For snacking, I did my Chocolate Chia Pudding which tastes like a dessert but in a little jar that’s perfect for grab and go. This also packs in protein and fiber and so simple to make.

Hi! Happy Thursday and end of August! I can’t believe it but also I’m SO ready for Fall. Usually I’m more of a summer last forever kind of gal but its so hot here in Austin. After a record high weekend last weekend and these morning runs continuing to get hotter and more humid, I will be welcoming cooler temps with open arms!! I also love all things spooky season and already had my eye on some new decorations too.

I hope you’ve been loving the Back to Routine series so far and found it helpful in this busy season. I love creating recipes that are good for grab and go and/or truly easy without sacrificing on taste. I have a few more coming for you so be on the lookout! Hi friends! Happy Thursday! Happy back to school if you’re in that season right now too. I know August brings craziness with summer coming to an end and school starting back up, so I’m hoping that my new Back to Routine series can be helpful for you in feeding your family these next few weeks.

In case you missed it, I’ve shared two new recipes to the blog! These Savory Protein Muffins which are SO good to have prepped for easy breakfast in the mornings. There are many ways to switch them up and I truly think will be loved by adults and kids. I also shared a classic, Baked Ground Beef and Bean Tacos which are one of my go-to’s when I don’t know what to make for dinner. I generally keep these ingredients around too so there isn’t any last minute running to the store either. I’ll be sharing these recipes either exclusively here in my meal plans or on the blog.

For this week’s plan, we have another Back to Routine recipe featuring these Blueberry Cottage Cheese Protein Muffins. I know you may be sick of hearing about cottage cheese, but trust me it makes for such a great addition into recipes (and you can’t taste it!). As someone who didn’t like cottage cheese, I now love adding it into meals and especially baked goods for the added protein. These muffins are great for grab and go in the mornings or afternoon snack/treat!

Other meals on the menu this week are another favorite that’s great to prep for the easiest breakfast. These Make Ahead Breakfast Sandwiches have been a long time favorite in my meal prep and so easy too. Tip: make a double batch and keep them in the freezer for the next week!

I also did my Italian Grinder Chicken Salad which stacks up there as one of my favorite chicken salad recipes. It’s so flavorful and so good to have ready for lunches. This is also a Substack exclusive from a previous meal plan!

Lastly, I did my Crockpot Chicken Enchilada Casserole for dinner prep. I love the crockpot and can’t wait to pull it out more in the Fall/winter. It’s especially great when you’re prepping because you can toss everything in and let it do the cooking for you.

Happy Thursday! I’ve got another meal prep coming your way today. Anyone in full swing back to school!? I know that time of year is gearing up and I’m working on getting all of the easy bite size snacks, one pan meals and kid friendly options your way. Starting with the new recipe that I’m sharing with you this week for these One Bowl High Protein Monster Cookie Snack Bites. These are some of my favorite snacks to have around during the week. Easy to pop into your mouth, take on the go and taste like a healthier treat too.

I’ve got a couple other favorites lined up on the menu this week including Curry Chicken Salad for lunch prep. Ya’ll know I love a good chicken salad and there are a bunch of recipes on my website for different kinds! This one is so good served on sourdough or with crackers for lunch during the week.

For breakfast, I’ve got my Apple Baked Oatmeal to easily reheat in the morning. I love a piece of this to top with yogurt. Once you prep this, it makes for easier mornings all week.

I also did my One Pan Ground Turkey Lasagna which makes for a hearty weeknight dinner but so simple to make too. It comes together all in one pan (does it get any better!!) and can easily be switched out for ground beef or chicken too.

Hi friends! Happy August!! I just landed at the beach for one last little summer trip before gearing up for back to school, Fall and all the things! I’m ready to ease back into a routine at home in the coming weeks. This summer has been full in the best way with moving, traveling and plenty time away from home, but I’m genuinely looking forward to slowing things down over the next few weeks and settling back into a solid routine. For me, that means getting back into a consistent meal prep (because that makes me feel prepared & feel my best!), spending more time in the kitchen, and gearing up for another marathon training cycle.

