us the chance to properly showcase the artists and collaborators whose work shapes the visual world of these places online — including logo work by Jonathan Kaiser, sitemap illustrations by Niall Eccles, and photography from Brooke Stephenson, Tara McMullen, Kat Ramsvik, and Jason Hudson.

A huge thank you again to Brie and Marc for helping us pull years of ideas, history, images, and moving parts into something that finally feels cohesive, intuitive, and alive.

As we launch the new home for House of Falconer online this week, we’ve also been reflecting on the life and passing of Kip Brisley.

Kip’s hands — and the knowledge he carried — helped shape many of the spaces we now care for. But more than craftsmanship, he passed down a philosophy: patience, humility, practicality, reverence for old things, and the belief that beauty is something worth preserving.

His passing, arriving alongside the anniversary of Alex’s father’s death, has made this season feel especially reflective around here.

Because places like these quietly carry people forward.

Not only through beams and floorboards —
but through the values, rituals, tastes, stories, and ways of seeing that get handed down inside them.

Over the years these houses have held wedding weekends, reunions, grief, recoveries, celebrations, creative breakthroughs, and entirely new beginnings.

And somewhere inside all of that, we’ve come to understand that hospitality is really a form of stewardship.

A way of caring for a place — and the people who pass through it — with enough attention that memory, beauty, and human connection can keep living on there long after we’re gone.

This launch feels inseparable from that idea.

The Falconer Carriage House

Tucked just behind the main house, the Falconer Carriage House sits in that perfect in-between — private, but still connected to the rhythm of Falconer.

It’s the original 1860’s post and beam structure - a big, open space — A small kitchen and dining area, a cast iron tub tucked under the stairs with views of the fire, two lofted sleeping spaces above.

12 Years of the Babylon

What started as a plan for a private residence quickly revealed itself to be something else.

Spring has started to show itself around here.

A little more light.
Longer evenings.
The first small signs of things waking up across the County.

We’ve been thinking a lot about this moment in the season — how spring arrives with a kind of sudden momentum. More light, more movement, the sense that everything should start happening again all at once.

But the body doesn’t always move at that same speed.

Sometimes it needs a moment to attune and catch up.

That idea has quietly shaped a few things we’re working on this spring.

Next week we’re hosting our first Equinox Reset Retreat at the Inn — a weekend of yoga, meditation, great food, and sauna ritual.

A chance to prioritize self care land gently in the new season.

We’re also very excited to finally give some of Alex’s collection a permanent home here at the Inn. Design Shop began as small pop-ups is now becoming a dedicated space where guests can explore and take home pieces from Alex’s ongoing design curation.

In the kitchen, we’re leaning into the strange seasonal gap we’re in — when winter produce is rough and spring hasn’t quite arrived. Lately that’s meant rediscovering underused pantry staples, like apple butter, which turns out to make a very good cake.

And if you’ve been thinking about a visit this year, now is a good moment to start planning. Summer weekends tend to disappear faster than we expect, and our third night free offer is wrapping up soon.

What is Design Shop?

For years, Alex has had an instinct for collecting — an eye for objects with presence, history, and the quiet kind of beauty that makes a room feel finished.

Pieces discovered in salvage yards, antique shops, auctions, and the occasional roadside miracle — gathered not randomly, but with a curator’s patience and a designer’s eye.

After our holiday Design Sale — where pieces Alex had gathered and lived with over the years quietly found new homes — we realized something: people loved encountering these objects in the same place they were discovered.

Design Shop is the continuation of that instinct.

A small retail space at the Inn where pieces Alex collects and curates pass through on their way to a new home.

Vintage furniture, odd objects, design pieces — things that have lived interesting lives and are ready for another.

Recipe: One-Bowl Apple Butter Cake

I’m so deeply tired of bone broth.
Emotionally ready for spring.

End of winter is the grocery store graveyard.
Nothing cute at farm stands for sooo long still.

Time for a pantry investigation.

Apple butter: concentrated apple gold. Moody, mysterious — usually lurking in the back of the cupboard.

I think it’s time to put some shine on Miss Apple B.

This rum-scented one-bowl apple butter cake with a thick maple mascarpone whip is just that.

Proof that a few neglected pantry staples can still make something excellent while we wait for real food to come back.

