There’s a world of interesting greens out there. Sure there’s romaine and iceberg, but what about boston, bibb, looseleaf, batavia, little gem, and oak leaf? There are multiple types of kale: lacinato or dinosaur, purple, and common curly, in addition to ornamental varieties.

In the little green salad series I will introduce a handful of my most simply prepared and versatile side salads. These are low input, high impact additions to virtually any meal. They add balance and brightness in color and flavor.

These are more-so methods than recipes; ideas about how to pair greens with things. Shown above is spicy, tender baby arugula tossed with a squeeze of lemon and a drizzle of olive oil, then topped with freshly grated parmigiano reggiano and a sprinkle of flaky sea salt. Boom. Done. Plan on about 3 oz of leaves per person, which equates to about a cup, or roughly a handful. No need to be too precious. Just pluck a leaf and taste, fine tuning as you toss. I love this because I can prepare and serve in the same bowl, so there’s very little cleanup required.

The bowl pictured is especially meaningful—hand-thrown by Bruce Mitchell from naturally fallen redwood and thoughtfully selected by Alice Waters for her Permanent Collection. It reflects a shared appreciation for craftsmanship, natural materials, and objects made to be cherished for generations. I hope that one day I'll have the opportunity to share my own artisanal creations with you—objects made with the same care, intention, and respect for the maker's craft that inspired this piece.

Enter this recipe. For years I dreamed of recreating the flavor bomb of shredded meat cradled on those five inch corn tortillas. With just a bit of prep and a lot of hands off patience while your home ascends into the clouds of carnitas heaven, you too can enjoy authentic fork-tender carnitas. This dish is versatile (think tacos, burritos, quesadillas, enchiladas, tortilla soup, or as an entree with rice and beans) and can feed a crowd or provide a small family with leftovers for days.

A boneless roast boasts the convenience of simple shredding with no bones to pick through, but bone-in enhances the broth with extra flavor and nutrients. I have made it both ways and think the convenience factor is likely to be favorable to most people, but do as you wish and know that you can’t go wrong here.

INGREDIENTS

4lb pork shoulder butt roast (5lb bone in)

2 tbsp diamond kosher salt (much less if using morton’s)

1 tsp freshly ground black pepper

1 tbsp dried oregano

2 tbsp ground cumin

1 onion, diced

1 jalepeno, deseeded and diced

4 cloves garlic, minced

juice of 2 oranges

METHOD

Prepare the meat. Pat the pork shoulder dry with a paper towel. Combine salt, pepper, oregano and cumin then rub the mixture all over the pork. Since whole spices are more robust and flavorful, I use a mortar and pestle to crush whole black peppercorns and cumin seed just before use.

A note on cooking:

Do not be intimidated by the thought of bringing home a hefty piece of meat. The simple addition of a few spices and aromatics plus low slow heat will render it magic and considerably up your kitchen game. The beauty of having made this in advance means you can whip out the shredded meat at a moment’s notice and conjure up all manner of carnitas goodness in no time. These are the recipes that, for me, are life changing. They allow me to enjoy stress-free mealtimes with my family and friends because the work is already done.

Prepare the aromatics. Dice the onions and jalepenos, and mince the garlic. Make sure to devein and remove the seeds from the jalepeno before chopping if you want a mild end result. Capsaicin, the chemical that gives chiles their heat, is concentrated around the seeds in the ribs, so removing them controls the heat factor.

Juice the oranges. I once read an entire book about the chemical properties and variation among orange species. Fascinating stuff. I’ll spare you the details, but let it be known that I prefer Valencia for juicing.

Place the pork (fat cap up) in a slow cooker. Scatter the diced onion, jalepeno and minced garlic on top. Pour over the juice from the oranges.

Put the lid on and slow cook on high for 6 hours, or low for 10 hours. The pork should be tender enough to shred with a fork.

