October 1996. I was twenty-two, two days into a tryout at The French Laundry, standing attentively next to Chef Keller at the pass while he expedited and worked the canapé station simultaneously. As he finished plating a dish, a slab of sautéed foie gras on a brioche crouton with fried julienned abalone and Meyer lemon, he picked his head up as a food runner approached. "Up on 10 chef." The guest had left the table. The food does not wait. It gets thrown out and remade before the guest sits back down. But this time he calmly picked up the plate and handed it to me.

"You like foie?"

"Yes, Chef."

"Abalone and foie gras, with a Meyer lemon gastrique. Surf and turf," he said with a barely noticeable smirk.

I think he laughed at his own joke.

A few weeks later, I drove thirty-six hours from Michigan with my dad, who could not understand why I was moving across the country for a restaurant with no national reputation in a town he'd never heard of. My answer would end up shaping Alinea's food for the last twenty years: the food was perfect, and it was funny.

The night before I started, we ate there. The first thing to arrive was a canapé that would go on to become one of the most recognized dishes of the last thirty years, disguised as a miniature ice cream cone. Oysters and Pearls, a warm tapioca pudding under a heaping spoon of caviar, the joke buried in the name. Pearl tapioca representing the pearls, or was it the beads of caviar? Coffee and Doughnuts, exactly what it said, but not. Tongue 'n' Cheek, veal tongue and beef cheek stacked impossibly tall under a tangle of impossibly balanced greens, the old idiom served literally. I would go on to cook that tongue dish nightly on garde manger and spend hours making the oyster-flavored sabayon.

At the time, I took the humor as the chef's personality, a look into who he was, and it was the first time I realized you could put who you are into the food in a very personal way. Storytelling. I thought it was pretty genius.

Later, at Trio, I finally understood what I had been experiencing: humor is an ingredient. Like acid or salt, it sits in the pantry next to nostalgia, intimidation, wonder, and anticipation, the seasonings that don't change how a dish tastes but change how it feels. Craft makes food delicious. The triggers turn it into art. So we took what The French Laundry did with humor and dish inspiration and expanded it across the rest of the pantry, and humor itself turned out to be a side channel. It leads you into dishes you would never have found. Sometimes the wordplay comes first and dictates the food, a pun name that hands you the ingredients. At The French Laundry, when we were charged with developing dishes, most of us aimed straight at a pun. Soup and Sandwich, a tiny grilled cheese of buttery brioche and sharp cheddar beside a chilled tomato consommé and a few crisp potato chips. Diner lunch or fine-dining cheese course? This summer Billy Corgan and The Aviary are collaborating on Infinite Melons, Mellon Collie and the Infinite Sadness in a glass, thirty years after his band smashed the pumpkins. A clarified riff on a Midori sour, honeydew ice cut to look like melon balls, a sphere of cantaloupe sorbet placed on top, tea from Billy's own shop steeped inside.

Technically it is a dessert. It behaves like a time machine.

Three women came in together. A grandmother, her daughter, and her granddaughter, celebrating the grandmother's eightieth birthday. When the balloons arrived, I watched them inhale the helium and talk to each other in cartoon voices, three generations squeaking and laughing. After the meal, they came back to the kitchen. The eighty-year-old's eyes welled up as she grasped both of my hands, affectionate but firm, and thanked me.

"I turned 80 today, and you made me feel young again."

Nostalgia, done right, is not the memory of a birthday party. It is being at one again.

Razor-thin

When a dish misses in the ordinary way, the diner shrugs. A little under-seasoned, slightly overcooked, a combination they didn't understand. Annoying yet survivable. But when your starting point is a beloved, pedestrian dish, the kind people order weekly, the kind they grew up with, the kind they argue with friends over who makes the best version, the expectations change. The flavor baseline is burned in. There is no "a bit off." The more you manipulate the ingredients to make the dish more witty, more nostalgic, more funny, the further you climb, and the fall is brutal when the familiarity that inspired you becomes the reason for your failure.

A joke does not half-land.

And a forced idea is never an honest expression. The team watches you stand over the cutting board for hours, then days. The slot on the menu that was supposed to be a tomato dish sits open while tomato season expires, and you keep pushing five varieties of squash around the board. Nostalgic humor is the low-hanging fruit in those moments. It is easy to reach for a significant memory and replicate it in a new form, and over the years we have picked that tree nearly clean. Bubble gum. Beef Root Beer. Birthday cake. PB&J. Dozens of others. Some of them transported people. A few of them bombed.

Broccoli Core, Crown, and Cane

If beef and broccoli is traditionally seared in a screaming wok with the trinity, producing one very specific flavor and aroma, how do we get that spirit, the real core of the dish, into ours?

The crown and core are blanched and freeze-dried. The branches and trimmed florets are seared in the wok with rendered beef fat and the traditional aromatics, ginger, red chilies, garlic, and scallions, then puréed. Wok hei, the breath of the wok, the smoky char a screaming-hot wok imparts when water flashes off the ingredients and the oil ignites, is strong and unmistakable. Black garlic and soy reduced with veal stock nearly to a syrup for a wok-reduced soy sauce, a butter of house-milled white sesame, a glaze of erjingtiao chilies.

The menu reads: Broccoli Core, Crown, and Cane black garlic-soy concentrate, sesame butter, breath of the wok broccoli.

We didn't name it beef and broccoli. The French Laundry printed the puns; listing Coffee and Doughnuts as a dish header at a fine-dining restaurant in 1996 was a dare. We went the other way, hoping the reference would be discovered.

A fork stops halfway to a mouth. She looks across the table at her guest, quizzical. "Wait. Do you taste that? This is beef and broccoli."

Correct.

She figured it out, so the laugh is hers. We got ours months earlier, standing around the Frankenstein version in the kitchen. She will tell people about this dish. Not because it was delicious. Because she discovered it.

Orange chicken

Years ago we did a dish riffing on orange chicken, the American-Chinese standard, descended loosely from Hunan's dried-tangerine-peel chicken, perfected at a thousand steam tables, and moving through America's airport food courts at a volume second only to the McNugget. Bite-size pieces coated in seasoned starch, fried crisp, tossed in a glossy sweet-sour glaze of orange, sugar, vinegar, soy, ginger, and chili, reduced until it clings and candies. We took it a bit too far while keeping the flavors true. Sweetbreads subbed for the chicken. Starch-coated, fried crisp, the creamy interior giving way once you got past the sticky sour-orange glaze. That glaze was built on carrot juice, chasing the unnatural neon orange the original owes to Food, Drug & Cosmetic Yellow No. 6. Micro-curled scallions. Sesame seeds. Microplaned orange zest. Every ingredient was accounted for.

We plated it in a white folding takeout carton, the actual mass-produced box from every Chinese restaurant in America, and stood two long cinnamon sticks in it as chopsticks, for the aroma.

Each choice was defensible on paper, and I kept laughing at my own jokes. One invited another. Let's get as many in here as possible. Together, the dish stopped winking and started punching. It landed in dad-joke territory, not the wry aside of a talented comedian. The flavor was faithful, the execution was right, and the dish still went over the edge. Nobody was transported. They were eating a stranger's version of their weekly order out of the same box, with chopsticks that smelled like Christmas, minus the couch and the Friends reruns.

Most cooking starts with an ingredient and searches for a composition. This path runs in reverse. You start with the reaction, the laugh, the double-take, the eighty-year-old feeling young again, and you reverse engineer. The familiar dish gives you the flavor profile, so the creativity is never in how the flavors work together. It is in how far each element can be pushed, how loudly to tell the joke, and what to leave out.

The orange chicken proves it in reverse. Had we built it as a single bite, no carton, no cinnamon chopsticks, and told the guest to close their eyes and guess, the reaction would have been delight. Amusement. Discovery. Even the sweetbreads, the deviation from the original, would have been embraced, because the guest would have discovered something they love in a place they never expected to find it.

When we get it right, a grandmother feels young again. A room of strangers laughs at a connection each of them made independently.

The joke is on, you.

When treatment ended, and I was still standing, I was full of an insatiable energy. I had lost a year and a half to cancer, and I needed to announce, to the industry, to myself, that I was not dead, physically or creatively. Keeping Alinea moving forward was a given. I wanted something more: a second restaurant, proof that we still had the juice. I was told, rightfully, that it was too soon. Nobody would admit it out loud, but the investors were waiting to see whether there would be a recurrence.

A couple of years passed, and confidence returned. Now the problem was the concept. Alinea had just been named the best restaurant in North America two years running, which made the next move harder; anything we opened would be measured against it. I love cooking French food. Should we do that? It would get boring, and Chicago didn't need it at that time. Japanese, Italian, Thai? We weren't confident enough in any of those cuisines to build an entire restaurant on them.

