Cookie butter is one of my favorite flavors in the fall, and this no bake cookie butter cheesecake is one of the most requested desserts I bring to any party!

No oven, no baking, no stress. Layers of Biscoff cookies and a creamy cheesecake pudding filling topped with melted cookie butter and crumbled cookies, covered and left in the refrigerator overnight to do its thing. By the time you pull it out, the cookies have softened into these incredible cake-like layers and the whole thing slices up clean and beautiful. It tastes like a cookie butter dream and it could not be easier to make!

• Zero baking required. Everything goes into a 9x13 dish, gets covered, and the refrigerator handles the rest.

INGREDIENTS

• 2 8.8 oz Biscoff cookie sleeves

• 13.4 oz Biscoff cookie butter

• 2 cups cold whole milk

• 1 3.4 oz dry jello cheesecake mix

• 1 teaspoon vanilla

• 8 oz cool whip refrigerated

INSTRUCTIONS

• In a large mixing bowl, combine the Jello cheesecake pudding mix and cold whole milk as directed on the box. Stir until the mixture reaches a thickened consistency.

• Add the softened Cool Whip and fold gently into the pudding mixture until fully combined. Stir in the vanilla extract.

• Lay one sleeve of Biscoff cookies in an even layer across the bottom of a 9x13 casserole dish.

• Spread half the cheesecake mixture evenly over the cookie layer.

• Add a second even layer of Biscoff cookies over the cheesecake mixture.

• Spread the remaining cheesecake mixture evenly over the top.

• Add the entire jar of cookie butter to a microwave-safe bowl. Microwave in 15 to 20 second increments, stirring between each, until completely melted and pourable.

• Pour the melted cookie butter over the top layer of cheesecake mixture and spread evenly with a spatula.

• Crumble extra Biscoff cookies over the top. Cover tightly with foil and refrigerate for a minimum of 6 to 8 hours - overnight is even better.

TIPS & TRICKS

• The longer this sits in the refrigerator the better. Overnight is the move if you can wait.

• The cookies soften into these incredible cake-like layers and the whole thing sets up beautifully.

• Heat the cookie butter in short increments and stir between each one. It can go from perfectly melted to too hot very fast and scorched cookie butter is a sad thing.

• Make sure the Cool Whip is refrigerated and softened - not frozen.

• Frozen Cool Whip doesn’t fold smoothly into the pudding and you’ll end up with lumps.

• This feeds a crowd from one dish and it gets better every day it sits in the fridge.

• Make it ahead without any guilt.

How is it already time to go back to school? I feel like this summer has truly flown by. Between summer vacations, holiday parties, and endless fun, it’s really flown by. I’m not quite ready for the summer to end, but I do know that having an easy dinner to make for my family to make the evenings go smoother is a must!

As a mom, I love being able to create fun and easy recipes in my kitchen to share with everyone, and this recipe is no different! Right now, I’m in a season of life where my days are very busy, and sometimes overwhelming, but being able to make a delicious and affordable dinner my whole family will love is one of my favorite things to do.

This chicken fajita casserole takes everything you love about fajita night and bakes it into one dish with almost no hands-on work. Taco-seasoned chicken, rice, bell peppers, green chiles, and salsa all go into a 9x13 dish together and bake covered until everything is cooked through and the rice has absorbed all that flavor, then topped with freshly shredded Colby Jack and broiled until melted and slightly bubbly. Serve it straight from the dish with queso, sour cream, cilantro, or tortillas for a complete Tex-Mex dinner the whole family gets excited about.

Why We Love This Recipe

Everything goes into one dish raw and comes out fully cooked, sauced, and cheesy 45 minutes later. This is genuinely one of the easiest weeknight dinners in any rotation.

The rice cooks directly in the bone broth, salsa, and green chile liquid and absorbs every bit of Tex-Mex flavor during the bake without any separate pot required.

EASY CREAMY MARRY ME SAUSAGE GNOCCHI

I always love making an easy, one-pan meal for those busy weeknights with my family. Made with savory chicken sausage, sun-dried tomatoes, fresh spinach, parmesan cheese, and a creamy sauce, this Tuscan-inspired dinner is packed with flavor and comes together in just one pan. Its so simple to make, and one of those dinners I love to keep on the rotation when I'm craving a good, comfort meal.

WHY YOU’LL LOVE THIS ONE PAN MARRY ME SAUSAGE GNOCCHI

Quick & Easy: This easy, one pan meal takes less than 30 minutes to make. Which makes it a delicious option for those busy weeknights.