I happily double this recipe with neither difficulty nor regret in my large Brooklyn Copper casserole. The carnitas keeps well in the fridge and does just as well coming out of a longer hibernation in the freezer. With tiny hands clammering to get their fill, however, (nothing in the world makes me happier) its practically guaranteed to disappear before then.

The carnitas is ready to go. It’s a picture of succulent perfection. You could take it straight to the table as a whole roast and go for it right there, but I like to take things one step further by skimming the fat and reducing the pan drippings. This takes time and is completely optional, so don’t bother if you need to get dinner on the table immediately. I do think it makes for a nicer end result though, so I’m going to share my method.

First, remove the obvious fat cap on the top of the roast, but please, do not discard it. I implore you to use it in place of butter or olive oil to add depth and flavor to future cooking. Using tongs or two forks, take a good portion of meat and set it onto a large platter or bowl. Pull the meat apart, inspecting for and removing pockets of fat as you go. Continue this way, processing in portions, until you’ve worked through the entire roast.

Strain the pan drippings into a large container. Return all of the collected bits of jalepeno, onion, garlic and spices back to their rightful place with the shredded meat. Put the liquid portion in the refrigerator and allow to chill until the fat content has solidified on the surface. Skim the fat off the top and add it to your stash for future use.

The clarified liquid is now ready to reduce. To do this, simply cook over medium high heat until the desired concentration is reached. Less liquid equals more intense flavor. If this is your first time, aim to reduce the original volume by half. Taste for yourself, and take it as far as you want. If you go overboard you can always add water back in, no harm done. Pour the new and improved pan drippings over the shredded meat and serve.

2 cups cooked brown rice

2 cups water

2 cups hazelnut milk

1/4 cup sugar

1 tsp vanilla

pinch sea salt

METHOD

Bring to a boil then reduce and simmer for 20-30 min to desired consistency. Garnish with fresh fruit or jam, crushed nuts, hemp seeds or bee pollen.

Enjoy.

Recipe adapted from Bob’s Red Mill

INGREDIENTS

170g (3/4 cup) butter, room temp

200g (1 cup) sugar

3 eggs

120ml (1/2 cup) milk

1 tsp vanilla

215g (1 1/2 cups) whole raw almonds, finely ground

56g (1/2 cup) coconut flour

2 tsp baking powder

METHOD

Preheat your oven to 350° F. Butter a 9-inch round cake pan and line the bottom with parchment paper. Using the paddle attachment on your mixer, cream together the butter and sugar until light and fluffy. Add the eggs one at a time, mixing until incorporated. Add milk and vanilla and beat until incorporated. In a separate bowl, whisk together the ground almonds, coconut flour, and baking powder. Add the dry ingredients to the wet and mix thoroughly. Pour the batter into your prepared pan and bake for 35 to 40 minutes. The cake should be golden brown and starting to pull away from the sides. Allow to rest in the pan for 10 minutes before serving. I like to use a springform pan for this so I can easily pop the cake out when it’s done, and 9” parchment rounds to avoid having to cut the paper to fit.

A word on ingredients:

BUTTER

Butter is butter, right? Wrong. Not all butter is created equal. By law in the United States, all butters must be at least 80% butterfat, with the remaining 18% being water and 1-2% milk solids. European style butter has a higher butterfat percentage (82-86%) and less water, resulting in a richer taste and softer texture. I strongly prefer european style butter for all of my baking needs. Straus organic unsalted is my butter of choice with an impressive 85% butterfat content. Named “One of the Top Premium Butters in America” by Food & Wine magazine, the extremely low moisture of their butter results in baked goods that rise higher and brown more evenly. If you’re unable to find this particular variety, snag a brick of trusty Kerrygold pure Irish butter, which has a respectable butterfat content of 82% and proves to be far less elusive than Straus.

