It has the crisp vegetables and fresh herbs for that summer vibe, but also includes plenty of beans and chickpeas to make it hearty and substantial. And then it all comes together with an easy homemade vinaigrette.</p><p>This salad works on its own as a light meal, but is also perfect for serving with some end-of-summer grilled chicken or your favorite burger. I think the holidays got the best of me, and time just flew by in a haze of lights, cookies, and hot cocoa. </p><p>But here we are now in the middle of February, and the hush of these late winter days always feels like a pause to me.</p><p>The rush of the holidays has settled, the garden is still resting, and the days, while slowly getting longer, still invite us to stay tucked in close to home. It&#8217;s a quieter stretch of the calendar, and I&#8217;ve learned over the years not to rush it along.</p><p>Truth be told, winter isn&#8217;t my favorite season. I could easily fall into a funk this time of year.</p><p>Instead, I&#8217;m trying to encourage myself to lean into the slower rhythm of it all.</p><p>More soups on the stove.<br>More baking just because.<br>More appreciation for the everyday work of keeping a home running.</p><p>The kind of work that isn&#8217;t flashy&#8230; but feels important and necessary all the same</p><p>Also, this week I pulled my grain mill back out, and I&#8217;d forgotten just how much I love using it.</p><p>There&#8217;s something so satisfying about pouring whole grains into the hopper and watching them turn into warm, fragrant, full-of-life flour. The smell alone is enough to make you want to bake something on the spot.</p><p>It makes even the simplest recipes feel special.</p><p>I&#8217;m still experimenting with freshly-milled flour. Nothing fancy. But it has me thinking about sharing more freshly-milled flour recipes in the coming weeks. Just good, dependable staples to start:</p><p>Biscuits.<br>Pancakes.<br>Everyday sandwich bread.</p><p>Simple, hearty fare. The kind of foods that have nourished families for generations. And I&#8217;ve been cooking long enough to know that often what I&#8217;m craving isn&#8217;t more butter or salt. What&#8217;s needed is a bright pop of something tangy to wake everything up. And that&#8217;s exactly where quick pickles come in.</p><p>I can&#8217;t take credit for this little kitchen trick. I learned it long ago from my grandma, who always had a jar of something pickled tucked away. I rediscovered them one day when plans for that evening&#8217;s dinner were feeling totally uninspired. Grilled chicken again, plain rice again&#8230;and then I spotted a bag of radishes starting to wilt in the crisper. Into the brine they went, and suddenly that &#8220;meh&#8221; dinner was transformed into something I actually wanted to eat.</p><p>The best part is, quick pickles don&#8217;t need fussing or planning. They&#8217;re as forgiving as an old friend. Cucumbers are the classic, of course, but radishes, carrots, red onions, green beans - even cherry tomatoes and cauliflower - all shine with a quick dunk in vinegar. If it&#8217;s crisp and fresh enough to eat raw, chances are it will pickle beautifully.</p><p>The basic formula is simple: for every cup of vegetables, use &#189; cup vinegar (with 5% acidity), &#189; cup water, 1 tablespoon sugar, and 1 teaspoon salt. Bring the brine just to a boil, stirring until the sugar and salt dissolve. Pour it over your sliced vegetables (carefully - it&#8217;s hot!) and  let them sit for 15 minutes before enjoying. That&#8217;s it! Once cooled to room temperature, cover and store in the fridge, where they&#8217;ll keep for weeks (if they last that long!).</p><p>And here&#8217;s where it gets fun: mixing different combinations of vegetables. A few of my favorite combinations:</p><ul><li><p><strong>Radishes + Carrots</strong>: The peppery bite of radish mellowed by the sweetness of carrot (and so pretty in the jar).</p></li><li><p><strong>Red Onions + Jalape&#241;os</strong>: Spicy, tangy, and perfect for tacos.</p></li><li><p><strong>Green Beans + Cauliflower</strong>: A crunchy duo that looks like something straight off a farmhouse table.</p></li><li><p><strong>Cucumber + Dill + Garlic</strong>: Because sometimes you just need that classic deli crunch.</p></li></ul><p>While these pickles are perfect on burgers or tucked into sandwiches, don&#8217;t stop there. I toss them into grain salads, scatter them next to cheese and crackers, even chop them into scrambled eggs. More often than I care to admit, I stand at the counter with a fork and sneak them right from the jar.