In my opinion, it either needs to be lovely and soft or very crispy. This is a harissa aubergine caponata style type thing on a garlicky yoghurt and so for this style of aubergine I suggest dry frying it on a really high heat to get it lo&#8230;</p>

This is a really fresh crunchy one, the combination of creamy tahini goes so well with the fresh, crunchy, spicy smacked cucumber salad. It also looks really pretty!</p>
