What a summer.

We got to watch your kids transform into proud young chefs in the span of a week. The best part was seeing them each walk out on Friday carrying something they made completely from scratch, so proud they could burst. We got powdered sugar on everything, and I mean literally everything! We laughed a lot, and yes, we probably ate too many cookies.

This year’s summer camps meant so much to us and we could not have done it without every single one of you.

The first two weeks of summer camp have wrapped and we are still smiling about them. Here’s a few pics from our kitchen.

Now we don’t want you to feel left out, so we decided to share our favorite shortbread recipe with you to try with your kiddo this week. (Watch out, these are addictive).

Irresistible Shortbread Cookies

What you’ll need:

• 10 tablespoons unsalted butter, at room temperature (142g)

• 1/2 cup confectioners’ sugar

• 1/2 teaspoon pure vanilla extract

• 1 1/2 cups all-purpose flour (180g)

• 1/2 teaspoon kosher salt, optional

How to make them:

1. In a stand mixer fitted with the paddle attachment, beat the butter and vanilla extract until creamy.

2. Add the confectioners’ sugar and salt, and mix until combined.

3. Scrape down the bowl, then add the flour while mixing on low speed. Scrape down the bowl once more and mix until fully combined.

4. Shape the dough into a rectangular prism, wrap it in plastic wrap, and chill until firm, at least 1 hour.

5. Preheat the oven to 350°F (177°C). Use a sharp knife to cut the dough into 1/2 inch thick slices.

6. Place the slices at least 1 inch apart on a baking sheet lined with a silicone mat or parchment paper.

7. Use a fork or skewer to press a pattern into the tops.

8. Bake for about 10 minutes, rotating the baking sheet halfway through.

9. Transfer the cookies to a wire rack to cool.

Simple, buttery, and an easy one to make as a family.

We are off and running! This summer is going to be a blast, we can hardly contain our excitement.

Let’s talk about Baking 101.

Our first camp of the summer, June 1-5, ages 7-17 is right around the corner and we still have a few spots available.

Here’s the thing about baking: it is a science just as much as it is an art.

Every ingredient has a job. Flour gives structure. Eggs bind everything together. Baking powder and baking soda have separate actions, and depending on how you use them, they create the lift that makes a cake rise.

And we don’t just teach kids about it. We show them. Here’s a peek at what that looks like in our kitchen:

Crack an egg and separate the yolk from the white. Whisk the yolk with a little oil and watch it transform into something smooth and creamy. That's emulsification, and it's exactly what eggs do inside your cake batter, binding fat and liquid together so everything bakes up evenly. Without it, your batter would be a separated, oily mess.

Mix flour and water together and then stretch repeatedly. Those stretchy strands you can see and feel? That’s gluten, and it’s the structure behind (almost) every baked good you’ve ever eaten. Too little and your bread falls apart. Too much and your cake turns tough.

Drop some yeast into warm water with a pinch of sugar and just wait. Within minutes it starts to bubble and bloom. Those bubbles are carbon dioxide produced by living organisms eating sugar, and they are what makes bread rise and develop flavor. Baking bread is basically a science experiment you get to eat.

Baking 101 is where foundational skills get honed. It’s the week that makes every other camp make sense. Whether your child is brand new to the kitchen or just needs to sharpen the basics, this is the perfect place to start.

Happy Earth Day! 🌍

We thought this would be the perfect excuse to get into the kitchen together — and we have just the recipe for it.

These Earth Cookies are double vanilla cookies with swirls of blue and green dough and a little heart pressed right on top. They are bright, cheerful, and almost too pretty to eat. Almost.

The best part? Every single one comes out a little different. That’s kind of the point. Messy hands, colorful dough, and a kitchen that smells amazing — that’s our kind of Earth Day celebration.

Earth Cookies (Double Vanilla Cookies) Makes about 24 cookies

What you’ll need:

• 8 tablespoons unsalted butter, room temperature

• 1 cup granulated sugar, plus extra for rolling

• 1 large egg, room temperature

• 1 teaspoon vanilla extract

• 1 vanilla bean, halved lengthwise

• 2 cups all-purpose flour

• 2 teaspoons baking powder

• 1/4 teaspoon kosher salt

• Green and blue gel food coloring

• Heart sprinkles or candy hearts

How to make them:

1. Preheat your oven to 350°F and line 2 baking sheets with parchment paper.

2. Beat the butter and sugar until light and fluffy. Add the egg, vanilla extract, and vanilla bean seeds and mix again.

3. Add the flour, baking powder, and salt and mix until combined. Divide the dough in half.

4. Color one half green and one half blue.

5. Scoop the dough, then divide each scoop in half so you have small pieces to work with.

6. Take a little green and a little blue, break each into 2 to 3 pieces, and gently press and roll them together into a ball. Try not to overwork it — you want the colors to stay distinct and swirly.

7. Roll each ball in granulated sugar and place on the baking sheet with the prettiest side facing up.

8. Bake for about 8 minutes, until the tops start to crinkle.

9. The moment they come out of the oven, gently press a heart on top of each one. Let them cool for 5 minutes on the pan, then transfer to a wire rack.

Your Summer 2026 FAQs

What ages are Bake Austin camps for?

Most weeks are for ages 7–17. However, Cake Camp starts at 8. It’s our most technique-heavy week, and we’ve learned over the years that kids do best with a little more "stamina" for the intricate decorating and assembly work.

Wait, mixed ages work together?

Absolutely—and it’s one of our favorite parts of camp! Younger kids get inspired watching the older ones, and the older kids build incredible confidence by leading by example. We keep a close eye on groupings to ensure everyone is challenged and supported.

What are the hours?

Camps run 9:00am–1:00pm, Monday–Friday. Kitchen doors open at 9:00am sharp. Since our team heads straight into prep for the next day's doughs and batters at 1:00pm, prompt pickup is a huge help to us! We offer a 10-minute grace period, after which a $2/minute fee applies to cover the extra staff time.

Do kids bring food home?

Every single day! Expect a very proud kid and a very full bag at 1:00pm. Pro-tip: Clear some counter space before they get home—these treats deserve a "big reveal" moment!

What should my child bring?

A water bottle, a packed lunch, closed-toe shoes, and a large container (like a Tupperware or cake carrier) to transport their creations. We handle everything else: professional tools, aprons, and high-quality ingredients.

Is this good for beginners?

Yes. We teach step-by-step. If your child already knows their way around a kitchen, don't worry—we always have "extra challenges" ready to push their skills even further.

As many of you know, we lost Chef Pascal last summer. Even now, it’s hard to find the right words for what she meant to this community — and to the kids who found themselves in her kitchen.

I was one of those kids. When Pascal started teaching baking classes out of her home back in 2012, I was one of her first students. She let us struggle (safely), made us clean up, and left every kid in that kitchen more confident than when they walked in.

Many of you met me last summer, when Amelia and I ran the camps while Pascal was ill. What you may not have known is how much of what you saw came directly from her.

Keeping what she built alive matters more to me than I know how to say. So, with the full support of Pascal’s family, we’re opening summer camp registration within the next couple weeks.

Bake Austin will keep being what it always was — a real kitchen, real skills, real messes, and kids who go home a little more confident than when they arrived. Pascal insisted on that. We will too.