ALMONDS

Almonds are perishable, and even moreso when ground. Grinding increases the surface area and exposes delicate oils to more rapid oxygenation, so almond flour goes rancid quickly on the shelf if you don’t use it fast enough. For this reason, and also simply because I always keep whole raw almonds in my pantry, I prefer to grind them in a food processor just before use rather than purchase pre-made almond flour. All you have to do is measure out 215g (1 1/2 cups) whole almonds, and process them using the blade attachment of a food processor. Start with a few quick pulses, then when they are more broken up you can let it run. They will go from course pieces like that of gravel, to progressively more fine and uniform like sand. Make sure to stop before the almonds turn into paste. At that point you would have almond butter, which is not what we want here, but certainly a good thing to know how to make.

VANILLA

Vanilla costs an absolute fortune these days. In today’s market, it’s worth more by weight than silver. Complex pollination, extreme weather, theft, and the rise of the “all natural” food movement have contributed to the hefty price tag.

My dear friend and fellow avid baker Anjie Alleman introduced me to Nielsen-Massey Madagascar Bourbon Pure Vanilla Bean paste many years ago. We (as good friends do on a Saturday afternoon) took a croissant workshop at Sur La Table in downtown Salt Lake City. We learned about lamination in the pastry world, aka the secret to that characteristic flakiness that makes a croissant so dang special. It’s a sequence of repeated folding and rolling that creates dozens of thin layers of dough separated by butter.

While shopping around the store after the class she mentioned she had run out of vanilla and ought to grab some. It was then that I was introduced to a pantry staple I can no longer live without: Nielsen Massey Madagascar Bourbon Pure Vanilla Bean Paste. Anjie preferred the vanilla bean paste over extract because those lovely little flecks of vanilla bean are visible in the finished product. The texture is thick like honey rather than liquid, and the flavor is incredibly intense. I remember being astonished that she single-handedly produced enough baked goods to warrant buying a 32 oz bottle at a whopping $49.95. I left empty handed, trusting her recommendation, but not yet ready to take the plunge.

Fast forward to now, I have plowed through many a jumbo bottle of pure vanilla bean paste, despite it ringing up double and at times triple the charge of the good old days. With a shelf life of several years, however, if you frequently use vanilla in your baked goods and beverages, buying in bulk is the way to go. You will get the most bang for your buck and never risk the fret of a last-minute vanilla shortage crisis, though 8 oz and 4 oz bottles are also available. Worlds away from imitation vanilla, a step up from genuine vanilla extract, and a serious contender with whole vanilla bean, if you haven’t tried this stuff you will be amazed at the difference. Obviously if you can afford to use whole vanilla beans all the time you are winning at life and I support you. They are precious commodity and quite rare in this household, so I’ve found my sweet spot with vanilla bean paste.

INGREDIENTS

3/4 lb orzo pasta

1/2 cup olive oil

1/2 cup freshly squeezed lemon juice (from 3 lemons)

1/2 cup red onion, finely diced

1/2 cup scallions, minced

1 English cucumber, quartered and diced

1 pint cherry tomatoes, halved

handful each fresh dill and fresh flat-leaf parsley

3/4 pound feta cheese, crumbled

kosher salt and freshly ground black pepper

METHOD

Bring a pot of lightly salted water to a boil. Add the orzo and simmer for 9 to 11 minutes, stirring occasionally, until it’s cooked al dente. Drain and pour into a large bowl.

Make the vinaigrette. It’s a simple combination of equal parts lemon juice and olive oil, 1/2 cup each. Use freshly squeezed lemon juice and your best olive oil for this.

Season with to taste with salt and pepper, keeping in mind the crumbled feta will add a salty kick. I used 1 teaspoon of freshly ground black pepper and aimed for 2 teaspoons of salt, though my little helper snuck in some tiny pinches. Pour over the hot pasta and stir well.

Prepare the add-ins. Dice the red onion and mince the scallions. Quarter and dice the cucumber. Halve the cherry tomatoes. Strip the leaves off the dill and parsley and give it a rough chop.

Add to the orzo and toss well. Season again to taste with salt and pepper. Take the opportunity to notice subtle changes in flavor as you go. This fine-tunes your palette and helps you build confidence, and ultimately, ease in the kitchen. Set aside at room temperature for 1 hour to allow the flavors to blend, or refrigerate overnight.