One-Bowl Apple Butter Cake

(9-inch pan)

Dry

180 g all-purpose flour
1 tsp baking powder
½ tsp baking soda
¾ tsp kosher salt
1½ tsp cinnamon
¼ tsp fresh grated nutmeg

Wet

200 g apple butter
120 g Greek yogurt or sour cream
120 ml neutral oil (½ cup) OR 110g brown butter
150 g brown sugar
2 eggs
1 tsp vanilla
2 tbsp dark rum (optional but excellent)

Fruit

1 medium granny smith apple, grated (about 150 g)

Instructions

Heat oven to 350°F / 175°C. Grease or line a 9-inch pan.

In a large bowl whisk together apple butter, yogurt, oil, sugar, eggs, vanilla, and rum.

Stir in the grated apple.

Add flour, baking powder, baking soda, salt, and spices. Stir until just combined.

Spread batter in the pan. Sprinkle with raw sugar for a crunchy top if you’re not adding whip

Bake 35–40 minutes, until deeply golden and the centre springs back.

Cool slightly. Eat warm or room temperature with the whip.

Maple Mascarpone Whip

250 g mascarpone
240 ml heavy cream
3 tbsp maple syrup
Pinch kosher salt
½ tsp vanilla

Whisk everything together until thick, soft, and cloud-like.

Spoon and swoosh generously over the cake.

Inside, sunlight catches on sculptural ceramics, vintage furniture, and one-of-a-kind objects — each piece chosen or made by Kaiser with the eye of both an artist and a collector.

🍽️ Made In House

Peak Summer in a Slice
This might just be my favourite summer bake — a one-blender wonder inspired by the traditional Mexican pan con elote. It’s the perfect breakfast or all-day snacking cake: dense and custardy, almost cheesecake-like, with a beautiful, pronounced corn flavour and bursts of juicy blueberries.

It’s greater than the sum of its parts — and the ease of throwing it all together in one blender only makes it more exceptional. Truly, I love this cake so much… and I think you will too.

RECIPE:
Blueberry Sweet Corn Cake

Ingredients:

• 300g fresh corn kernels

• 150g medium-grind cornmeal

• 100g all-purpose flour

• 300ml sweetened condensed milk (1 can)

• 75g full-fat sour cream

• 113g unsalted butter (1 stick), melted and cooled

• 2 large eggs

• 1 tsp vanilla extract

• 1 tbsp kosher salt (or 1½ tsp sea salt)

• 12g baking powder (≈1 tbsp)

• 150g fresh blueberries (for topping)

Instructions:

1. Preheat oven to 375°F (190°C). Spray and line a 9-inch round cake pan with a parchment round.

2. Melt the butter and set aside to cool.

3. Place the blender jar on a scale. Weigh in: corn, cornmeal, eggs, condensed milk, sour cream, vanilla, salt, and melted butter. Blend until smooth.

4. Add the flour and baking powder. Blend again, scraping down sides if needed.

5. Pour batter into the prepared pan. Sprinkle blueberries over top.

6. Bake for 30–40 minutes, or until centre is set and a knife comes out clean. The top will be deeply browned. Let cool before turning out.

🍽️ Introducing Made In House

This one’s personal.

Made In House is a new cooking series I’ve been dreaming up quietly for years—filmed in the kitchen at House of Falconer, where we live, work, and host through the seasons. It’s not polished or precious. Just honest food, made with care, in the middle of it all.

If you’ve ever stayed with us at Angeline’s, you know the kitchen has always been at the heart of things. Made In House is a way to share that with you—ideas, inspiration, and simple techniques to help you feel excited in your own kitchen, and maybe even fall a little more in love with it.

We’re starting with Alex’s most requested, all-time favourite: chicken ricotta meatballs. Foolproof, comforting, and somehow always greater than the sum of their parts.

RECIPE:

Alex’s Chicken Ricotta Meatballs
Yield: ~20 small meatballs

Ingredients:

• 1 lb ground chicken

• 1 cup ricotta

• ½ cup breadcrumbs

• 1 egg

• 1 bunch scallions finely chopped

• 1 tsp gochugaru (for sweet heat) or chili flake for more heat

• 2 tbsp chopped tarragon

• Salt + pepper

  ---

Preheat your oven to 425°F (220°C). Line a baking sheet with parchment or foil and drizzle it lightly with olive oil.

