Every component is simple on its own, but together they create a meal that people remember long after dinner is over.</p><p>The lemon and ginger bring freshness to the chicken. The coconut rice adds just enough richness to balance the citrus. The mango pineapple salsa adds brightness and texture, while the Sriracha mayo ties everything together into the perfect bite.</p><p>What I love most about this meal is just how simple it really is. The marinade is made with only six ingredients. The coconut rice comes together with four. The salsa is just fresh fruit, onion, cilantro, lime, and a pinch of salt. The Sriracha mayo? Three ingredients.</p><p>It doesn&#8217;t get much simpler than that.</p><p>And yet, when everything comes together, it packs an incredible punch of flavor.</p><p>It&#8217;s naturally gluten-free, dairy-free, colorful, nourishing, and one of those meals that always leaves people asking for the recipe.</p><p>Whenever I serve this, I always tell people the same thing:</p><p><strong>Don&#8217;t skip the salsa.</strong></p><p><strong>Don&#8217;t skip the Sriracha mayo.</strong></p><p>The magic happens when everything comes together.</p><div><hr></div><p><strong>Lemon Ginger Chicken</strong></p><p>Serves approximately 6&#8211;8</p><p><strong>Prep:</strong> 30 minutes (plus marinade time)<br><strong>Cook:</strong> 25 minutes<br><strong>Total:</strong> ~1 hour (not including marinating)</p><div><hr></div><p><strong>Lemon Ginger Chicken</strong></p><p><strong>Ingredients </strong></p><ul><li><p>3&#8211;4 pounds boneless, skinless chicken breasts (I prefer organic or locally farm-raised whenever possible.)</p></li><li><p>2 tablespoons fresh ginger, zested</p></li><li><p>Zest of 2 lemons</p></li><li><p>&#189; cup fresh lemon juice</p></li><li><p>&#188; cup honey</p></li><li><p>2 tablespoons tamari</p></li><li><p>2 tablespoons olive oil</p><p></p></li></ul><p><strong>Method</strong></p><p><strong>Marinate the Chicken</strong></p><ul><li><p>In a bowl or zip-top bag, whisk together ginger, lemon zest and juice, honey, soy sauce, and olive oil. y2="14"></line></svg></button></div></div></div></a></figure></div><p>When I first started hosting, I thought hospitality was something you could get right.</p><p>I believed if the napkins were folded well enough, if the flowers were arranged just so, if dinner came out of the kitchen at exactly the right moment, people would feel taken care of. I spent a lot of energy on the surface of things. I thought the surface was the point.</p><p>It took me years to understand that I had it backwards.</p><p>The meals people remember from Mountainside are almost never the ones where everything went to plan. They&#8217;re the ones where the conversation ran long and the coffee went cold and nobody minded. The ones where someone laughed until they cried at the end of the table. The ones where a guest who arrived carrying the whole weight of their year finally set it down, somewhere between the bread and the second glass of wine, and let themselves be somewhere.</p><p>I&#8217;ve come to believe hospitality has very little to do with perfection.</p><p>It&#8217;s presence. It&#8217;s paying attention.</p><p>It&#8217;s remembering that someone takes their coffee black before they have to ask. It&#8217;s noticing when a person at the table has gone quiet, and knowing whether they need you to draw them back in or leave them be. It&#8217;s lingering a little longer because the conversation is too good to interrupt, even though there are dishes waiting and the morning will come early.</p><p>Real hospitality is a kind of listening. Not just to what people say, but to what they need and can&#8217;t quite name. Most of the people who come here are tired in a way that sleep doesn&#8217;t fix. They&#8217;ve been the ones holding everything together for so long that being cared for feels almost unfamiliar. My work isn&#8217;t to impress them. It&#8217;s to make it safe for them to stop performing.</p><p>That&#8217;s why I&#8217;ve stopped chasing flawless.</p><p>Flawless keeps you in the kitchen, fussing, while your guests sit without you. Flawless is really about the host, not the guest. The moment I let go of it, I became a better host, because I was finally in the room. I was pouring the wine and hearing the story instead of worrying about the plating.</p><p>The table is where all of this lives for me.