</p><p>So the next time you find something languishing in the vegetable drawer, give it a second chance in a quick brine. It&#8217;s the simplest kitchen magic: in just a few minutes, you&#8217;ll have a tangy little sidekick that makes the everyday table sparkle.</p><div class="captioned-image-container"><figure><a Also, add any herbs or spices if using. </p></li><li><p>In a saucepan, combine vinegar, water, sugar, and salt. Bring to a boil, stirring until everything is fully dissolved.</p></li><li><p>Pour hot brine over the vegetables, making sure they&#8217;re submerged. Tasty in 15 minutes; even better after a few hours. </p></li></ol><p><strong>Storage:</strong> Keeps for several weeks in the fridge. Signs</h3><p>Where I live, the seasons rarely turn all at once (is it the same where you are?). I find the seasons here, particularly fall, slip in quietly, almost slyly, until I suddenly realize I&#8217;ve stepped right into the new season. For me, the first sign is always the light. One day it&#8217;s bright and sharp, casting shadows straight down, and the next it&#8217;s softened into that golden slant that makes even the simplest things on the kitchen table look like an old oil painting. It&#8217;s that shift in color and angle that tells me fall has truly arrived, even before the air cools.</p><p>Then come the scents and sounds. The faint curl of woodsmoke drifting from a neighbor&#8217;s chimney, the rustle of dry leaves skittering across the porch, and lately, the distant honk of geese moving south. These are the calls to action for my homesteader&#8217;s heart, the cues that it&#8217;s time to settle into slow-cooked suppers, look forward to the bounty of my fall garden, and to the quiet evenings of the season.</p><p>Not all the signs are natural or old-fashioned, of course. These days, some folks know the seasons have turned the moment the first Pumpkin Spice Latte appears on the menu board (I admit, I do love a good PSL), or when the stores line their shelves with cinnamon brooms and caramel-apple-scented candles (I love this, too. My husband? Not so much). And while those markers may not be timeless, they&#8217;ve become their own modern shorthand for autumn. A kind of collective nod that we&#8217;re all ready to cozy up again.</p><p>No matter if it&#8217;s the slant of light, the smoke in the air, or the coffee cup in your hand, the message is the same: the season has begun to turn. These early signs ask us to pay attention. Not just to the world outside, but to the ways we live inside of it. Because once upon a time, those shifts weren&#8217;t just pleasant observations; they were instructions, guiding how people worked, ate, and gathered as the year moved forward.</p><div The first chilly night meant the last of the beans had to be picked, or else they&#8217;d be lost. Shorter days told families to stack more wood, to make sure the lamp oil and candles were ready, and to start preparing heartier meals that could carry them through the nights growing ever longer. The natural world acted like a clock, marking out the tasks that kept a household fed and warm.</p><p>Today, those cues are easier to ignore. Electric lights blur the difference between long summer days and the short, dim hours of November. Climate control keeps our homes at the same temperature whether it&#8217;s snowing or sweltering outside. Grocery stores offer strawberries in January, asparagus in October, and bagged lettuce all year long. In gaining the ability to have anything at any time, we&#8217;ve lost the instinct to notice what belongs to this season and this season only.</p><p>And yet, when we don&#8217;t notice, we lose something more than practical knowledge. We lose rhythm. The cadence that once guided us gently through our days slips away. Instead of leaning into cozy fall suppers or the light meals of spring, we find one day, one season, blurring into the next.</p><p>Do you remember being a child and feeling like every season was distinct and magical? </p><p>When we lose our rhythm, we lose our way. Nothing feels magical. One season is like the next, and our days fly by in a hurry to go nowhere.