I was able to get this meal prep done before traveling this week and it was so helpful in the days leading up to going out of town. These High Protein Banana Pudding Jars are my recent obsession and I think you’ll love them!!

I also did some Make Ahead Sausage & Egg Breakfast Burritos to have for easy breakfast in the morning. These are so easy to make, perfect to reheat and pack in protein to start the day too!

For lunches, I did my Street Corn Pasta Salad and used a protein pasta to make this more satisfying for lunches! This would also be great to pair with some grilled chicken or easy protein that can be prepped too.

I made my Sheetpan Chimichurri Chicken Thighs & Veggies and paired it with rice to have for dinner and it was the best summer meal. I love all things chimichurri and this one is so good and loaded with veggies too!

Hi friends! I’ve got another meal prep coming your way! I’ve been loving these meals this week and I’m so excited for you to prep these. I have a feeling this new recipe for the High Protein Banana Pancakes may be a regular for you! These will definitely be ones that I gravitate to when I’m wanting a sweet breakfast ready. I generally find myself wanting more savory options in the morning, but these have been so satisfying! I’m trying to really focus on protein and making sure I’m getting enough of it as I get back into marathon training. You will likely see more of those recipes coming your way too!

As we get into August and back to school here soon (can’t believe it!?), I hope that this weekly meal prep plan can be a resource to you. I know I say this a lot, but taking some time during the week to prep a few things really saves so much time (and stress!) throughout the week around meal planning. It doesn’t have to be complicated and can truly work into a schedule that works best for you! Sunday, Monday, even prepping on Wednesday! All of these recipes can also easily be adjusted to feed for more depending on the size of your fam!

Happy Thursday! I hope you’re having a great week and finding ways to stay cool during this summer heat! I’m finally getting back into my normal routine after being out of town for a few days, and honestly, I’m looking forward to having a couple of weeks at home. As much as I love traveling, there’s something so refreshing about getting back into my meal prep routine. It always feels like the best reset and makes it so much easier to prioritize having healthy, homemade meals ready to go throughout the week.

I’m especially excited about this week’s new One-Pan Jalapeño Popper Chicken & Rice. I love a good one-pan meal! Not only because cleanup is so easy, but because you can pack so much flavor into one dish. They’re also some of my favorite recipes for meal prep! This one has everything I love about jalapeño poppers all combined with chicken and rice to make a filling, satisfying meal you’ll want to make again and again.

Also on this week’s meal prep plan is my Veggie Quiche, which is one of my favorite breakfasts to keep stocked in the fridge. I love serving it with sliced avocado and a little salsa for an easy, balanced breakfast that takes almost no effort during busy mornings.

For lunch or as the perfect side dish, I’m sharing my new Peach Caprese Pasta Salad. If you love pasta salads as much as I do, you’re going to love this one! It’s the perfect balance of sweet and savory, and it’s delicious on its own or topped with grilled chicken for even more protein. I also like using a protein pasta to make this salad even more satisfying and filling.

And of course, we can’t forget dessert! These No-Bake Blackberry Cheesecake Bars are such a fun summertime treat to keep in the freezer. I’ve been loving having a sweet treat prepped because I almost always want a little something after dinner, and these are the perfect way to satisfy that craving.

Hi friends! Happy Thursday! I hope you’re having a great week. I can’t believe it’s already Thursday, it feels like this week has flown by. I’m getting ready to head home for a few days, and I’m so excited to get out of Austin for a bit and spend some time with my parents.

I’ve been especially thankful for meal prep this week because it’s been one of those busy weeks where I’m constantly coming and going. Now that I’m getting back into the thick of marathon training, having meals ready to go makes such a difference. There’s nothing better than coming home from a run and having a balanced meal or snack waiting for you so you can refuel without thinking twice about it.

It’s also hard to believe we’re getting closer to the end of summer. As everyone starts settling into back-to-school routines and busier schedules, I can’t recommend meal prep enough. It truly doesn’t have to be complicated. I like to prep a breakfast, lunch, dinner, and snack each week because that’s what works best for me, but you definitely don’t have to do it all. Even prepping just one or two recipes can make your week feel so much easier. And if you’re cooking for a family, most of these recipes can easily be doubled or adjusted to fit your needs.