So: why not all of them? Somewhere in those conversations, the thinking flipped. We realized that if we wanted true innovation, we couldn't think at the scale of a dish or a menu. We had to think bigger than a restaurant. We stopped trying to invent a concept and decided to build a machine that produces concepts: a restaurant that creates three or four restaurants a year. It sounded impossible. A restaurant that would start as Paris in 1906, and then simply cease to exist. Then it becomes Thailand, our childhood, elBulli, with the same devotion, and then disappears again, instantly, one Sunday night. Not a seasonal menu change. Not swapping English peas for favas on a lamb dish. A demolition, three times a year, on purpose.

Same address. Same bones. Entirely new personality, over and over.

The Cost

People love the romance of the concept. What nobody sees is the math. Every new menu at Next is, functionally, a restaurant opening: countless hours of training and development stacked before and after service, systems that don't yet exist, muscle memory built from nothing. And while most chefs endure a handful of openings in their careers, we have done more than forty. Sure, it is a different kind of opening, but it is still forty. The cooks must learn a new grammar, not a few new dishes. The front-of-house relearns its choreography, its descriptions and stories, and its pacing. The serviceware changes: most of it is purchased; the rest is custom-made to match the theme. The pairings are rebuilt. The food cost, the labor model, the training calendar: all of it moves.

At most restaurants, month eight of a hit is when you finally start to exhale; at Next, month three is closing night, and R&D on the following production has been running since day seven of the current one. The team executes one identity at the highest level while simultaneously building another.

The Line That Doesn't Exist

In 2010, Fulton Market was not a restaurant row. It was a working meatpacking district; some mornings the warehouses hosed the blood off their floors and out onto the street, and the smell fell somewhere between iron and tallow. Rent was comically low, the shadiness quotient was very high at night, and the neighborhood was a genuine risk. It was also the only math that worked, because we knew from the beginning that Next's price had to be a fraction of Alinea's. There is real price sensitivity around cuisines that are neither Japanese nor Western European. In 2011, if we told you we were creating a Modern Chinese menu, what would you have expected to pay? Thai? Indian? People just didn't connect fine-dining prices with the rest of the world's cuisines. That is finally changing, and those kitchens are earning the recognition and the prices they always deserved. When we opened, the eleven-course Paris 1906 menu (Escoffier at the Ritz, loaded with foie gras, caviar, Dover sole, wagyu) was $65, about a hundred in today's money. The dinner, recreated at the Ritz's 1906 price, would run $2,400 today.

The deal of the century, literally.

Inside, we ran a twisted steel beam, sculpted from foam, down the center of the room. Deliberately wrenched, evoking bridge spans and railway trusses, the infrastructure of travel warped, as if it had been forced through time to get here. Set into the space were heavy round iron lids, the kind you'd step over on a city street, except these covered a subway that does not exist: a line whose stops are 1906 Paris, Edo-period Kyoto, a Sicilian summer, the future.

And because Next sells tickets like a theater, every menu gets a playbill: a printed program for a production that will never be staged again. Guests keep them. We keep them. Lined up on a shelf, they are a reminder of ambition and its result. The serviceware is no different. Nearly every menu gets pieces designed or sourced for it alone, and when the menu dies, the pieces retire with it. We have expanded our warehouse three times to hold them all.

Expensive, pretty insane, completely necessary.

How We Choose

Over the years, the menus settled into three types. Time and place: Paris 1906, Sicily, Tokyo, Mexico City. Tribute: elBulli, Trio, The French Laundry, the chefs who made us. And concept: Childhood, The Hunt, World's Fair, Space, where the theme is an idea rather than a country's gastronomy, and carries the longest creative leash.

There is also a reason for the sequence. We build each year for the season ticket holder, which means we curate for range: the menu that follows the current one is intentionally its opposite. Nobody wants a version of French three times a year or back-to-back. They want the unexpected: new flavors, time travel. That yin-yang is why the first year read the way it did. We opened with Paris 1906 because we were confident we could write and cook classic French, and the opening had to be a home run: proof that the modernist Alinea crew, the tweezers-and-foams chefs, could resurrect dishes a century old and, as the haters would put it, actually cook. But when a guest weighed the whole year before buying season tickets, what they saw was diversity and fun: classic French, Thai, Childhood. Classic French is delicious. "I love Thai food. And what is Childhood?"

Then comes immersion, because you cannot develop a menu about a place solely from cookbooks. For Thailand, a research trip to Bangkok was not in the cards, so Chef Beran and I flew to Las Vegas and ate at Lotus of Siam. This menu needed a benchmark. We asked them to cook it the way it would be cooked in Thailand, no mercy, and what came out of that kitchen turned the table into an episode of Hot Ones. I went through it like Eric André. Chef Beran powered through. We needed the baseline, and we got it. For Sicily, we let the island rearrange our assumptions, hosted by Fabrizia Lanza at the Anna Tasca Lanza cooking school on the Regaleali estate. Fabrizia was the most generous of hosts: several meals a day for three days, the Sicilian classics cooked in front of me, the secrets inside a proper cassata and caponata handed over like family recipes. The way she used her hands, the deliberately slow pace, the warm but firm voice telling me to listen to the swordfish in the pan. It was never really about the recipes. It was the Sicily in her.

The Ones That Worked

Paris 1906 remains the purest expression of the idea, and it began, honestly, as an obsession. Escoffier was the foundation I trained on, the grammar every cook learns in culinary school, and, a century later, his repertoire still underpins most of what we do. Resurrecting his food became both the challenge and the honor: not modernizing it, but studying his work closely, trying to stand in the kitchen beside him. The question on the R&D board was, what would Escoffier do? We went so deep we debated giving up the blenders, because all he had was a food mill and a tammis. Dinner at the Ritz, 1906: a cuisine of stocks and patience and hierarchy that modern fine dining had spent fifty years changing. Cooking as scholarship, the past studied with the same rigor the avant-garde reserves for the future, was the only way. And the guests were never the only time travelers. In that kitchen, carrying out the oldest techniques with reverence, we relearned what the past patiently tries to teach every generation of cooks: what you think is new is often very old.

The French Laundry: October 28th, 1996. I walked into Chef Keller's kitchen that year as a twenty-two-year-old who thought he understood everything cooking is. Recreating a single night from that era, down to the date, was not a tribute to a restaurant or chef. It was a kitchen full of cooks in 2016, channeling a version of me that no longer existed, cooking the meal that literally built me. When Chef Keller came to dine, I had never felt that level of desire for everything to be beyond perfect.

elBulli was a chance to show America just how groundbreaking Ferran and Albert Adrià's dismantling of food had been. The French Laundry convinced me I understood cooking; staging in Ferran's kitchen in 2000 dissolved every certainty I had. Twelve years later, we recreated the food for guests who had never eaten the originals, with Ferran's blessing. It was the closest I have come to performing someone else's music note for note. Holding the trust of the most influential chefs of the last hundred years was an incredible feeling.

That is the private weight of every tribute menu: Ferran, Thomas, the chefs who made us. We place immense pressure on ourselves to uphold not just their dishes but their story, in every plate. It is a different kind of expectation from a nightly service that chases perfection.

Sometimes It Doesn't

Chicago Steak was harder than any menu had a right to be, just not in the way you'd think. On paper, it was the easiest sell we ever announced: a steakhouse, in Chicago, from The Alinea Group. And don't get me wrong, it was the most profitable menu to date. It was also an energy killer. For a group known for thinking outside the box, a steakhouse ran incongruent to the ethos. The team got restless; they felt held back. When guests already know the destination, translation becomes a knife fight: every choice measured against a thousand existing steakhouses and everyone's grandfather's favorite booth. The conceptual menus give you room to define the terms. Chicago Steak gave us none, and while the money was good, the creative starvation cost more. Boredom, in a kitchen built for reinvention, is expensive in ways the spreadsheet never shows.

Fashion closes this year, the glam at the end of an arc that began with the grace of Japan and passed through the greed of 1987 Wall Street, and it is harder than we originally thought. Haute couture is an aesthetic language, so it should be easy. How do you make a dish look like a zipper? A pincushion? You can, and one or two might even be charming. But a menu built to visually impersonate garments is a costume, not creativity, and it unravels fast. With every theme, we try to dig into its spirit and mind, and somewhere in the research, the real question finally surfaced: what is fashion actually for?

Not clothes. Not brands. Identity. Transformation. Beauty and the insecurity underneath it. Exclusivity, rebellion, craftsmanship, the trend cycle that elevates and then discards. And beneath all of it, a truth: fashion and fine dining are both temporary emotional worlds that people enter on purpose. Nobody attends a couture show because it is practical, just as nobody buys a ticket to Next just to eat dinner.

They come to feel transformed for a few hours.

So the menu we are chasing behaves less like a wardrobe and more like a collection, moving through acts the way a show moves through looks, from the restraint of the atelier, where the construction of a thing is exposed like the inside of a garment, toward something glossier, sharper, more seductive. The vocabulary is already there: velvet, satin, sheer, pleated, crushed, layered, raw, textile words that translate directly to the mouth. There are ideas in development about light and fragrance arriving before flavor, about beauty created to disappear.