</p><p>That&#8217;s why I think so many of us feel hungry. Not so much for food, but for something elusive we can&#8217;t quite put our finger on. There&#8217;s a touch of nostalgia in it, a craving for simplicity, and a deep longing for life to slow down. More than that, though, I think we&#8217;re missing the steadiness and constancy of living by the turn of the year. Grounds Us</h3><p>The old rhythms of the year still speak if we choose to listen. Autumn brings stews simmering on the stove, bread rising on the counter, and suppers that linger longer around the table. Winter urges us to rest and keep close, to sip hot drinks, to cook heavier meals that see us through the cold with lots of nourishment. Spring answers with tender greens, lighter broths, and a freshness that feels like relief. Summer bursts with the abundance of ripe tomatoes, corn on the cob, and cucumbers pulled straight from the vine. Our grandparents and great-grandparents leaned into these patterns not because they were romantic, but because that&#8217;s what the land offered.</p><p>But here&#8217;s the thing: we don&#8217;t have to abandon modern conveniences to keep these rhythms alive. Grocery stores and central heating may have changed the way we live, but the natural patterns of the year can still ground us, even in small ways. Maybe it&#8217;s the shift from iced tea in July to spiced cider in October. Or swapping out a summer salad for a steaming potato dish when the nights turn cool. It can be as simple as baking bread once the windows are closed for the season, or roasting vegetables on a fall weeknight instead of reaching for something from a drive-thru.</p><p>Blending the old with the new doesn&#8217;t mean giving up the conveniences we&#8217;ve come to rely on. It means choosing them more intentionally, so they complement rather than replace the rhythm of the year. Buy strawberries in June when they&#8217;re fragrant and sweet, but maybe pass them by in January when the season&#8217;s gifts are citrus and root vegetables. Light a candle on the dinner table, not because you need the light, but because the glow reminds you that nights are shorter and slower now.</p><p>When we live in step with the seasons, even in little ways, we gain back something we didn&#8217;t know we&#8217;d lost: a belonging to the great flow of life. The year stops feeling like a blur of workweeks and weekends, and begins to feel like a full circle that carries us forward yet also roots us in place.</p><div Home</h3><p>For me, the turning of the seasons is felt most clearly in the kitchen and the garden. In summer, my counters are crowded with tomatoes waiting to be simmered into sauce, or beans snapped into baskets for canning. But by fall, the rhythm shifts. The canner is tucked away, and out come the Dutch ovens, soup pots, and roasting pans. A flutter of a single colorful oak leaf is enough to have me craving a hearty bowl of steamy soup.</p><p>In the yard, too, the signs are plain. The herbs I&#8217;ve snipped all summer are hung in the shed to dry, their fragrance to linger long after the stems are brittle. Leaves drift down across the lawn, and I find myself raking them into little piles to go into the compost. These small chores are essential this time of year. A few simple rites that help to usher in fall. </p><p>In my kitchen, I&#8217;m ready to make all of my autumnal favorites. Come into my kitchen on a fall day and you&#8217;ll probably find a loaf of bread cooling on the counter, a pot of beans simmering gently, or something roasting in the oven until the whole house smells like supper. Nothing fancy, but rather homemade fare that brings a kind of comfort that convenience foods can never quite match. </p><p>And these meals connect me back to my mom&#8217;s and grandma&#8217;s kitchens, where the same smells and sounds filled the air at this time of year. </p><p>This is all to say, the turning of the seasons is more than a change in weather. It&#8217;s an invitation to notice, to slow down, and to find comfort in the rhythms that carried generations before us. If we let them, these quiet signs like the slant of light, the smell of woodsmoke, or the first sip of spiced cider, will guide us back home. About not measuring, not planning every bite. Just stepping outside and deciding what to cook based on what&#8217;s ripe, what&#8217;s ready, and what needs to be used up. If you like this idea, too, but you don&#8217;t have a garden of your own, no worries. You can pick up fresh summer produce easily at the farmer&#8217;s market, a roadside stand, or even your local grocery store.</p><p>These garden suppers are nothing fancy, but they feed our bellies. And they also nourish our natural rhythms by allowing us to keep in step with the seasons. These hot summer days are made for simple, fresh meals that let us slow down and take it a little bit easy. The heat on these sultry summer days almost insists on it.