I’m especially excited about this week’s lineup!

For breakfast, I made Chocolate Cherry Overnight Oats, and they honestly taste like dessert for breakfast. I’m usually someone who can eat the same breakfast every day, but it’s fun to switch things up with something a little sweeter every now and then.

Lunch has been this Lemon Dill Tuna Salad, which I don’t think gets nearly enough credit. I’ve been piling it onto toasted sourdough for such an easy, satisfying lunch.

For dinner, I made my Sheet Pan Pesto Chicken & Veggies and have been serving it with rice for some extra carbs to help fuel training. I always crave pesto this time of year, and this meal is packed with protein, veggies, and everything I need after a run.

And because I’ve been loving having a little treat prepped each week, I also made these Chocolate Banana Bars. They’re incredibly simple to make and perfect to keep in the freezer for a quick dessert or afternoon snack.

Happy Thursday! I’ve got another meal prep coming your way, and I hope you all had a happy and safe Fourth of July! I can’t believe how quickly this summer is flying by! It feels like we were just kicking it off, and now we’re already settling into the middle of July.

After a fun holiday weekend, it feels good to get back into a routine, and this week’s meal prep has been exactly what I needed. As I start easing back into training, I’ve been focusing on fueling well after my runs and workouts, and these recipes have made that so much easier.

First up are my Green Chile Chicken Enchiladas, and this is a brand-new recipe for y’all! Enchiladas are honestly one of my favorite meals to prep because I swear they taste even better the next day. This version is super simple, packed with flavor, high in protein, and the ultimate comforting dinner.

For breakfast, I made my Pesto Mozzarella Make-Ahead Breakfast Sandwiches. If you’ve been around for a while, you know I’m obsessed with anything pesto, and this combination is so good. The eggs are baked with cottage cheese for an extra protein boost, and I love pairing one with a cup of coffee and some fresh fruit to start the day.

Lunch this week is my Street Corn Beef Bowls, and I’m not exaggerating when I say I could eat these every single week without getting tired of them. Sometimes I’ll make them with sweet potatoes, other times with rice, depending on what I’m in the mood for. The street corn mixture is so flavorful, and these bowls are packed with protein, carbs, and fiber to keep you full and fueled all afternoon.

For snacks, I made my Copycat Costco Heavenly Hunks, which is a Substack-exclusive recipe. They’re incredibly easy to make and give you that same delicious flavor as the Costco version right at home. They’re perfect to keep on hand for an easy snack, and one of my favorite ways to enjoy them is crumbled over a yogurt bowl for a little afternoon treat.

And as always, I finished my prep by washing and storing all of my fresh fruit. It’s such a simple habit, but it helps everything last longer and makes grabbing a healthy snack throughout the week so much easier.

I spent the beginning of this week celebrating my birthday, which was such a fun way to kick off a week that’s already full of celebrations. And finally, I made my Creamy Fruit Salad, which is one of my favorite recipes this time of year. It’s perfect for Fourth of July gatherings or any summer get-together. I mix in Chobani’s 20g Protein Yogurt Drink, which makes it extra creamy while adding a boost of protein that I love.

Happy Thursday! I hope you’re having a great week so far. I’m finally starting to feel settled into my new home, and it has been so nice to be out of moving-transition mode and back in the kitchen creating recipes for you. I can feel the inspiration starting to come back, and I’m excited to dive into more fresh, easy summer meals over the next few weeks.

Lately, I’ve been craving simple recipes that don’t require a lot of thought or effort, and that’s one of the reasons I love meal prep so much. During busy seasons of life, it gives you something reliable to fall back on. The best part is that meal prep can look different depending on what you need. Some weeks that might mean prepping full meals, while other weeks it might just be breakfasts or lunches. There’s no one right way to do it.

My favorite formula is prepping breakfast, lunch, dinner, and one easy snack or treat option. Having meals ready to go makes such a difference after morning workouts or during busy workdays when I need something quick and nourishing. Even if I only prep breakfast for the week, it still helps take one thing off my plate.