</p><p>There&#8217;s a reason I build everything here around a shared table. Something happens when people eat together slowly, with no clock and nowhere else to be. Shoulders come down from around ears. Voices soften. People tell you the true thing instead of the polite thing. I&#8217;ve watched near-strangers become the kind of friends who still text each other a year later, and it started with passing a dish and staying a while.</p><p>I think that&#8217;s what people actually carry home. Not the room they stayed in, or the view outside the window, or even the meal, though I hope the meal was wonderful. What they carry home is the feeling of having been genuinely cared for. For a little while, there was nowhere else they needed to be, and someone made sure of it.</p><p>If there&#8217;s a philosophy underneath all of this, it&#8217;s a simple one. Hospitality isn&#8217;t a performance you deliver to people. It&#8217;s an attention you offer them. You can practice it anywhere, at any table, with folded napkins or without. Most of the time they lean too sweet for my taste. But these bars are something completely different.</p><p>As they bake, the blueberries transform into something that feels more like a homemade blueberry jam than a traditional fruit filling. The natural tartness of the berries balances perfectly with the buttery crumble, creating a dessert that feels rich without being overly sweet.</p><p>Like all of my desserts, this recipe is naturally gluten-free using my preferred gluten-free flour blend. It can also easily be made dairy-free by substituting a quality vegan butter, and honestly, it tastes just as delicious.</p><p>It&#8217;s one of those recipes that disappears quickly at the table and somehow tastes even better the next morning with a hot cup of coffee.</p><p>Simple ingredients. Simple preparation. Alive.</p><div><hr></div><p>And I can&#8217;t help it &#8212; it makes me happy.</p><p>Not in a passing way.</p><p>In a deeper, quieter way that&#8217;s hard to explain&#8230; unless you&#8217;ve felt it too.</p><p>Because I know what&#8217;s coming next.</p><div><hr></div><p>I get to take all of it &#8212; all of those simple ingredients &#8212; and turn them into something.</p><p>Not complicated.</p><p>Just intentional.</p><div><hr></div><p>My day started early.</p><p>I pulled a loaf of sourdough I had cold-proofed for 120 hours and baked it first thing in the morning &#8212; my longest proof yet.</p><p>Then I headed to the store.</p><p>Then back home to grab a few things I always bring with me &#8212; my knife, my apron, the bread.</p><p>And then to my friend&#8217;s house to start cooking.</p><div><hr></div><p>When I unpacked everything onto the counter, I had that moment again.</p><p>Just standing there, looking at it.</p><p>All the color.<br>All the texture.</p><p>It never gets old.</p><div><hr></div><p>We kept the food simple.</p><p>Homemade hummus with a crudit&#233; &#8212; carrots, radishes, broccoli.</p><p>A roasted tomato and burrata dip with fresh sourdough.</p><p>Vegetable skewers, olive oil, salt, pepper &#8212; nothing more.</p><p>Yogurt-marinated chicken.</p><p>Lemon butter orzo with parsley and a little feta.</p><p>And for dessert, a scratch-made gluten-free brownie with a pistachio crumble.</p><div><hr></div><p>Nothing overly complicated.</p><p>But everything made from something real.</p><div><hr></div><p>And one of my favorite parts of the night was watching the younger kids at the table.</p><p>The ones heading off to college.</p><p>Every time I would say what we were making, there was this little hesitation &#8212; like they didn&#8217;t quite recognize it.</p><p>A slight turn of the nose.<br>A quiet uncertainty.</p><p>Which I&#8217;ve come to expect.</p><p>Because when something is unfamiliar, it can feel that way at first.</p><div><hr></div><p>But then at the end of the meal, I always ask:</p><p>&#8220;On a scale of 1 to 10, how was it?&#8221;</p><p>And without fail, the answers come back the same.</p><p>&#8220;A 13.&#8221;<br>&#8220;That was insane.&#8221;<br>&#8220;I don&#8217;t even know what was in that, but it was the best thing I&#8217;ve ever eaten.&#8221;</p><div><hr></div><p>And I always smile a little.</p><p>Because most of the time, it&#8217;s three ingredients. Maybe four.</p><p>Nothing complicated.</p><p>Just simple things, put together in a way that works.