If refrigerated, bring back to room temperature before serving. Gently stir in half the crumbled feta. Plate the orzo on a beautiful platter and scatter over the remaining feta.

But healing is not meant to end with survival.

At some point, without realizing it, your thoughts begin to change. You stop asking, “How do I get through today?” and start asking, “What do I want to build?” This question marks a profound transformation. It signals that your wounds no longer consume all of your attention. The emotional resources once dedicated to pain become available for purpose, creativity, relationships, and growth.

This shift does not mean the scars have disappeared. Healing is rarely about erasing the past. Rather, it is about reaching a place where the past no longer dictates every decision. The pain still exists, but it is no longer the center of your life. Instead of constantly repairing what was broken, you begin constructing what is possible.

Building can take many forms. It may be pursuing a career that excites you, nurturing meaningful relationships, creating art, starting a business, learning a new skill, or simply establishing daily habits that reflect the person you aspire to become. These actions are no longer driven by the need to prove your worth or escape your pain. They are driven by hope.

Perhaps the greatest sign of healing is not happiness but investment. You begin investing your time, energy, and attention into a future you genuinely believe is worth reaching. You make plans months or even years ahead. You allow yourself to dream again. You become curious instead of fearful, intentional instead of reactive.

This stage of healing is both beautiful and challenging. Building requires vulnerability because creating something meaningful always carries the risk of failure. Yet unlike before, fear is no longer your master. You understand that setbacks are part of growth, not evidence that you are broken. Your resilience, earned through hardship, becomes the foundation upon which you build.

Healing, then, is not simply the absence of suffering. It is the return of possibility. It is the moment when your energy is no longer trapped in repairing yesterday but is free to shape tomorrow. The focus shifts from surviving to living, from enduring to creating, from protecting yourself to expressing yourself.

At some point, you become healed enough that your greatest question is no longer, “How do I recover?” Instead, it is, “Who do I want to become?” And that is when healing reaches its deepest purpose—not because the pain is forgotten, but because your future has become more compelling than your past.

Moments like these are what I live for and hope to recreate. Loved ones in pajamas gathered around the kitchen island, calling dibs on who gets the next one hot off the griddle.

The beauty of this recipe is that you make it mostly the night before. Make sure to use a large enough bowl as the batter will at least double in volume.

Before you go to sleep, combine:

1/2 cup warm water

1 tbsp active-dry yeast

1/2 cup melted butter

2 cups whole milk

1 teaspoon salt

2 tablespoons sugar

3 cups all-purpose flour

Cover with a tea towel and leave the batter to rest overnight. I usually place mine in an unheated oven so it’s out of the way and a bit insulated, but the counter is fine too. When you wake up in the morning, add:

2 large eggs

1/2 teaspoon baking soda

Whisk to incorporate, then cook according to the manufacturers instructions for your waffle iron.

Serve with warm vanilla buttermilk syrup or virtually anything from fresh berries, to fruit compote, to honey butter, to maple syrup etc.

INGREDIENTS

180g type 00 flour (or all-purpose if you don’t have it)

180g semolina flour

4 large eggs, at room temperature

METHOD

Whisk together the flour and semolina. Create a mound on the counter top or large wood cutting board with a crater in the center.

Crack the eggs into the center of the flour and semolina. In a circular motion, use your fingers or a fork to gradually draw the dry ingredients into the center, mixing them with the eggs. The dough will be hard to mix at first – a pastry scraper will help you draw it all together – but eventually it will come together and be relatively smooth.

Knead the dough with the heel of your hand for at least three minutes or so until the dough is very smooth. Wrap the dough and let it sit at room temperature for an hour.

That’s it! The dough is ready. From here the possibilities are endless. I often make spaghetti or fettuccini using my KitchenAid pasta roller attachment, but lately I’ve been practicing my free-form technique to try new shapes like ravioli and mezze luna.