The Critics Problem

In some ways, we built a restaurant that cannot be reviewed. A critic's contract with the reader is simple: I ate this, here is what I thought, choose to go or not. By the time a review of Next could run, the menu was weeks from ending. Telling readers to go was telling them to visit a restaurant that would not exist. Most publications quietly gave up. The Tribune did not. Phil Vettel kept coming back, menu after menu, and those four-star reviews became the only continuous critical record of what happened in that space.

Michelin had a harder problem. The star system is built on consistency: the promise that the meal inspected is the meal you will eat. We made inconsistency the thesis. For nine years, the guide simply had no desire to change course for us: a kitchen executing at the highest level of ambition and precision, in a casual room, in a restaurant that changed its own identity three times a year. The star finally came in 2020.

We had built something the measuring instruments couldn't measure.

The Lineage

Four executive chefs have run this kitchen, and each era has its own handwriting. Dave Beran was there at the beginning: twenty-nine years old, handed the impossible job of opening The Alinea Group's highly anticipated restaurant, which would reopen every three months. Dave gave Next its spine: he proved the machine could run night after night, and that guests would fall in love with it, not just admire it.

Jenner Tomaska brought more theater, pushed the conceptual menus into new territories, and carried that into Esmé.

Edgar Tinoco brought depth and a wider map. The Mexico City and Silk & Spice menus under his leadership remain among our proudest.

And Alan Mileykovsky leads now with mentorship and a powerful creative voice. Watching him carry the kitchen from the cosmos into the serenity of Japan, with 1987 Wall Street waiting in the wings, is watching the concept in its most mature form.

The School

A young cook who spends three years at Next will have seriously studied, not sampled, French classicism, Japanese precision, Spanish avant-garde, regional Mexican, and whatever conceptual fever dream we've handed them in between. They will have worked a dozen restaurant openings before their twenty-sixth birthday. There is no other kitchen I know of where that education exists, and I watch our alumni run kitchens of their own with a fluency that usually takes a career to earn.

Season Tickets

Which brings us, finally, to trust. In 2012 we offered the first season tickets: the whole year, purchased before we announced what the year would be. More than six thousand people queued for nine hundred packages. They weren't buying dinner so much as a promise: that whatever we built next would be worth showing up for. Some of those guests have eaten nearly every menu since 2011. They have watched cooks become chefs, watched the room transform forty times, watched us stumble and recover. They are patrons in the oldest sense of the word, and they solved the critics problem better than any star could, because they didn't need anyone to tell them to go.

They had already decided to trust us before there was anything to review.

Fifteen years in, that is what Next actually is. A standing agreement between a team that promises to risk something every season and an audience that promises to meet us there. The menus end. The playbills go on the shelf. And the morning after closing night, we start again, because what we only suspected in 2010 we know for certain now: the restaurant was never the destination. It was the question we never stopped asking.

What's Next?

Every course in this act of five canapés has to involve a bird. Under that rule lies another, that each course contains something birds actually eat. It started as a joke, a bit of wordplay; then it became a challenge, and finally a new way to work. A constraint like that forces criteria into the building of a dish that would never come up if we were only chasing what tastes good or pulling from a Rolodex of flavor memories and dishes. Confident we can make any mystery box of ingredients taste good in the end, we are free to let the unpredictability set the early conceptual work. It is the unpredictability that creates the focused path, which is sometimes elusive in the early stages of dish development. So we started writing down crossovers between birds and food, and the first thing on the page was skate wing.

A pun, an odd starting point to be sure. On the menu, it now reads:

Nantucket Lightship Skatewing à la Pharos Siamois

We immediately went to the most familiar preparation for skatewing, the French staple à la grenobloise. Named for the city of Grenoble, it is browned butter, lemon, capers, and parsley, usually finished with crumbs and spooned over a delicate fish. It is old, it is simple, it is delicious. The skeleton was formed. Then we did something new for us. We laid a second cuisine on top of it.

That is where the box got tight. Laying Thailand over France was not a preference; it was the second rule. Every ingredient we brought in had to do two jobs. It had to stand in for its French counterpart in the grenobloise, same role, same sensation on the palate. And it had to be a thing a bird eats. Two rules, held equally. Meet one and miss the other, and it was out, hard stop.

We used to live by the rule that there are no rules. It sounds ridiculous as I write this, but how we got there is exciting for us, something new, and it will not make sense to the guests until they discover the deliciousness.

Brown butter became cashew.

Beurre noisette takes its name from the hazelnut aroma it picks up as the milk solids brown, and the toasted-nut character carried by the fat is why it subs in. Cashews toasted hard until they are dark, pulverized, and bound with cashew butter give the same toasted richness and the same fat to carry it. A cashew is a seed, and birds like seeds.

Crumbs became roasted rice.

Rice is a grain, the plainest bird food there is. The crumbs in a grenobloise are there for a toasted crunch against soft fish. We roast rice until it is nutty and dark and work it into a cracker that crumbles.

Lemon became tamarind.

A fruit grown in a pod that birds in Thailand feast on. In the original, the lemon is in the sauce to cut the fat and keep the richness from sitting heavy. Tamarind does that and more, sour the way lemon is sour but with a dark, fruity, almost date-like body underneath. Glazed onto the fish, it lifts the plate the same way the lemon would.

Parsley became sawtooth coriander.

It grows in long serrated leaves and, left in the ground, goes to seed. Parsley is the green finish, the fresh top note that keeps the plate from reading brown and heavy. Sawtooth carries a cilantro character that is turned up, and that top note is key in Thai cooking.

Capers became green peppercorn. They are technically a berry, and birds are how pepper moves through the world, eaten whole, carried off, dropped somewhere new. Capers are pickled buds, small and briny, there to pop against the fish and reset the mouth between bites. Green peppercorns, picked young and pickled, then dried and ground, interrupt with heat where capers interrupt with brine.

Five swaps, and each one clears both bars. French to Thai on one axis, bird food on the other, and nothing allowed unless it answered to both.

What arrives is a square of skate lacquered dark, the tamarind hitting first and sour, then the cashew coming up underneath it, round and toasted, the rice cracker breaking, the peppercorn arriving late and warm at the back of the throat. Somewhere in there, the coriander cuts across it all.

It tastes like Thailand. It eats like Grenoble.

The name carries the same meaning. Grenobloise ends in oise, the French way of turning a place into an adjective, of Grenoble. We built a new adjective the same way and called it à la Pharos Siamois. Pharos is the Greek word for lighthouse, from the island off Alexandria that held the ancient one, and the skate is pulled from the waters of the Nantucket Lightship. Siamois is French for Siamese, of Siam, which is to say of Thailand. A Greek lighthouse and a French word for Thailand set into a French form.

The plate came the same way the dish did, out of the rules. Roberto Ferrer is a wood turner and sculptor here in Chicago who carves and paints every piece by hand, and we built this one with him for this dish and this act. He gouged the whole surface with small overlapping crescents and painted them blue. The pattern reads as feathers and as fish scales at the same time. We set the blue plate down onto the blue-feathered table, tone on tone, so the vessel nearly disappears into the surface it rests on, and all that is left to see is the dark-glazed skate in the bare wood clearing at the center. Carved from wood, it became the perfect perch.

None of us would have likely chosen skate, tamarind, roasted rice, and cashew as a first go. Left to ourselves, we would have chosen well, and we would have chosen what we already knew. The rules did not give us more room to work in. They took away every obvious place to start.

The table before it was covered in feathers. The one after it is stainless steel. In between, we set linen, light a candle, and serve something that looks, at first glance, like it could have come out of a French dining room fifty years ago.

Four dishes in this act, one aesthetic, told as a single passage inside a much longer story. The serviceware is elegant and timeless rather than modern. The table is lit by a candle. The flavors are safe in the best sense of that word, referenceable, familiar. After an hour and a half of journeying through the unfamiliar, the guest reaches this act and, for a few minutes, is allowed to feel the known. Soft. Enveloped. Even the feeling of familiarity provides a stretch of intellectual rest. If the feathers before it were the ascent, this is the part where you reach the clouds and rest for a bit.

Classic French cooking is the foundation of my training. It is also, in many ways, the antithesis of our ethos, which has always been about the future, not the past. We use the familiar as a foil. Set a genuinely classical dish inside a meal built on the new, and it does not dilute, we think it sharpens it. The known becomes the thing the unknown is measured against, and the contrast makes the bold parts land harder.

The classic still earns its place in a forward thinking experience.