</p><div><hr></div><p>And somewhere in the middle of it all, something else stands out.</p><p>The table itself.</p><div><hr></div><p>There were all kinds of people there.</p><p>Young adults.<br>Kids heading off to college.<br>Parents who are used to cooking for others.</p><p>Different rhythms, different lives &#8212; all sitting down in the same place.</p><div><hr></div><p>My girlfriend always jokes that I&#8217;m &#8220;bougie.&#8221;</p><p>That I cook a certain way, set a certain kind of table.</p><p>And maybe that&#8217;s true from the outside.</p><p>But it&#8217;s never been about making something feel elevated.</p><p>It&#8217;s about creating a space where people can come, sit, and just be.</p><div><hr></div><p>A few weeks ago, I had cooked for her husband&#8217;s birthday.</p><p>And after that, she told people about it.</p><p>So this time, everyone pitched in. They bought the groceries. They showed up.</p><p>And then they just kept asking:</p><p>&#8220;What are we eating next?&#8221;</p><div><hr></div><p>That&#8217;s my favorite part.</p><p>Not the perfection of the meal.<br>Not the presentation.</p><p>But the curiosity. The excitement. Three components, neatly organized, as if balance could be reduced to a formula.</p><p>And for a while, that framework feels helpful.</p><p>It gives structure.<br>It gives clarity.<br>It tells you you&#8217;re doing it &#8220;right.&#8221;</p><p>But somewhere along the way, I started asking a different question.</p><p>Not <em>&#8220;Is this balanced?&#8221;</em></p><p>But:</p><p><em>What are we actually eating?</em></p><div><hr></div><p>Because the truth is, we&#8217;ve layered so many rules onto food.</p><p>Macros.<br>Micros.<br>Portion sizes.<br>&#8220;Eat this, not that.&#8221;</p><p>And support the body.</p><div><hr></div><p>When I cook, I don&#8217;t think in extremes.</p><p>I&#8217;m not measuring out exact ounces or trying to hit perfect ratios.</p><p>I&#8217;m looking at the food itself.</p><p>Is it real?<br>Is it recognizable?<br>Does it feel like something that came from the earth &#8212; not a factory?</p><div><hr></div><p>Over time, I&#8217;ve realized that balance has less to do with categories, and more to do with quality.</p><p>A plate of food made from whole ingredients, prepared simply, will almost always feel different than something processed or packaged.</p><p>Not because of rules.</p><p>But because your body recognizes it.</p><div><hr></div><p>And this is where it gets interesting.</p><p>Because food is also emotional.</p><p>What we grow up eating becomes familiar.<br>What&#8217;s familiar becomes comforting.</p><p>So if someone is used to fast, packaged food &#8212; that becomes their baseline.</p><p>Not because it&#8217;s better.</p><p>But because it&#8217;s known.</p><div><hr></div><p>And then one day, you put something simple in front of them.</p><p>Roasted carrots.<br>Fresh herbs.<br>A plate that hasn&#8217;t been altered beyond recognition.</p><p>And it feels unfamiliar.</p><p>Not because it&#8217;s complicated.</p><p>But because it&#8217;s real.</p><div><hr></div><p>That shift &#8212; from processed to real &#8212; is where everything changes.</p><p>Not overnight.<br>Not perfectly.</p><p>But gradually.</p><div><hr></div><p>For me, cooking has become less about following rules, and more about returning to something simpler.</p><p>Fewer ingredients.<br>More intention.<br>Food that feels like it came from somewhere &#8212; not something.</p><div><hr></div><p>And when you start there, something They struggle with <em>putting a meal together</em>. Balancing richness with brightness. Knowing what complements what. Understanding how a plate actually comes together.</p><p>This is one of those meals that does that work for you.</p><p>It&#8217;s something we make regularly in our home &#8212; easily once a month &#8212; because it hits that balance. It can feel like an everyday dinner, or something you&#8217;d serve when people are gathered around your table.</p><p>The pork tenderloin gives you richness without the heaviness (and without the price tag of something like a beef tenderloin). The roasted carrot salad brings brightness and texture. And the Hasselback potatoes ground everything &#8212; warm, herb-forward, and deeply satisfying.</p><p>It&#8217;s a complete plate.</p><p>And one of my favorites to serve.