can crushed tomatoes</p></li><li><p>Couple sprigs basil</p></li><li><p>Parm rind</p></li><li><p>1 lb favorite pasta</p></li><li><p>Parm, for garnish</p></li></ul><h4>Instructions</h4><ol><li><p>Heat a large Dutch oven over medium heat with olive oil. Add the ground pork and beef and let it brown while breaking it up with a wooden spoon. Take your time here&#8212;deep color = deep flavor. This should take about 8&#8211;10 minutes.</p></li><li><p>Once the meat is deeply browned and the fat has rendered out, add the diced shallots, carrots, and celery. Season generously with salt. Cook, stirring occasionally, until the vegetables soften (about 6&#8211;8 minutes). Add the grated garlic and stir to combine. Push everything to the side for a second, drop the anchovies directly onto the hot pot bottom so they melt and dissolve into the fat, then stir them through. Add the tomato paste and cook for a full minute to caramelize it slightly. Deglaze with the red wine, scraping up all the browned bits from the bottom. Let the wine reduce until almost evaporated (3&#8211;4 minutes).</p></li><li><p>Stir in the passata and crushed tomatoes. Taste and adjust salt if needed.</p></li><li><p>When you&#8217;re ready to eat: Scoop out about &#8531; of the sauce into a large saut&#233; pan. Cook your favorite pasta 3&#8211;4 minutes shy of al dente (reserve a cup of pasta water). Drain the pasta and add it directly to the sauce pan with a splash of pasta water. Toss over medium heat, letting the sauce cling and emulsify into a silky coating. Add more pasta water if it needs loosening.</p></li><li><p>Plate the pasta, spoon extra sauce over the top if you&#8217;re that type, and finish with a generous shower of grated Parm. Serve hot, preferably in front of a fire with snow falling outside.</p></li></ol><h4>Make-Ahead &amp; Freezer Notes</h4><ul><li><p>The sauce gets even better after a day or two in the fridge.</p></li><li><p>Freeze in portions (sauce only or with pasta) for up to 3 months. Sear the pork until golden brown on all sides, about 5-7 minutes, rotating the meat as needed.  </p><p>Step 2 </p><p>Add the apples, onions, and garlic to the pan. Toss all to combine and season. Let the apples caramelize for a couple minutes, then deglaze the pan with the wine.  </p><p>Step 3</p><p>Let the wine cook out almost completely, then add the chicken stock and thyme sprigs. Bring that to a simmer and let that cook down for 5-7 minutes. Turn the heat off and stir in the mustard and the cubed butter. Swirling the pan around until the butter emulsifies into the sauce and becomes velvety.  </p><p>Step 4 </p><p>Serve as is or over white rice. Then cover and let steam for 15 minutes. Remove the lid and let cook until lightly browned, about another 10 minutes, stirring often.</p><p><strong>Step 2</strong><br>Add the pecorino to a food processor and process until coarsely ground. Add 1 tsp of black pepper too.</p><p><strong>Step 3</strong><br>Add the potatoes to a large bowl, season with salt and pepper, and toss in 1 1/2 cups of the cream.</p><p><strong>Step 4</strong><br>Take 1/3 of the potatoes and shingle in the bottom of the prepared baking dish. Sprinkle with 1/3 of the onions and 1/3 of the cheese. Repeat the process 2 more times, ending with the cheese. Cover with parchment, then foil and bake for 1 hour. slices, generously brushed with olive oil, broiled until golden, rubbed with a cut garlic clove, and sprinkled with salt)</p><p><strong>Instructions</strong></p><p>1. Marinate the olives (night before)</p><p>In a small airtight container, combine the pitted Castelvetrano olives, dry vermouth, gin, 2 Tbsp reserved olive brine, and the two strips of orange zest. Seal and refrigerate overnight.</p><p>2. Strain the ricotta (night before)</p><p>Place the ricotta in a fine-mesh strainer set over a bowl. Cover with plastic wrap and refrigerate overnight so excess liquid drains off.</p><p>3. The next day</p><p>Remove the olives and ricotta from the fridge. Strain the olives, reserving all of the gorgeous boozy soaking liquid. Discard the orange zest strips.</p><p>4. Make the dip</p><p>Add the strained ricotta to the bowl of a food processor and process for about 1 minute until light and fluffy. Add the softened cream cheese and 1&#8211;2 Tbsp of the reserved olive soaking liquid. Process until completely smooth and creamy, scraping down the sides as needed. Transfer the mixture to a mixing bowl.</p><p>5. Finish &amp; serve</p><p>Gently fold in the 2 oz crumbled blue cheese and a scant 1 Tbsp of the soaked olives (finely chop them first if you want smaller pieces). Taste and adjust seasoning with salt (sparingly &#8212; it&#8217;s already briny) and plenty of freshly ground black pepper.</p><p>Spoon the dip into martini glasses or a serving bowl. Garnish with extra crumbled blue cheese and a few whole or halved soaked olives.