The dish

On the menu it reads: turbot espagnol à la vapeur en chou de Savoie, mousseline de truffe noire du Périgord, choucroute braisée au beurre et banane rôtie. Even the language is a decision: writing it in French, and in a classic old style serif font, to reinforce the sense of cohesion. Turbot is one of the great classical fish of the French kitchen. Choucroute is from Alsace. A black truffle mousseline is about as textbook as French technique gets. Every component in the dish is something a cook raised in the tradition would recognize immediately.

But we are not only building a dish or even a menu. We are building a world. For the length of this act, the room becomes another place and another time, and everything the guest sees, holds, and tastes has to belong to it.

A mousseline made from the turbot trim, roasted banana, and minced black truffle is sandwiched between the cured turbot fillets. Beneath it sits a choucroute we make in house. The leaves of the napa cabbage become wrappers; the cores left behind are salt soured for forty five days, then cooked gently in butter. The sauce, a soubise infused with celery seed, caraway, onion, fresh bay, and garlic, is the aromatic frame of an Alsatian kitchen, with blanched cabbage and roasted banana blended in.

The wildcard

The banana is the one thing in the dish that does not belong to the tradition. On the plate, it reads as depth and roundness rather than sweet fruit.

Under all the earth and musk and forest floor, a ripe black truffle carries a sweet, almost fruity note, faint but unmistakable. The roasted banana holds its hand. Its sweetness gives the truffle's earthiness something to ride on, the way fat carries aroma, so the truffle reads longer and rounder than it ever would on its own.

It is our kind of modern, wearing a classic coat.

The table

Cohesion is a guiding principle for us, and it does not end on the plate. The service piece was specifically sourced and purchased for this dish, a Herend with the fish scale pattern in green, hand painted in Hungary, as it has been for well over a century. The green of the rim is a dead match for the cabbage sauce and the cooked leaves, so the porcelain and the food read as one composition rather than a dish set down on top of a pattern.

The candle. We have intentionally never used candles at Alinea, always building centerpieces that were beautiful, mysterious, and somehow part of a dish. But nothing reads as a traditional French dinner quite like a candlelit table. Ours are warosoku, Japanese candles on a hollow wick of washi paper and rush, fed by wax from the Japanese wax tree, custom made for us in form, size, and color. We light them the traditional Japanese way: held nearly horizontal, the flame brought to the base of the wick, a beat for the pool to form and the flame to bloom, then turned upright into its stand. It takes longer than a lighter, and that is the point. The care is its own ceremony, the same pomp and detail that has defined classical French service for a hundred years, every small thing done deliberately.

What it says

Taken on its own, this is a conservative dish. Lift it off the menu, set it alone on a table, and you might wonder what it was doing at Alinea.

But it is never by itself. It is one movement in an act, and the act is one passage in an experience, and the experience is the thing we are actually building. Alinea is more devoted to the modern now than it has ever been, but that devotion lives at the level of the whole, not the single plate. The originality is in the sum.

Sometimes serving the push forward means inserting elements that deliberately step back into the familiar, so the arc around it can read as bold as it truly is.

The guest sits down and finds an envelope on the table. Sealed. With weight. In the interval between picking it up and opening it, before they know what it contains, before the kitchen has done anything, something arrives that anticipation is too thin a word for. The sensation of receiving an unknown object, a secret. Most of us stopped having that feeling after childhood.

Inside is a playbill.

Not a menu. Not a road map. A piece of graphic art that moves the guest through the emotional architecture of an evening before a single dish has been made. The closest analog is the director’s note at the front of a theater program, or the artist’s statement at the entrance of an exhibition. The thing that tells you that what you are about to enter is asking something of you.

The room is the first thing. Walking through the door, the guest is wide-eyed, scanning, trying to decode what they are looking at.

The darkness. Not dim. Dark. Giant beeswax pillars running the length of a long communal table, the only source of light in the room, giving something amber and low and alive. The air carries it too, candle smoke threading through the sweetness of warm wax, something ancient in its scent. The surface of the table is beeswax, warm under the hand. Sixteen guests seated together around it, no head of the table, no direction that carries more weight than any other.

At each place sits a black porcelain sphere the size of a basketball, read as sculpture, as something placed for atmosphere. Black against the amber wax of the table, a dark form on a warm ground, the colors of a bee without announcing it. Nobody explained it.

Then Arvo Part’s Spiegel im Spiegel fills the room. Piano and violin. One of the most patient pieces of music ever composed, the critics say. It does not so much arrive as become audible, as though it had been present in the room before anyone walked in. And as the first notes settle, the servers begin to move.

They move the way bees move inside a hive. Purposeful. No gesture wasted. Each person knows their role and their moment, the whole of it coordinated with a precision that, from the outside, looks like something between choreography and instinct. Specific notes in the piece are cues. The servers know which ones. And the guests feel it, not as information but as sensation. Something is operating here according to a logic they were not told about, and the room, the sound, and the people in it are all moving inside it together.

Layer by layer, the sphere opens. Each porcelain piece lifted away. Each dish is uncovered. Each course is consumed before the next appears. The object is becoming a meal. The meal is becoming a ritual. The guest is inside something that dinner has never quite been before.

That feeling, wonder, anticipation, the particular excitement of not knowing what is being asked of you, arrives before the kitchen has sent anything, before a single technique has been applied. Which raises a question we spent years asking ourselves before we understood it: for centuries, the dining room has been designed to impress.

We are asking it to participate.

The room that produced that feeling did not arrive from nowhere. It arrived from centuries of history. Fine dining inherited its grammar from power. Royal courts, aristocratic houses, Victorian banquet halls, the grand hotels of the late nineteenth century, Escoffier’s brigade. The system was built to do one thing: signal status. The room existed to make the guest feel wealthy and important for the duration of the evening, to provide, for a few hours, the sensation of having arrived. The result is a room that has rarely been asked a question beyond aesthetics. The most coveted address. The most elaborate chandelier. The assumption that luxury lives in material cost, that the quality of an experience is legible in the expense of its surfaces. Replicated without questioning, from one generation to the next.

For years, we asked the wrong questions. We asked what a room should cost. We were not yet asking what a room should do.

The question, once we started asking it, kept growing.

It started with the plate. Specifically, with the inadequacy of the plate, the recognition that the food we were making had no existing object to live inside. Martin Kastner began building serviceware from scratch, each piece designed around the food rather than the other way around.

That was the first version of the question: what else belongs here? What else can elevate?

Then the surface under the vessel. We covered the tabletop in warm beeswax, and the food read differently on it. That result was significant enough that the question grew. We covered the table in feathers. I did not tell them why. The kitchen understood immediately that it was operating from a different source. The food was not coming from where food usually comes from.

Then the floor. Oak leaves one fall, the season entering the room in a way no dish could have produced alone, the smell, the crunch underfoot. Then the ceiling, food and serviceware suspended above the guest. Guests foraging from the walls. Then the sound. Then the light. Each expansion produced a meaningfully richer experience. Each result justified the next question.

The gallery is where that question arrived after two decades of evidence. The frame kept expanding until it became the room itself.

You cannot spend your way into a story. You can only dream one.

The room begins with a question: what does it mean to think like a hive?

The hive is not a single gesture. It is countless movements, a myriad of decisions, many losses, thousands of wins, improbably orchestrated, deeply personal, undisputedly original. In the persistent cloud of adversity and vulnerability, the hive keeps moving forward. That is the staff. That is the institution. Every person in the room on any given night has their specific task, their specific moment, their contribution to a whole they may not be able to see from where they are standing. The result only exists because each of them kept moving toward the same thing. That is also what the guest is walking into if they are paying attention.

The black sphere at each place is a porcelain globe that separates into seven individual pieces, each holding a composed dish. Seven courses sealed inside an object that gives nothing away. The kitchen did not begin from a seasonal ingredient list or a technique worth exploring.

It began with the bee.

What does the bee make?

What does the bee eat?

What surrounds the bee?

Every dish inside that sphere could only have been made for this room and no other. Each server knows exactly when to move, exactly what to lift, exactly how the whole of it comes together. The sum of those parts is not efficiency. It is something closer to what the hive produces: a result larger than any single decision that went into it.

Not the honey. Not the wax. The fact that the room authored the menu and the music conducted the service, and the guest felt both of those things before they had words for either.

There is a separate authoring happening in the architecture of the evening, and it operates on the body rather than the imagination.

Sit in one place for three hours, and the system flattens. Fullness rises, the senses dull, not because the food has dulled them, but because the body has been receiving the same input from the same direction, at the same temperature, in the same light for too long.

Every long tasting menu lives inside this problem. The rolling hills logic of the original bubble menu at Alinea was an answer to part of it: keep the registers moving across sweet and savory so the body keeps reading.

When the body moves into a different room, something resets. The moment a guest crosses a threshold, their posture changes. Their eyes widen. Their appetite returns. Something in the body releases, the way it does at the beginning of an evening, before experience has accumulated into weight. What the kitchen sends into that room lands on a guest who is, for the first time in an hour, genuinely open to receiving it.