Now onto this week’s recipes! I’m especially excited about the Chicken Teriyaki & Veggies Sheet Pan Dinner. Everything cooks together on one pan, which means minimal cleanup, and the combination of tender chicken, fresh veggies, and teriyaki flavors is so good. It’s perfect for an easy weeknight dinner, or you can pair it with rice and portion it into meal prep containers for lunches throughout the week.

For breakfast, I made my High-Protein Breakfast Bowls, and they’ve been saving me this week. They’re packed with protein, easy to reheat, and keep me full all morning long.

For lunch, I prepped my Dill Pickle Tuna Salad. It’s incredibly simple to make and delicious served on sourdough toast, crackers, or however you like to enjoy tuna salad.

For snacks, I made Lemon Raspberry Chia Pudding. It’s refreshing, lightly sweet, and perfect for summer. I love keeping a few jars in the fridge to grab throughout the day whenever I need a quick snack.

And as always, I washed and prepped my fruit for the week to keep it fresh longer and make healthy snacking a little easier. Always helps so much!!

I hope you’re having a great week. Can you believe we’re already halfway through June? Summer always seems to fly by, and this week has been filled with getting settled into my new house. I’ve spent a lot of time unpacking, organizing, and creating new systems, and honestly, I’m loving it. Having a fresh space has been so motivating, especially in the kitchen. It’s been fun figuring out how to make everything more functional and dreaming up new recipes to share with you.

Before packing up my old kitchen, I made one last recipe that I couldn’t wait to include in this week’s meal prep plan: Avocado Lime Chicken Salad. This time of year, I love having a fresh grilled chicken salad ready to go, and the combination of the sweet corn, creamy avocado, and zesty dressing is so good. It’s delicious on toast, served with chips, or enjoyed on its own for an easy lunch. I have a feeling this one is going to be on repeat all summer long.

Also on this week’s meal prep plan are these Make-Ahead Spinach, Sun-Dried Tomato, and Feta Breakfast Sandwiches. Every time I pack up a home, I’m reminded of how much stuff I’ve accumulated that I don’t really need. It’s actually been really refreshing to donate, declutter, and head into this new space with a little less.

I’m incredibly excited for the move, but I’ll admit I’m also a little nervous about transitioning into a new kitchen. I’ve spent so much time cooking, creating recipes, and filming in my current space that it’s become second nature. There’s always a bit of an adjustment period when learning the flow of a new kitchen.

I officially closed down my kitchen yesterday and did a small snack prep to help me get through the next few busy days. Honestly, it’s been such a lifesaver. I made yogurt and fruit jars, protein snack bites, high-protein snack boxes, and hard-boiled eggs to keep on hand. Having easy, protein-packed options ready to grab between packing sessions has made a huge difference in keeping my energy up and helping me stay satisfied throughout the day.

I am so excited for you to try the Mediterranean Tortellini Salad. I made it last week and genuinely could not stop eating it. Anything with cheese tortellini is an automatic win in my book, but this one is especially perfect for summer. Prep it for easy lunches throughout the week or serve it as a side dish for cookouts and gatherings.

Hi friends! Happy Thursday! I hope you’re having a great start to your week and to the month of June. I honestly can’t believe we’re already in full summer mode, although it definitely feels like it here in Austin. This summer is shaping up to be a busy one as I’m currently packing up and preparing to move into a new house. I’m incredibly excited, but as anyone who’s moved knows, all the packing, organizing, and logistics can feel a little chaotic. I’m definitely looking forward to getting settled in and making the new place feel like home.

With everything going on, I was especially grateful to get what will likely be my last meal prep done in my current kitchen. That’s the meal prep plan I’m sharing with you today! I say this all the time, but having even one or two things prepped ahead of time can make such a difference during a busy week. Whether it’s breakfasts ready to grab or lunches ready to reheat, a little preparation goes a long way.

This week’s meal prep includes a brand-new recipe that I’m really excited about. Summer produce is one of my favorite parts of this season, so I put together a Summer Sausage Skillet with Jalapeño Crema featuring fresh zucchini and squash. Everything comes together in one pan, making it a simple and easy weeknight meal. I like serving it over rice to make it a little more filling, and it reheats beautifully throughout the week.