Family-Friendly: The flavors of the sun-dried tomatoes, spinach, gnocchi, and chicken sausage is one of our family favorites. This dish is mild enough for kids to enjoy, but you can easily add extra heat with crushed red pepper flakes.

One Pan: All the ingredients are made in one pan, which makes it so simple to make! Plus, it means less dishes to clean up after, which is always a win.

INGREDIENTS

• 4 Aidells Italian Style Chicken Sausages sliced

• 16 oz dry potato gnocchi

• 1 cup chicken stock

• 1 cup heavy whipping cream

• ⅓ cup grated parmesan cheese

• handful fresh chopped spinach

• ⅓ cup sun dried tomatoes

• salt & pepper to taste

• 1 teaspoon garlic powder

• 1 teaspoon onion powder

• 1 teaspoon italian seasoning

• crushed red pepper optional

• 1 tablespoon minced garlic

• 1 tablespoon sun dried tomato oil

• 1 tablespoon tomato paste

• 2 tablespoon salted butter

DIRECTIONS

• First, slice chicken sausage into preferred pieces. I recommend slices sausages in half then cut into ½ inch wide pieces to improve cooking time.

• Next in a large skillet on medium heat, add 1 tablespoon sun dried tomato oil to pan.

• Add chicken sausage to pan and cook until browned.

• Once the chicken sausage has been cooked, remove from pan and set aside.

• Turn heat down to low/medium and then add 2 tablespoon salted butter to pan with minced garlic. Add dry gnochhi to pan and cook for 4-6 minutes until the melted butter has an even coat on the gnocchi.

• Once gnocchi is cooked, turn heat down to low, add cooked sausage back into pan, sun dried tomatoes, chicken broth, seasonings, tomato paste, and heavy cream.

• Stir until well combined.

• Next, add grated parmesan cheese, and chopped spinach. Let it simmer for additional 10 minutes to enhance the flavors.

• Serve and enjoy

• ¼ teaspoon garlic powder

• 1 teaspoon chili lime seasoning

• small handful cilantro

• small handful cojita or queso fresco cheese

Summertime is quickly approaching, which means all the delicious summer pasta salads! We are starting off strong with one of my favorites, Hot Honey Pizza Pasta Salad. This is one of those pasta salads I can have on repeat, and never get tired of.

One of my favorite foods of all time is pizza! Plus, when you drizzle hot honey on top, it makes it that much better! Pasta salads are one of my favorite high protein lunch options that I like to make during the summer, because its filling, customizable, and full of flavor!

Perfect to make for a quick and easy lunch or dinner idea for those hot days. The crispy mini pepperonis give it the perfect crunch for this delicious cold pasta. A great easy side dish to bring to your next summer holiday cookout!

INGREDIENTS

• 5 oz mini pepperonis

• 12 oz dry farafelle pasta or protein pasta

• 10 oz mozzarella pearls

• arugula

• fresh basil

• 1 cup mini cherry tomatoes

• ⅔ cup extra virgin olive oil

• ⅓ cup red wine vinegar

• ½ lemon squeezed

• 1 tablespoon minced garlic

• 1 teaspoon oregano

• 1 teaspoon italian seasoning

• 1 teaspoon garlic powder

• ½ teaspoon crushed red pepper

• 1 teaspoon onion powder

• 1 tablespoon hot honey

• ¼ cup grated parmesan cheese

• salt & pepper to taste

HOW TO MAKE HOT HONEY PIZZA PASTA SALAD

First, cook Farafelle pasta in salted water, according to package directions. Drain in collander, and rinse with cold water to keep pasta from cooking.

Next, add mini pepperonis onto cooking tray and spread eveningly. Preheat oven to 400 degrees, cook pepperonis for 5-7 minutes or until crisp. Once pepperoni is crisp, remove from tray and place on plate with paper towel to drain excess grease.

Combine seasonings, red wine vinegar, olive oil, hot honey, ½ lemon squeezed, and parmesan cheese into mixing bowl.

In a large mixing bowl, add cooked pasta to bottom of bowl. Next add mozzarella pearls, cooked mini pepperonis, arugula, basil, cherry tomatoes, and drizzle dressing over pasta salad.

TIPS & TRICKS

Pasta: When cooking pasta, it is best not to overcook the pasta to prevent it from being mushy. Ideally, you do not want to run cold water over cooked pasta. However, for pasta salads, it is best to run cold water over the pasta to stop the cooking process.

Serving: This hot honey pizza pasta salad can be served cold or at room temperature. However, I do not recommend leaving it out of refrigerator for extended period of time. Leftovers can be stored in an airtight container in the refrigerator for 3-4 days.

Hot Honey: If you do not like the spice of the hot honey, you can omit it and continue to make it as directed.