The guest moves through four rooms over the course of the evening, each containing its own complete meal, and six distinct emotional and sensory worlds, each with its own light, surface, sound, logic, and arc. This is a direct break from the structure that every tasting menu has inherited from Escoffier: the linear path from light to heavy, savory building in richness and intensity, finally receding into sweet. That arc was not invented by a chef who asked which sequence would produce the most meaningful experience. The sequence is an assumption so old it became invisible.

There is a layer underneath all of this that the guest is never told about. In one of the acts, a juniper branch crosses the space between the guest and the food, the scent of it first, resinous and sharp, and then the thorns, apprehension before anything is uncovered. One room appears in white linen, the warmth and elegance of something timeless, classical food on white plates, unhurried and pure. The act ends, and while the guests are seated, the linen comes away. Underneath is cold stainless steel. Black plates. Geometric forms. No organic color. No candle. The room has not moved. The act has completely changed.

The last act is called the Shadow Monologue. Five chefs working in near darkness under pin lights, no music, the guests watching. You cannot see the people, only what they are making. The evening began with the hive, with the team, with every individual moving toward the same thing together. It ends by making a statement that requires no words.

Loud.

Silent.

We did not invent this approach. We copied it.

Alejandro Jodorowsky made The Holy Mountain in 1973. It is a film so dense with symbol and image that fifty years of criticism have not produced agreement on what it means, and Jodorowsky has never resolved the question for them. His films are like clouds, he said - their meaning keeps changing every minute.

What a symbol does is awaken something in the viewer's unconscious. It does not instruct or explain. It bypasses the rational mind entirely. The guest who walked into that dark room and felt wonder without knowing why was already receiving it. The wax warm under the hand. The sphere that did not announce itself as food. The music conducting the servers in patterns the guest could feel but not account for. All of it present. None of it explained.

A poem with footnotes is no longer a poem.

Which raises a question I do not have the answer to:

How does anyone evaluate something they have never been given a language for?

A theater critic walks in with centuries of vocabulary already inside them. A film critic brings mise-en-scene, editing, the grammar of image and meaning. Over time, each form has built the vocabulary it needs to read itself. Critic and audience share that vocabulary.

A restaurant critic walks in with a different and precise set of tools. The Michelin Guide names five criteria. It states explicitly that decor, table setting, and service are not evaluated when awarding stars. That is not a flaw. It is a deliberate narrowing; the food is the unit, the vocabulary is exact, and it is entirely sufficient for what it was built to evaluate.

What we are building lives partly inside that vocabulary and partly outside it. The food meets those five criteria. What surrounds the food has never been asked to. The room as actor, the symbol as creative method, the music as conductor of the service, the body’s reset between acts, none of these is in the food critic’s tools. They are closer to theater or film critics. Some of what we are doing has no fully formed vocabulary in any existing form.

When Alinea opened in 2005,

the dishes that have since become most recognizable were questioned in the early reviews because the available reference was Adria, but what we were doing was not Adria. The closest available baseline was the wrong baseline.

By the time the industry developed a vocabulary, the dishes had been served thousands of times to guests who had already recognized something the original critical framework could not name.

Genuinely new work always arrives before the vocabulary that will eventually read it. That is not a flaw in the critics.

Artists create the genre.

Writers name it.

What we are building is a tasting menu and a theater piece and an immersive experience and a performance, and none of those things entirely.

It contains all of them and exceeds each of them. The vocabulary to read it has not been written because the thing itself has not existed long enough to need one.

The deeper question is not for the critics. It is for the diner.

Some will read this and feel immediately that they want the deeper experience. Will they walk in already asking what the room is doing, why this surface, why this symbol? Will they track what the shadows are saying in the final act? Will they look back on the evening not as a meal they attended but as a dream they were in?

Some will feel, just as immediately, that they came for dinner. The form asks more than they wanted to give tonight. They are not wrong. The food is real. The technique is real. The pursuit of excellence in every way is our commandment.

Some will feel something more honest than either. A curiosity about what would happen if they let themselves be a different kind of audience for a single evening. The small uncertainty that comes with not knowing whether they have brought the right tools to something they are about to encounter. That is the guest this form is for.

After twenty-five years at the edge of what dinner can do, I want to know what is on the other side.

This industry has produced extraordinary creative output inside the traditional frame, and we are not arguing with that. We are asking what becomes possible when the frame itself is part of the creative decision, when every element of the evening, the envelope on the table, the darkness, the sphere that does not explain itself, the music that conducts without announcing it is conducting, is asked to participate.

What is that? The experience has no name. The vocabulary to read it has not been written. The audience for it is still finding its way.

Every one of those is a reason to build it. Not a reason to wait.

But your brain is wrong.

The question is why. And the answer starts long before the first bite, in the chemistry of what these three things actually are.

When we introduce a new dish, I ask the team to share any and all guest feedback, but I still spy at the kitchen table, watching how they react.

After the dish description is recited, they pick it up. There is always a pause. The hand reaches, then hesitates. They look at it the way you look at something you cannot quite classify, turning it slightly, holding it at a distance. Then they shoot a glance at the person beside them. A silent negotiation. You go first. The combination of ingredients has done exactly what it was supposed to do: produce uncertainty before anything else.

The piece is small enough to eat whole, but guests almost always bite it in half. They are testing. The pectin glass does not compress or yield; it cracks. Clean, sudden, disproportionately loud for how thin it is.

For a moment, they forget that someone deliberated on this for weeks and instead feel as if they discovered something no one else has.

Unlike some things, that does not get old.

One bite

These one bite courses are the most creative work we do.

When a dish fits in the hand, every component has to earn its place. There is no room for anything extraneous. With a fork and a plate, the guest decides what goes on it, in what proportion, in what order. They build their own version of the dish and you have no control over what they experience. With a single bite, eaten whole, that negotiation disappears. There is no need to eat this first or make sure you get everything on the fork at once. There is only one thing, exactly as designed.

You hit it once. Which means we can be more radical, more precise, more focused on what it asks of us. The architecture does not have to sustain itself.

No law of diminishing returns.

The kombu

Rishiri kombu is grown for two years in cold northern water before it is harvested. Slow maturation concentrates the glutamates, the amino acids that carry umami, the fifth taste, the one that amplifies everything around it. For this dish, the dried kombu is submerged in black cherry juice and cooked at a low simmer for four hours. The concentrated natural sugars in the cherry juice create a hypertonic environment around the kombu’s cell walls, drawing water outward while pushing flavor compounds inward, firming the structure rather than collapsing it. It is the same principle at work when a citrus rind is candied, cooked low and slow in heavy syrup for hours without disintegrating.

The truffle

Black truffles are poached gently in truffle stock. That stock reduces to a dark concentrated glaze, lightly thickened with starch, then used to dress both the kombu circles and the truffle slices, binding them together.

The nose leads.

The dominant aroma molecule in black truffle is dimethyl sulfide, a sulfurous organic compound found in over eighty-five percent of all truffle species. It is the molecule responsible for that quality of truffle that resists easy description, earth, animal, deep, ancient, the smell of something that grew in darkness for a long time. What I did not know is that dimethyl sulfide is also a principal volatile compound in black cherry. Same molecule. Different kingdom, no shared lineage.

That shared compound is the hidden handshake. The molecular reason these two ingredients, which have no obvious business together, feel like they were always meant to be paired.

What happens when you eat it

You would think the first thing you taste is cherry. It is the outermost layer, top and bottom, the thing that touches the tongue first. The glass is brittle, thin as parchment, and it does not dissolve. It fractures the moment pressure is applied.

As you raise the bite toward your mouth, the truffle’s volatile compounds reach the olfactory epithelium before the teeth have done anything at all. Earth. Depth. A quality the brain reaches for and cannot quite name. There is no clean frame of reference for this combination, and that disorientation is not a flaw. It is part of what makes the dish special.

Then the cherry glass breaks. As chewing begins, the kombu, firmed by osmotic cooking but softened by four hours in a fruit and glutamate rich liquid, yields with a texture the tongue reads as almost creamy. It is not fat, though it feels like it. It is kokumi, the mouthfulness and continuity that glutamates produce, enhancing umami and sweetness simultaneously, making the middle of the bite feel fuller than its components should.

The kombu does not taste like the ocean. It tastes like depth.

The cherry comes last. Small shards of the pectin glass have been working their way between the teeth throughout. As the truffle and kombu notes recede, cherry releases, high and bright, its malic acid cutting through and cleansing the palate, benzaldehyde’s almond earth signature threading through the fading earthiness, linalool adding a lift that is almost floral. It lingers because fragments are still releasing volatile compounds long after the rest of the bite is gone. The fruit is the finish. The thing your brain predicted would come first arrives last.