*The humidity will affect the amount of flour needed to get the right consistency. The dough should not feel sticky. If it sticks to your fingers, knead in a small amount of the reserved flour, just enough so your fingers come away clean when you pull them away.

If you don’t already have a kitchen scale, I highly recommend this simple, affordable model from Escali. I’ve had mine for over a decade and use it daily. If you’re still in the dark ages of measuring with cups and spoons, prepare to be enlightened! Weight based measurements using grams and ounces are more precise and spare messy cleanup by allowing you to throw everything in one bowl.

Organic Type 00 Flour

This is type 00 flour I personally use. It features a gluten structure that is both soft and strong, making it the preferred alternative to all-purpose flour. Proudly milled in Utah since 1967 by the Central Milling Company.

Super Fine Durum Flour (Semolina)

Semolina is made from hard durum wheat. It has a coarse texture, yellow color, and is high in gluten protein making it especially well suited for making pasta. It is most often sold in medium grind, but a finer granulation makes absorption consistent and your pasta silky smooth. This is my favorite from the Central Milling Company, established in 1867 and proudly milled in Utah.

I studied his preferences. I anticipated his needs. I found quiet satisfaction in creating something that would nourish him.

I rarely questioned whether I was extending that same devotion to myself.

Somewhere along the way, I began to believe that love was measured by how much of myself I could offer away.

Now I wonder what might happen if I redirected that same tenderness inward.

If I prepared a beautiful meal because I, too, deserved to be nourished.

If I set the table, lit the candle, and lingered without waiting for someone else to arrive.

Perhaps this is another form of abundance.

Not withholding love.

Not needing someone to receive it before it becomes meaningful.

Just recognizing that I have always been worthy of the care I was so eager to give.

And maybe this is the real act of devotion:

Learning to nourish the person who never left.

These are some of the underlying experiences, states, and wounds that drive self-protective behavior.

Fear of Rejection & Unworthiness

People-Pleasing = fear of rejection, disguised as kindness.

Seeking Validation = self-abandonment, disguised as confidence.

Perfectionism = fear of failure, disguised as high standards.

Defensiveness = shame, disguised as certainty.

Fear of Uncertainty & Loss of Control

Overthinking = uncertainty, disguised as productivity.

Control = anxiety, disguised as preparedness.

And for most of my life, I never felt deeply attached to it.

In fact, I didn’t particularly care for it.

I remember telling my mother this once, long before I understood the intimacy of naming a child.

As a parent now, I understand that it may have hurt her feelings.

It has been my experience that a name is never chosen casually; it is a projection of love, hope, instinct, lineage, possibility.

It was not until recently that I developed a fundamentally different relationship with my name, when papers were filed against the very name my mother placed upon me:

Lindsay.

Jane.

Theobald.

…

Excuse me?

I stare at the page, grappling for coherence that refuses to arrive.

“She no longer exists.”

I think, bewildered, a furrow forming across my brow.

The name struck me as not only maiden,
but distinctly juvenile.

This was not language intended to address an adult woman in full consciousness.

It carried the tone of a crumbling patriarchy making one final attempt to summon its scorned problem child for punishment.

A final reflex from a dynamic already dying.

The name may have been legally traceable, technically defensible, historically accurate in fragments —
but emotionally, psychologically, spiritually, it felt entirely foreign.

I addressed the discrepancy immediately, and from that point forward, every appearance of the incorrect name throughout the subsequent stipulations was followed by:

“aka Lindsay Barrett.”

Also known as…myself?

Ironic.

Astonishing.

The absurdity of needing legal clarification for one’s own identity,
which had somehow become an addendum —
an alias attached to a more convenient fiction.

As though the woman I had become required annotation,

while an outdated imprint was to remain the primary record.

It was later assumed in the final decree that I would return to my maiden name, which I again politely clarified for the record would not be happening.

The assumption took the liberty of excluding my participation entirely.