</p><p>If you read my blog, you know I&#8217;m a big comfort food fan. Simple, nourishing, and made with what&#8217;s fresh and ready. These are the kinds of throw-together suppers that don&#8217;t need measuring cups or a lot of fuss. Just a basket from the garden, maybe a hot skillet, and a little kitchen instinct.</p><h3><strong>Sliced Tomatoes with Bread and Butter</strong></h3><p>A meal that feels almost too simple to mention, and yet, there&#8217;s nothing quite like it. Thick-sliced garden tomatoes, a sprinkle of salt, and good bread with a thick smear of real butter or mayonnaise. If you&#8217;ve got a few boiled eggs or some cheese, you&#8217;ve got a feast.</p><h3><strong>Green Beans with Onions and Potatoes</strong></h3><p>Pick a mess of green beans and cook them low and slow in the crockpot with a chopped onion and a bit of fat. Bacon grease if you&#8217;ve got it (and let&#8217;s be honest, you <em>do</em> have some bacon grease, right?). If not, or if you're keeping it meatless, a splash of olive oil will do just fine. Toss in a few sliced potatoes to make it a full meal. Add a little water or broth. Everything gets tender and flavorful, just the way your granny might&#8217;ve made it.</p><h3><strong>Zucchini or Yellow Squash in a Skillet</strong></h3><p>Sliced thin and browned in butter with a little onion or garlic and some salt and pepper. That&#8217;s it. Maybe top with a grating of cheese or a handful of herbs if you&#8217;re feeling fancy. It&#8217;s a filling meal when paired with cornbread or alongside some eggs.</p><h3><strong>Fried Green Tomatoes</strong></h3><p>If your tomatoes are still firm and green, slice them, dredge in cornmeal (or a mix of flour and cornmeal), and fry until golden. A plate of these with a piece of ham, a biscuit, or some grilled chicken is plenty a meal for me on a hot day.</p><h3><strong>Corn on the Cob and Sliced Tomato Plates</strong></h3><p>A supper so simple it almost feels like cheating. But somehow, it always hits the spot. Just boil or grill a few ears of sweet corn and serve them alongside thick-sliced garden tomatoes. Slather the corn with lots of butter and sprinkle the tomatoes with a little salt and a generous amount of pepper. If you have some handy, a few torn basil leaves give some extra garden-fresh flavor. Add a wedge of sharp cheese or a hard-boiled egg, and you&#8217;ve got yourself a plate full of summer.</p><h3><strong>Stuffed Summer Peppers (No-Bake Style)</strong></h3><p>Take a few fresh bell peppers, halved, and stuff them with whatever you&#8217;ve got in the fridge. Tuna salad, egg salad, cottage cheese with cracked black pepper, or even a cold bean and rice salad dressed in a little vinaigrette. Have a few crackers to round out the meal. It&#8217;s cool, colorful, and just right for a hot evening.</p><h3><strong>Taco Salad</strong></h3><p>Add some fresh greens to a bowl and top with diced tomatoes, peppers, onions, sweet corn, and some black beans. Add some cheese, sour cream, and salsa, or whatever toppings you like. I like to serve with some blue corn tortilla chips. Dinner is served!</p><h3><strong>Fruit and Cream</strong></h3><p>I can&#8217;t forget about dessert, and this one is as easy as possible. Just slice up some fresh fruit like peaches, strawberries, blueberries, or whatever&#8217;s ripe, and serve it in little bowls with a splash of cream, a spoonful of whipped cream, or a dollop of yogurt. Maybe even a crumble of shortbread or vanilla wafer cookies if you&#8217;re feeling fancy. No baking, no fuss. y2="14"></line></svg></button></div></div></div></a></figure></div><p>It&#8217;s early spring here in the foothills of the Blue Ridge, and the mountains are just starting to wake up. The redbuds are blushing along the roadside, and there&#8217;s a softness to the light that feels like a quiet promise&#8212;winter is behind us, and the garden season is calling.<br><br>This year, the land feels a little parched. We&#8217;ve had less rain than usual, and the hills have been hazy with smoke from nearby wildfires. The smoke stands in stark contrast to the riot of spring currently breaking out everywhere. It&#8217;s a sober reminder of how closely we live with the land&#8212;and how much we depend on its rhythms. Even so, I find comfort in carrying on with the spring planting, tending to the soil, and doing what I can to care for our little patch of earth.