Three waves. Earth, then depth, then light. A sequence that moves from dark to bright, from the oldest evolutionary taste signals to the sharpest and most aromatic. The whole experience lasts perhaps fifteen seconds. It contains more information than most dishes carry in a full course.

What the nose knows

Three quarters of the way through radiation treatment, the inside of my mouth was shedding. Layers of skin peeling away in sheets, the tongue stripped raw. Taste was gone completely. Not diminished, not distorted.

Gone.

One afternoon a purveyor came in with samples of an artisan soy sauce, direct from Japan, that he was excited about. The room went through the ritual, small pours, considered sips. I picked up the bottle and smelled the opening.

Dark chocolate. Coffee. And underneath both of those, something bright and tropical, a current of passionfruit moving through the bottom. I went back to the kitchen and built a dessert from what my nose had told me. Seventy percent chocolate, passionfruit, and soy sauce.

Guests enjoyed it. I never tasted it.

Some things you can only learn through loss. Flavor does not live on the tongue. Five signals is all it carries: sweet, salt, sour, bitter, umami. Blunt tools, useful for detecting the broad shape of something. The rest, everything that makes a strawberry different from a raspberry, Burgundy from Bordeaux, black cherry from dark plum, is the nose.

Gordon Shepherd, a neuroscientist at Yale, calls it retronasal smell. You can feel it right now. Pinch your nose, put a piece of fruit in your mouth, anything with a distinct flavor, and chew. You will get sweetness. Acidity. The fundamentals. Release your nose and the flavor arrives all at once, sudden and complete, as if a door opened..

The brain is the kitchen

Heston Blumenthal created a dish called Sound of the Sea. It arrived at the table as a plate of seafood set over what appeared to be sand, a conch shell beside it. Inside the shell, an iPod was playing waves, tide, and wind. Guests ate with the ocean in their ears and rated the dish as tasting more intensely of the sea. The ocean was not on the plate. It was in the headphones, in the brain assembling all of it into something it called flavor. The research behind it, Charles Spence at Oxford demonstrating that amplifying the crunch of a potato chip through headphones made people rate the exact same chip as crisper and fresher, had proven that sound alone could alter the perception of texture and quality. Blumenthal turned that finding into a dining room.

The same principle holds across every sense. The color of a plate shifts how sweet food reads. The weight of the cutlery changes how expensive a dish tastes. The lighting moves the wine. None of this is happening on the tongue. All of it is happening above it.

The instrument is different in every person

I have seen guests push the same dish away that the person beside them called the best thing they ever ate. Same dish. Same night.

One in four people at your table is a supertaster. Not a compliment, a genetic fact. Which means bitter arrives not as an undertone but as a full signal for a quarter of your guests. The dish that reads as balanced to the person beside them reads as aggressive to them.

Why any two people at the same table can taste the same dish and inhabit completely different experiences is a conversation for another post, and one I am looking forward to having. But understanding that it happens, that flavor is not a fixed property of food but a negotiation between the food and the specific person doing the tasting, changes how you think about cooking for a room full of strangers. You are not feeding one person. You are feeding a hundred different versions of the same dish throughout the service.

What makes a dish worth keeping

People have held contests to see how many black truffle explosions they can eat in a single sitting. I have lost count of how many times someone has looked at me and said this never gets old. The explosion is the most recognized bite associated with my name. It got me the job at Trio in Evanston. It put Alinea on the map before Alinea existed. It stamped the ethos of what our food would become, complex, confusing, forward thinking, a discovery the guest feels could be made only by them.

It is our Oysters and Pearls.

Now it is gone.

From there, I found myself drawn toward the unlit, not just darkness, but the specific pull of paintings that use absence as structure. I was visiting museums, watching art videos on YouTube, following threads from one painter to the next. I landed specifically on Caravaggio, a painter whose life was a study in contradictions. Transcendence and chaos in equal measure. Masterwork produced while moving permanently, narrowly, one step ahead of his own destruction.

The Painting

Around 1605, Caravaggio completed Saint Jerome Writing, producing what many say is one of the most technically radical paintings of the Baroque era. Jerome reaches across his manuscript, a skull beside him on the table, red robe cascading off the edge. This is Tenebrism at its most precise: not simply a dark painting, but one where darkness is the starting point. Caravaggio began with a black ground and pulled light forward from it, the opposite of how painters before him worked. Light doesn’t illuminate the scene evenly. It arrives like a spotlight, carving form from pure black, creating depth that is both dramatic and resolved.

The skull stops you first. Then the fabric pulled me in. The soft, curved draping of the robe, the heavy shadows pooling in the negative spaces of the white cloth, the way Caravaggio could make fabric carry that much physical weight using only light and its absence.

I became fixated on it. That crimson robe was going to become a dish.

Once I committed fully to using only those colors, I noticed what wasn’t there. No greens. No living plant color. None of the organic palette that populates almost every plate in fine dining. The entire canvas exists in black, deep brown, ochre, crimson, and bone. For a chef, that is a creative constraint unlike any I had faced before.

The Filters

Every dish at Alinea passes through filters. Not rules. The distinction matters. Rules tell you no before you’ve asked the question. They prevent exploration, closing doors before you’ve walked through them. Filters do the opposite. Each one you apply doesn’t shut down the process; it focuses it. The more filters you run something through, the more distilled and precise the answer becomes.

This dish had five filters. Every component had to pass through all of them:

I. It had to be Italian.

A self-imposed constraint with no obvious culinary logic that turned out to be the most clarifying decision we made. Caravaggio lived and worked in Italy. The ingredients had to as well. Olive, anchovy, parmesan, eggplant, red peppers, sourdough. Every connection in the dish flows from that single decision, through the palette, through the painting.

II. It had to fit within the painting’s color palette.

Every ingredient was chosen against a color on the canvas:

• Black garlic paste and dehydrated olives for the darkness and shadows.

III. The textural language of the canvas had to carry over to the plate.

Impasto. Crackling surface. Heavy draped form. The painting is not flat; it has physical texture, paint that rises from the surface, pigment that has dried and fractured over four centuries. Impasto is a technique Caravaggio himself employed: paint applied so thickly that it stands out from the canvas, catching light the way a physical object would. We wanted that quality on the plate as actual texture, achieved through technique, not as a reference or a metaphor.

But we struggled with the light. Caravaggio’s directional light is the engine of the entire painting, the force that gives every form its weight and presence. We tried to replicate it. Gradients of white-to-beige powder swept across the components. Purées are spread and feathered to suggest a light source arriving from one side. None of it worked. Food does not behave like oil on canvas, and the more we tried to impose Caravaggio’s light onto the plate, the further we moved from anything honest. That failure turned out to be the most important moment in the dish’s development. The inability to recreate directional light was what pushed us away from literal recreation entirely, toward something flat, two-dimensional, and fully resolved.

Toward Mondrian.

IV. Every symbolic thread had to connect.

Baroque and Renaissance painters constructed meaning in layers. A skull is not a skull. An olive branch is not an olive branch. I became obsessed with every dot connecting, at varying distances. The obvious connections sit on the surface. The buried ones live quietly within the work, known only to those who made it. The dish contains olives because they are Italian, because they match the palette, and because they are delicious with beef. It also contains them because Jerome’s skull, the memento mori at the center of the painting, is surrounded by objects that carry the weight of mortality and its counterweights. Peace. Reconciliation. Continuity.

V. It had to be delicious.

This filter sits above all the others and answers to none of them. It is the filter most likely to be forgotten when the idea is moving fast. The excitement of a new technique or a compelling concept can put a dish on the menu before it is ready. Every conceptual decision collapses if the food doesn’t taste really good. There are rare exceptions where delicious is not the primary filter, but that is a different conversation for a different post.

The way we stress-test that in our kitchen is through a process we call flavor bouncing

(see this very new video of me 15 years ago). You place your focal ingredient at the center and start connecting. The ribeye is the anchor. Beef and roasted red pepper, obvious. Red pepper and smoked paprika, one deepening the other. Smoked paprika and toasted bread, the same register of warmth and depth. Toasted bread and parmesan, a combination as old as Italy itself. Parmesan and sweet garlic, clean and direct. Sweet garlic and green and black olives, Mediterranean to the core. Olives and artichokes, rooted in the same culinary tradition. The moment something doesn’t connect back to everything already in it, it is eliminated.

The intended becomes the unknown. The unknown becomes the dish.

The Unlock

The painting unlocked the palette.

We extracted the color swatches directly from Saint Jerome Writing and built a document, each color bar pulled from the canvas, labeled, and set against the others. Black. Deep brown. Crimson. Bone white. Ochre. Dry pale gold. That document became the creative blueprint. Each color became a question: what ingredient tastes like this, and is quintessentially Italian?

The palette unlocked the ingredients.