I was being ushered out of my own identity,
on the way to becoming smaller.

“We’ll simply revise the wording to include the option of changing it back should you ever change your mind.”

Beneath the bureaucratic language, an unspoken directive—

relinquish the name,
and disappear quietly.

In that moment, I stated without hesitation, under oath:

I am Lindsay Barrett.

I intend to remain Lindsay Barrett.

My identity is not up for debate or repossession.

It is not transferable.

Not for sale or lease.

And the more it was challenged,
the more I recognized the weight of what was being defended.

Repeated attempts at reduction create pressure.

Pressure, when consciously endured, consolidates.

Density accumulates.

And with enough density comes gravity —
the kind that draws scattered fragments of the self back toward a single center.

Now, as I return to coherence and bring my internal truth into alignment with external expression, I am guided by what my name has been pointing me toward all along.

Lind—“say”.

The act of speech.
Of declaration.
Of revelation.

Giving shape to what once existed only as feeling.

Suddenly, my name no longer feels arbitrary.

It feels encoded.

The meaning was always there —
I simply had not yet become capable of fully perceiving or inhabiting it.

The more I reclaim my voice, the more my name begins to feel like something I was always meant to embody.

It took being forced to defend my identity to recognize its inherent value.

That is why I write.

Because anything of value is worthy of protection
and desirable to share.

Because my voice is not separate from my identity—
it is the articulation of it.

I write because my existence is not decoration—
not something to shrink, soften, suppress,
or fragment for the comfort of others.

I write to preserve what lives inside me
before it calcifies into silence.

In confronting a legal fiction,

I discovered the center of my own gravity—

a woman no title could define in full.
No decree could demote.
No annotation could contain.

An unconfined woman who trusts her voice.

doesn’t mean carrying the burden alone.

They’ll learn that an emotional man
is a man fully grown.

They won’t settle everything with violent swings.

And they’ll live in truth,
even when that truth stings.

So yeah, if I ever have boys,
they’ll be dangerous men.

But the danger they’ll be
won’t be the one society meant.

Anything that has had access to me without my full conscious consent is now revoked.

Anything that has been taken from me, fed on me, watched me, or interfered with my path loses access immediately.

What is not mine is removed.

What was taken is returned--clean, whole, undistorted.

My field is closed to manipulation.

My life is closed to interference.

Only what honors me remains.

Truthfully,
the entire unstable framework collapsed.

I am standing in the middle of an unfolding I do not fully understand yet. I do not have neat conclusions. I am not writing from a place of resurrection; I am writing from inside the baptismal fire itself.

And part of that transformation has required confronting nuanced internal landscapes shaped by layers of conditioning and subsequent coping mechanisms — lived through instinct, sensation, contradiction, and internal tension.

Beneath articulation.
Felt more than spoken.

At some point, it all became too heavy to continue carrying in silence.

And rather than remain isolated inside experiences I struggled to articulate, I decided to begin translating them into language and releasing them outward — trusting there are others who may recognize pieces of themselves here too.

Because eventually, the weight of silence became heavier than the fear of exposure.

And choosing visibility in that way requires a level of courage I did not previously possess.

To become visible.
To be honest.
To remain unfinished.

At the core of this is a deep longing for authenticity.

Not performance or curated invulnerability.

Actual self-revelation.

And as I wrestle to make peace with complex realities like identity, embodiment, grief, desire, sovereignty, and truth, I have realized I cannot ask the world for more honesty while withholding my own.

So this is my contribution:
an open exploration of becoming.

Unrehearsed.
Center stage.

Instead, her attention shifts.

Gently at first.
Then powerfully,
and irrevocably,

she turns toward her own life.

Toward the dreams she had shelved.

The passions she had postponed.

And the healing she had set aside while tending to a connection that, at times, consumed her.

She re-orients herself to her divine mission.

Not out of spite,
but because her soul calls her there.

Her focus is no longer split between what he feels and she fears.

She chooses to realign with what she knows:
her purpose,
her vision,