In a large bowl, combine the ground chicken, ricotta, breadcrumbs, and egg. Add the scallions, tarragon, gochugaru (or chili flakes), and a generous pinch of salt and freshly ground pepper. Mix until evenly combined.

Using a cookie scoop or small ice cream scoop, portion the mixture into balls (about golf ball size) and place them on your prepared sheet. You should get around 20.

Drizzle the tops with a little more olive oil and bake for 18–22 minutes, or until golden and cooked through. For extra browning, broil for the last 2 minutes.

Serve with a red sauce of your choice—something cozy and slow-cooked—and crusty bread, pasta, or rice (my favourite) whatever vehicle you like best.

At Slab Creek House, our latest restoration in Hillier, time has softened the edges—and in caring for what it left behind, we’ve uncovered something rare: a kind of peace that can’t be designed, only revealed.

Whether it’s the texture of old plaster, the curve of a hand-carved banister, or the brushstrokes of a nearly-lost Marcelle Ferron painting, what we curate isn’t just a look—it’s a feeling. One that lives in the rooms at the Inn, the House of Falconer, and now Slab Creek. Bittersweet, grounded, impossible to replicate.

Introducing Slab Creek House—our latest restoration project and love letter to quiet beauty. This 1860s miller’s cottage sits along the Slab Creek watershed in Hillier, nestled between some of the County’s most iconic wineries. Once part of the Grange estate, it’s a modest post-and-beam dwelling with humble details and early industrial roots—exactly the kind of small-scale architecture that draws us in.

This project is a great exercise in restrained design that leans into what’s already there. As we’ve stripped it back, we’ve started to learn more about the structure itself and feel confident we can recreate its original details through research into local vernacular architecture. A trip to the archives even revealed a twin replica, which has helped us fill in a lot of blanks about how we’ll bring her back.

Restoration isn’t linear—and that’s the beauty of it.

Found, Flattened, Framed: The Marcelle Ferron Restoration

In the fall of 2024, we stumbled upon a painting in a thrift store—not a gallery, not an auction, just tucked quietly among mismatched frames and forgotten prints. We didn’t know who the artist was at first, but something about the colour and gesture stopped us. It was unmistakably good.

Back at home, a bit of research confirmed what our instincts had guessed: the work was by Marcelle Ferron, a Québec-born artist and pioneering member of the Automatistes movement. While she’s most widely known for her massive stained-glass installations in Montreal and Paris, Ferron also made luminous, expressive works on canvas, paper, and cardboard—of which this was one.

But the piece hadn’t been treated gently over the years. There was moisture damage, warping, surface loss. Still, we knew it was worth saving. We brought it to Vincent Dion of Conservation + Culture in Toronto, who took on the careful work of bringing it back.

This kind of restoration work—painstaking, slow, and deeply informed—aligns with everything we believe in: that care matters, that beauty is often layered under wear, and that the stories objects carry are worth preserving.

The painting will hang in the Walton Suite at the House of Falconer—a small but significant piece of Canadian art history, given a second life. It’s not pristine, but it’s powerful. And now, it’s part of the story the space tells.

If you’ve strolled through the property lately, you may have noticed something quietly beautiful happening in the Tuck Shop. We’re thrilled to introduce Plant, a floral studio and farm stand operated by Meredith Plant—an inspiring local grower and creative spirit we’re so proud to host here at the Inn.

Plant was born from a desire to reconnect with the Earth.
All flowers offered are carefully grown from seed by Meredith on her farm right here in Bloomfield.

The ethos behind Plant is to act as a meditative practice. To stop, ground, and appreciate the beauty that nature offers us. We are not separate from nature, and flowers are a reminder of life’s temporal beauty.

Following these values encourages us to place more intention behind where we get our flowers. The goal is to move away from the disconnect of mass-produced florals and instead focus on seasonality, sustainability, and presence.

If you’re in the County this season, do yourself a favour: stop by the Tuck Shop, meet Meredith, and take home something beautiful, grounded, and grown with intention.

We Unearthed an 80s Marketing Gem… And it’s Giving Vintage Gold.

Some things age like a fine County pinot. This one? She’s retro, she’s bold, and she’s kind of iconic.

We recently dug up an old marketing proposal for Angeline’s, straight out of the 1980s. The fonts? Questionable. The buzzwords? Even better. But reading through it, something hit us: the idea of this place as “an escape for those in the know” has always been the vibe.