Eight colors produced a longer list of candidates, most of which didn’t survive the other filters. They failed on flavor, on cohesion, on necessity. One of the hardest things for a chef to do is remove components from a composition. Every idea feels essential until the filters prove otherwise. What remained after everything was eliminated was seven ingredients: red bell pepper, heavily toasted bread purée, beef, olives, garlic, artichokes, and parmesan.

The ingredients unlocked Italy.

The result wasn’t initially driven by culinary knowledge, by regional flavor profiles, or classic combinations. It was driven entirely by the filters. Italy emerged from the painting, not from the kitchen.

The symbolism unlocked the constraint.

Once all the ingredients were confirmed, I looked at the plate as a whole and noticed something significant. No green. No living plant color. None of the organic palette that populates almost every plate in fine dining. Not because we avoided it. Because the painting didn’t have it. Caravaggio’s canvas is black, brown, ochre, crimson, and bone. There is no organic green in Saint Jerome Writing. There are no microgreens or colorful garnishes on this plate. That absence became a defining characteristic, the most invisible and total connection between the food and the painting.

The constraint unlocked the geometry.

The plan was to drape the red bell pepper sheet on the plate, to achieve the form and depth of the robe as Caravaggio rendered it, folded, pooled, weighted with shadow. We attempted it many times. It was never right. Caravaggio’s robe isn’t three-dimensional. It only reads that way. His genius is the construction of illusory depth through directional light and shadow. We were trying to out-Caravaggio Caravaggio with real food on a real plate, but no matter how many times we tried, it didn’t work.

So we stopped trying to replicate, and I went back to the color swatches. I looked at that red bar, flat, geometric, precise, and that was it. We rolled the pepper sheet into a cylinder. The robe became a form rather than a drape. And the moment it did, the entire compositional language of the plate followed. If the robe is geometric, everything is geometric. That is honest creativity, not forcing a thing to become what it already is somewhere else, but letting the process run its course. Trusting it, allowing it the freedom to move where it needs to go, following it even when it takes you somewhere you didn’t plan.

The geometry unlocked the plate.

With every component now geometric, each element needed to find its form, its size, its position. Each was scaled according to how present we wanted it, how much visual weight it should carry, how intensely it should arrive on the palate, and how it would read against everything surrounding it. Blue Door Ceramics created the matte black plate with a finish that recalled the dark ground of the canvas. Not glossy. Not reflective. A surface that absorbs light the way Caravaggio’s backgrounds absorb everything that isn’t Jerome.

The Technique

And now we actually cook.

The toasted bread purée begins as sourdough baked until very dark, past comfort, past the point most bakers would pull it, then puréed with olive oil, veal stock, and butter until it holds a shape and carries the flavor of something almost reclaimed from the edge of burning. Slightly dehydrated, its surface fractures and lifts. The crackling you see is intentional. It is Caravaggio’s impasto rendered in bread.

The red cylinder presented its own set of problems. Conventional pasta couldn’t hold the roll during service, couldn’t reheat with the texture we needed, and couldn’t carry the volume of red bell pepper juice required to achieve the color or flavor. We turned to kuzu starch, trial and error through steaming and ratio adjustments until we arrived at something intensely flavored, shiny, supple, and malleable. The idea for the form came from Tokyo. During our residency there, we ate at one of the few remaining restaurants serving Himokawa-style udon, very wide sheets rather than conventional strings, an old form most places have abandoned. The slippery, chewy, springy quality of it stayed with me.

Eleven weeks of R&D. Nothing arrived at casually.

What It Says

This dish is not a tribute to Caravaggio. It is not a reference to him, not a homage, not a culinary interpretation of a painting. It thinks the way he thought. The same forces that governed how he constructed meaning on canvas, constraint, symbol, composition, the deliberate tension between what is illuminated and what is withheld, governed how meaning was constructed on this plate. The methodology was different. The logic was the same.

What the dish argues, more than anything, is that constraint is not the enemy of creativity. It is the condition creativity requires. Every filter applied narrowed the field. The commitment to Italy, to the color palette, to the textural language of the canvas, to the symbolic vocabulary embedded in the work, each one made the creative space smaller and the decisions within it more precise. The absence of green on the plate is not a limitation. It is a position. The geometry is not a compromise. It is what honesty looks like when you stop forcing the outcome.

And then there is the distance between Caravaggio and Mondrian. Three centuries of art history, a complete reimagining of what a painting is for, traveled inside a single dish without either artist being present on the plate. That distance is what translation produces when it is done honestly. You take something from one world, find its essential truth, and carry it into another. What arrives on the other side is never what you started with. It is something that could only exist because of what you started with. That is not imitation.

That is not a reference. That is the work.

The Arrival

This essay is not about Caravaggio. It is not about Mondrian. It is about two months between them.

The creative path that produces something genuinely new is rarely the one you planned. It is almost always the one you found. There is a frustration that lives in the center of a creative process, when nothing on the plate looks like what you imagined, when the idea that seemed so clear at the start has become something you can barely recognize, when the team is exhausted, and nothing is resolving.

That frustration is not a signal to stop. In our experience, it is the most reliable signal that you are close to something good.

Two months of trying to drape a robe that wouldn’t drape. Of chasing directional light that food simply cannot carry. Of purées and powders that moved us further from the truth every time we tried them. There was a point where the plate held thirteen components, none of them speaking to each other. We stripped it back to seven and started again.

That process is the magic I wish we could bottle. Not the inspiration, not the painting on the wall, not the methodology of filters, color swatches, and flavor bouncing. Those are the scaffolding.

The process is the willingness to keep going when the scaffolding produces nothing you recognize.

To trust that the work knows where it is going even when you don’t.

To have the patience and the resolve to keep iterating, keep plating, keep tasting, keep asking whether this is actually good or whether you are just tired of looking at it.

We started with Caravaggio. We ended somewhere Mondrian would recognize. Between those two points lies everything that actually matters: the failed attempts, the pivots, the moments of genuine doubt, the morning you come in and something finally clicks, and the plate in front of you is not what you set out to make but is exactly right.

The destination was the point. But the path was the reward.

If you are reading this, you probably know the name Alinea comes from a typographical mark — the pilcrow, the paragraph symbol—which signals the end of one train of thought and the beginning of another. I chose it deliberately. And at 28 years old, with my hair on fire and more audacity than sense, I made the declaration that would become the restaurant’s ethos: not just of what the restaurant would be, but of what it would keep becoming.

Making that declaration was the easy part. What nobody tells you is what happens twenty years later, when the genre you helped create has become the establishment, when the next generation has moved on to their own rebellion, when the very thing you built from nothing has become the thing they are pushing against. That is the moment that defines an artist. Not the beginning. The middle. The long, uncomfortable, identity-testing middle.

A rock band can tour forever on its catalog. Their audience will always show up for the songs they know. That is a legitimate choice, and I understand the satisfaction. Pun intended. But a painter cannot hide behind a catalog the same way. Each new canvas is a public declaration of where they are right now. Philip Guston spent the 1950s and 1960s as one of the most celebrated Abstract Expressionists in America, at the absolute top of that world, praised, collected, and institutionally embraced. And then in 1970, he walked away from all of it, returning to raw, cartoonish figurative painting that looked nothing like what had made him famous. The art establishment was savage. Critics who had championed him felt personally betrayed. He did not flinch. He said he could no longer make paintings that turned away from the world. Today, those late paintings are considered his masterwork, the most alive, most urgent, most fully realized work of his career. The shift that looked like a collapse was actually an arrival.

Most restaurants never face this decision. The average lifespan of a restaurant is measured in years, not decades, and the ones that do endure tend to find a groove and stay in it, which is its own kind of success. But occasionally a restaurant lives long enough to enter a second creative turn. To arrive at the moment where the body of work is complete, the identity fully formed, the impact proven, and then have to ask the question that most never get to ask: do you become a museum of yourself, honoring the past with reverence and precision, or do you start again?

Both are legitimate answers. The museum path is not without dignity; there is real craft in the faithful execution of a vision, and real joy for the guests who come specifically for that. But it was never going to be our answer. Alinea was not built to be preserved.

The question, when you are fortunate enough to have a platform for as long as we have had one, is simple and brutal: do you evolve, or do you become a dinosaur?

People like to think the creative process is romantic. The artist drifts to sleep and wakes to a brilliant idea already formed. For me, creativity is the result of hard work and study, and the willingness to present yourself with difficult problems and refuse to let go until you find the answer. You cannot decide to turn it on or off. You can only keep asking the questions and tapping into the grit sometimes required to create the answers.

The question I have been asking for twenty years is the same one I asked before Alinea opened: what does it mean to make someone feel something through food? Not taste something. Not to evaluate something. Feel something, in the way music makes you feel, in the way a painting can stop you cold in the middle of a museum. Everything else is in service of that.

That question has never changed. The answers keep changing.