</p><p>If I have someone at the table who doesn&#8217;t eat meat, I&#8217;ll often make a stuffed portobello mushroom and top it with the same macadamia herb crust. It gives them the same experience &#8212; the same flavors &#8212; just in a different form.</p><p>That&#8217;s always the goal for me.</p><p>Not separate dishes &#8212; but a meal that works processor and pulse <strong>2&#8211;3 times at a time</strong>, checking in between. Work in smaller batches if needed. You&#8217;re looking for a loose, chunky texture &#8212; not a fine crumb, and definitely not a paste.</p><p>Transfer to a shallow dish and mix in the parsley, rosemary, and thyme.</p><p>Rinse the pork tenderloins and pat dry thoroughly.</p><p>Coat each tenderloin generously with Dijon mustard.</p><p>Roll in the macadamia herb mixture, pressing gently so the coating adheres well on all sides.</p><p>Place on a parchment-lined baking sheet.</p><p>Roast for <strong>20&#8211;25 minutes</strong>, or until the internal temperature reaches <strong>145&#176;F</strong> at the thickest part.</p><p>Remove from oven and let rest for <strong>5&#8211;10 minutes</strong> before slicing.</p><p>Slice into thick pieces.</p><div><hr></div><p><strong>Chef&#8217;s Notes</strong></p><ul><li><p>Pulse the macadamia nuts carefully &#8212; they should stay chunky. Some pieces can be larger, even about the size of the tip of your pinky.</p></li><li><p>Be careful not to overprocess &#8212; macadamia nuts will turn into a paste quickly.</p></li><li><p>The Dijon acts as both flavor and binder.</p></li><li><p>The crust should taste <strong>well-seasoned on its own</strong>. Pork is mild, so this is where the flavor is built.</p></li><li><p>If it tastes slightly salty on its own, that&#8217;s right &#8212; it balances once cooked.</p></li><li><p>Always temp at the thickest part and let the meat rest before slicing.</p></li></ul><div><hr></div><p><strong>To Serve</strong></p><p>Serve whole for a family-style presentation, or plate individually.</p><p>I typically serve <strong>two thick slices per person</strong>.</p><div><hr></div>

Remove from the oven and let cool until no longer hot &#8212; closer to room temperature.</p></li><li><p><strong>Prep the vegetables and herbs.</strong><br>Slice baby cucumbers on a mandolin using a thicker setting &#8212; you want them thin enough to be pleasant, but thick enough to hold their crunch. Dice green onions. Chop fresh dill and parsley. Set aside.</p></li><li><p><strong>Make the dressing.</strong><br>Add all dressing ingredients to a Ninja or high-speed blender. Blend until smooth and fully combined. No need to mince the garlic &#8212; the blender does the work.</p></li><li><p><strong>Assemble (but don&#8217;t mix yet).</strong><br>Transfer cooled potatoes to a large wooden or ceramic salad bowl. Add cucumbers, green onions, pistachios, and herbs. Cover and let sit without mixing.</p></li><li><p><strong>Finish just before serving.</strong><br>Right before serving, gently toss the potatoes, cucumbers, green onions, pistachios, and herbs together <em>without</em> the dressing first. This allows the residual olive oil on the potatoes to grab onto the herbs and distribute everything evenly.</p></li></ol><p>Once everything is lightly combined, add the dressing a little at a time, tossing gently to coat rather than pouring it on all at once. Taste as you go, adding just enough dressing until the flavor feels balanced and right to you.</p><p>This layered approach makes all the difference &#8212; it keeps the herbs from clumping, preserves texture, and allows each ingredient to stay distinct. It&#8217;s meant to be torn apart slowly, eaten with coffee, and shared through morning conversation before the day really begins.</p><p>That moment matters to me. It sets the tone. I use them for:</p><ul><li><p>oatmeal</p></li><li><p>cookies</p></li><li><p>dressings</p></li><li><p>marinades</p></li><li><p>homemade creamer</p></li></ul><p>They add sweetness without feeling heavy or artificial.</p><div><hr></div><p><strong>Fresh Parsley</strong></p><p><em>Italian, always.</em></p><p>I&#8217;m partial to <strong>Italian parsley</strong> and finish many dishes with it &#8212; soups, grains, vegetables, and proteins. It adds brightness and freshness right at the end, which makes food feel more intentional with very little effort.</p><div><hr></div><p><strong>Spices I Use on Repeat</strong></p><p>I keep my spice drawer simple and organic.