<br><br>And cabbage was one of the first things I learned to grow when we moved to these southern mountains. Over the years, it&#8217;s become one of my springtime staples. It&#8217;s easy to grow, surprisingly beautiful, and endlessly useful in the kitchen. y2="14"></line></svg></button></div></div></div></a></figure></div><h2>Growing Spring Cabbage</h2><p>Cabbage is one of those crops that loves the cool, early days of spring. While some vegetables can be fussy or finicky, cabbage is hearty and reliable&#8212;just the kind of plant you want when you're trying to ease back into the rhythm of the garden.</p><p>It prefers full sun and rich, well-drained soil. I like to start with transplants if I can find them at the local feed store or nursery, though starting from seed is always an option if you have a few extra weeks. Give them plenty of space&#8212;about 12 to 18 inches apart&#8212;and keep the soil moist (easier said than done this year, but a good layer of mulch goes a long way in helping retain moisture).</p><p>Cabbage also plays well with others. Try planting it alongside onions, dill, or chamomile&#8212;good companions that can help keep pests at bay. If you&#8217;re lucky enough to avoid the cabbage worms and loopers early on, you&#8217;ll be rewarded with firm, heavy heads in just a couple of months.</p><p>And when it comes to harvesting, I like to cut the heads while they&#8217;re still tight and crisp, before the summer heat sets in. I can turn into something delicious immediately and store the rest in the crisper drawer of the fridge, where it can last a month or two.</p><div class="captioned-image-container"><figure><a Cabbage is one of those old-fashioned vegetables that&#8217;s endlessly adaptable&#8212;whether you&#8217;re after something crisp and fresh, warm and comforting, or sweet and savory. Here are a few of my favorite ways to use it:</p><p><strong><a href="https://myhomemaderoots.com/pa-dutch-pepper-cabbage/">PA Dutch Pepper Cabbage (aka Moravian or Amish Slaw)</a></strong><br>This crisp, tangy slaw is a recipe straight from my Pennsylvania roots. It&#8217;s simple but full of bright flavor, and it makes a perfect side for springtime meals or summer cookouts. I especially love it with ham or pulled pork&#8212;it cuts the richness beautifully. And a peculiar thing worth noting here is that this vinegar-based slaw freezes well. It&#8217;s a convenient side dish to have stashed away in the freezer.</p><p><strong><a href="https://myhomemaderoots.com/braised-red-cabbage-with-pears/">Braised Red Cabbage with Pears</a></strong><br>This one feels a little bit fancy, but couldn&#8217;t be easier to make. This hearty soup is perfect for those early spring days that still carry a bit of a chill. With just a few ingredients&#8212;cabbage, noodles, onions, and butter&#8212;it&#8217;s humble but deeply satisfying. I could eat a bowl of this and call it supper any night of the week. I especially love growing heirloom vegetables&#8212;old-timey beans, juicy tomatoes, and flowers like petunias and snapdragons that remind me of my great-grandma&#8217;s garden.</p><p>Not too long ago, my husband and I packed up our lives in the Blue Ridge Mountains of North Carolina and moved just a bit down the road, to the foothills of upstate South Carolina. Our two beloved furkids rule the house, and my mama joins us from time to time. But my roots? They run deep in the Appalachian mountains of Pennsylvania. So don&#8217;t be surprised if you find me sharing a Pennsylvania Dutch shoofly pie recipe one day and a skillet of cornbread the next.</p><p>Which brings me to why I&#8217;m here. My blog, <em><a href="https://myhomemaderoots.com/">My Homemade Roots</a></em>, is where I share recipes and home and garden know-how, but there&#8217;s always this pressure to &#8220;get to the recipe&#8221; and skip the extra bits. And let&#8217;s be honest&#8212;<em>I&#8217;m a talker.</em> I come from a long line of chatters and storytellers, and sometimes I just want to ramble about how my Cherokee Purple tomatoes are faring, or why I always get a little giddy when the first frost hits, or what phase the moon is in and why that might just matter. So, this little corner of Substack? It&#8217;s where I plan to share those kinds of things. Recipes, yes. But also thoughts, musings, and whatever happens to tickle my fancy.</p><p>For now, I&#8217;ll leave you with a link to my homestyle meatloaf recipe&#8212;good and hearty, made with cracker crumbs and green bell pepper, and best baked in a cast iron skillet.