There are many people with diverse passions. What’s rarer is desire, the kind that keeps you moving through exhaustion, doubt, and failure because stopping simply isn’t an option. I used to think passion was the engine. Now I believe passion is the spark, it gets you started, sets the wheels in motion, but desire is what keeps them turning. The specific, irrational, almost frightening need to keep going when the passion has long since left the building.

There is a pattern to how art moves through time, and it is less romantic than people imagine. Culinary movements follow a rhythm that is almost geological in its consistency. Escoffier’s codified classicism governed fine dining for nearly fifty years. Bocuse and Nouvelle Cuisine broke from it in the 1970s, lighter, fresher, the chef as individual voice rather than custodian of tradition, and with him came Troisgros, Guérard, Chapel, each pushing further from the monument they had inherited. Fifteen years later, Alice Waters and Jeremiah Tower insisted that place and season mattered more than classical technique. By the early 1990s, Adrià and the molecular avant-garde dismantled the idea of what food could physically be: gels, foams, spheres, the laboratory as kitchen. Then in 2004, Redzepi and New Nordic rejected all of that in favor of radical locality and restraint. And now, roughly twenty years later, in a world where everything moves faster and means less, the pendulum has swung decisively toward narrative and immersion. The meal as theater. The room as story. The guest is not an observer but a participant.

Each movement took fifteen to twenty years to fully crest and recede. Music follows the same clock, major revolutions emerging every eighteen to twenty years, each driven by a generation creating for itself rather than consuming what came before.

These cycles are not accidental. The most consequential artists in any discipline studied the masters, absorbed everything, understood the full architecture of it, and then made a calculated decision to go the other way. Not out of ingratitude. Out of a competitive need to surpass the mentor, to define what comes next, to express something the teacher never could. Bocuse did not refine Escoffier. He dismantled him. What looks like rebellion is actually the engine that propels the entire discipline forward. The ego that refuses to be second is the same ego that creates the next movement and hands the generation after something worth rebelling against.

The creative restlessness that built the last movement eventually demands that you tear it down and build the next one. That is not failure. That is how it works.

What we are doing now is something different, and in some ways more personal. We are not rewriting the rules. We are making the best work of our lives within them. All-new dishes, all-new serviceware, a deepened sense of theater in the Gallery and Kitchen Table spaces. But the architecture of what Alinea is, the belief that food should make you feel something, that an evening should move through emotional states the way a great piece of music does, that imagination comes before technique, that remains exactly what it has always been.

Think of it less as a reinvention and more as a new body of work from the same artist. The voice is the same. The subjects have changed. The style has evolved. And that evolution is where our best work is waiting.

The same truth holds in every medium.

At some point, every song stops belonging to the person who wrote it.

In 2000, Radiohead released what critics called the defining rock album of their era. They were at the absolute peak of their form. The obvious move was to make another one. Instead, Thom Yorke looked at what they had built and felt something he described as a kind of fridge buzz, the sound of their own influence echoing back at them, and knew he could not keep making music that had become part of that background noise. Kid A, released in 2000, abandoned traditional guitars for electronic music, ambient textures, and abstract composition. Critics called it alienating. Today it is considered one of the most groundbreaking records of the twenty-first century.

What Yorke understood, what every serious artist eventually has to reckon with, is that the same restlessness that created the thing you’re known for will eventually demand that you move beyond it. Not because you’re dissatisfied with what you made. Because you’re still faithful to why you made it.

When I think about the iconic dishes at Alinea, the ones guests have loved, that have meant something to the people who experienced them, I feel genuine pride and something close to tenderness. I am not walking away from them in frustration. I am walking away from them in completion. They worked. They did exactly what they were supposed to do. They opened something in people.

And precisely because they succeeded so completely, they have to be released.

There is a difference between originating an idea and executing it. Both require discipline and skill. But only one requires the specific vulnerability of not knowing whether what you’re reaching for exists yet, the reaching itself, in the dark, toward something that hasn’t been named. The first time we made those dishes, we were reaching. The not-knowing was essential to the making. Somewhere along the way, the not-knowing became knowing. Knowing became executing. Executing, however beautifully, however precisely, is a different act than creating.

The question I used to get asked most often about Alinea is some version of “How do you keep going?” Now, it is “Why do you keep going at this point in your career?” And the honest answer is that I don’t experience it as pushing. I experience it as being pulled. The only choice is whether you want to hang on anymore.

I am genuinely grateful for what we have built. That same repertoire, those dishes that gave people moments they have carried with them, is something I do not take lightly. But that repertoire, as beloved as it is, eventually begins to pull against the current of new ideas. The dishes become the expectation, and expectation is the enemy of discovery. They become what guests come for rather than what moves them forward, and that tension, quietly and persistently, works against everything this place was built to do.

Thirty years of cooking taught me three things. The diner my family ran in Michigan gave me the work ethic. The French Laundry gave me the foundation on which everything else was built, four years inside the best restaurant in the world, where the standard was so uncompromising it became the only standard I have ever known. ElBulli took every certainty both had built and quietly dissolved it, replacing it with something more useful, a genuine tolerance for risk, and the understanding that not knowing is not a weakness. It is the only honest place to start.

The moment you stop following the ideas, you stop being creative. You become skilled. Exceptionally skilled. But one of the things that makes the work matter, the thing that makes someone stand in front of a dish and feel their chest open, that requires the willingness to be wrong in public, to care more about the idea than the reception, to accept that the people who love what you have already made will sometimes be confused or disappointed by what you make next.

The alternative, at least right now, the comfortable, safe, well-executed, well-reviewed alternative, is a kind of slow, dignified creative death for Alinea, and that has never interested me.

The world tour was never meant to be a victory lap. It was an homage, twenty years of work brought to audiences who had never experienced it, and to those who had loved it and wanted one last moment with it. The Hot Potato Cold Potato, the Black Truffle Explosion, the balloon, the tabletop dessert, cocktails served inside ice, pillows of scented air. We carried all of it, city after city, twenty-eight weeks a year on the road. For many people in those rooms, it was their first encounter with what Alinea had spent two decades building. For our team, it was a chance to perform that repertoire together one final time, to own it completely before letting it go.

What we gained was immeasurable. Core memories forged with a team that gave everything. Relationships built in cities and kitchens around the world that will last the rest of our careers. Inspiration absorbed from places and people we would never have encountered otherwise. I would not trade a single week of it.

Were the lackluster reviews during that period a result of being away, of dividing our attention across continents while Chicago waited? Maybe. Probably. No matter who you are, no matter what you have built over twenty-five years, sometimes the view from inside is the last thing you can trust. It takes something from the outside, arriving without warning and without apology, to show you what you could not see yourself. I am not ashamed of that. I am grateful for it. Because what came into focus was a return to the only thing that has ever mattered here.

But there was another layer to the tour that I did not speak about publicly at the time. I have wanted to move Alinea in a specific direction for nearly ten years, and the tour gave me a place to hide and test it quietly, without announcement, without the weight of expectation that comes with doing it at home.

Turning a battleship at full speed is not a simple thing. Alinea at full operation is not a vessel that changes course quickly or cheaply. The staff, the infrastructure, the nightly weight of expectation, all of it working against any sudden shift in direction. The residencies solved that problem. Month-long commitments, purpose-built to absorb the cost of construction and build-out, spaces designed for the kind of environmental production that a permanent restaurant running seven nights a week simply cannot accommodate. We could build something, feel it, and move on. No permanent consequences. Just information.

Brooklyn and Beverly Hills were different from the other stops. Miami, Las Vegas, Tokyo, those were tasting menu progressions, classic Alinea in new rooms. Olmsted and the Maybourne were where my creative approach shifted entirely. Instead of beginning with technique and dish ideas, I wrote the experience first, as a play or a film, with acts, emotional arcs, and environmental shifts. The food came after, almost in support of each act rather than the other way around. The guest was not a spectator. They were inside the story.

who attended the Olmsted dinner, noted that walking in, she was immediately reminded of a conversation we had fifteen years ago, when I had come to New York obsessively visiting Sleep No More, trying to understand how to adapt its theatrical ideas for a restaurant. She saw exactly what I had been working toward. She just didn’t know I was still working toward it.

I wanted to see how it felt. For me, for the team, for the guests in those rooms. That litmus test told me everything I needed to know.

The food is entirely new. Every dish. This started in December. Four months of R&D. Serviceware sourced and procured from places we had never looked before. Countless hours of training. We are not refining what we had. We are building a new language, new materials, new forms, new emotional logic. Some of it will land immediately. Some of it will take time. Some of it will miss entirely and teach us something we couldn’t have learned any other way.

Alinea turns 21 on May 4th. On our anniversary, the Gallery is evolving beyond what it has been, into something closer to what it always wanted to be. The experience will unfold through distinct acts, each with its own emotional register and its own relationship among the guest, the space, the objects, and the sequence. The environment itself is narrative. The room is telling the story as much as anything on the plate. We have been building toward this for years, but we are still at the beginning. ¶