I also made my Bacon & Cheddar Cottage Cheese Egg Bites, which have been a longtime favorite around here. They’re perfect for busy mornings and heat up in just minutes. Paired with a slice of sourdough, they make for a balanced and satisfying breakfast.

For lunches, I prepped BBQ Chicken Sweet Potato Bowls. The barbecue chicken is made in the crockpot, which is one of my favorite meal prep shortcuts. You can throw everything in, let it cook while you’re tackling other things, and come back to a delicious protein that’s ready to use. These bowls are easy to portion out and reheat throughout the week.

And of course, I couldn’t skip one of my all-time favorites: Protein Snack Bites. These never get old. They’re perfect for grabbing before a workout, as an afternoon pick-me-up, or anytime you need a quick snack. They’re simple, delicious, and always a staple in my meal prep rotation.

Hi friends and happy Thursday!

I hope you had a wonderful Memorial Day weekend. I don’t know about you, but after taking Monday off, this week has felt a little all over the place for me. Short weeks somehow always throw me off a bit, but I’ve been trying to get back into a good rhythm and focus on the things that help me feel my best and meal prepping has definitely been one of them.

With summer here and schedules getting busier, I’ve really been focusing on having more high protein, easy meals and snacks ready to grab throughout the week. Between being in and out of the house, running around, and trying to stay on track with goals, it’s such a game changer to have a few things already prepped in the fridge. Taking even a little bit of time at the beginning of the week to prepare meals always helps me feel more grounded and makes healthy choices so much easier during busy days.

As always, my meal prep plans include an easy breakfast, a simple snack, a salad or lunch option to keep in the fridge, washed and prepped fruit for easy snacking, and a quick dinner to reheat during the week.

This week I’ve got a few really good ones for you! First up are my Healthier Cosmic Brownie Bites. Cosmic brownies were such a childhood favorite for me, and I wanted to recreate that nostalgic flavor using simple ingredients like dates and cacao powder. These are the perfect little snack or sweet treat to keep in the fridge during the week.

For breakfast, I made High Protein Sheet Pan Pancakes, which have been so nice to have ready in the mornings. I’ve been pairing them with a little Greek yogurt for extra protein, and honestly it feels like such a treat to start the day with.

For lunches, I prepped my Street Corn Inspired Grilled Chicken Salad, and if you know me, you know I can never get enough street corn flavors this time of year. This one is packed with flavor, and I especially love making extra grilled chicken the night before to use for easy leftovers and throw this together quickly.

For dinners, I made my One Pan Summer Veggie & Beef Skillet, which comes together in one pan and is so good served over rice or quinoa for an easy weeknight meal.

And of course, I washed and stored all of my berries for the week. This is something I’ve done for years because it helps them last longer and makes it so much easier to grab them for yogurt bowls, snacks, or breakfasts throughout the week. I’m always so much more likely to actually eat and use my fruit when it’s already washed and ready to go.

Hi friends! Hope you’re having a great week! Can you believe we’re already almost to June? I’d love to know if you have any fun plans for Memorial Day weekend. I’ll be hanging around Austin and honestly don’t have too much planned, which I’m really looking forward to. It’s wild to think we’re already in May, April absolutely flew by. It ended up being such a meaningful month, especially with everything leading up to and surrounding the Boston Marathon.

So much of April was about staying consistent, trusting my training, and continuing to show up, even when it felt challenging. And then getting to actually run the Boston Marathon was such an incredible, full-circle moment. I’m so proud of the work that went into it, not just the race itself, but all of the early mornings, long runs, and disciplined days leading up to it.

There’s something really special about seeing that kind of dedication come to life. It reminded me how important it is to trust the process, listen to your body, and give yourself credit along the way.

Boston Marathon

April felt like the perfect balance of build-up and reset. The first half of the month was all about preparing for the Boston Marathon! Getting in those final runs with friends, soaking up the excitement, and checking off all the little last-minute details before heading out.

Race day was the high of the month. There’s nothing quite like working toward something that big and finally getting to live it.

And then… the slowdown. Coming home, everything shifted in the best way. After a nonstop start to the year, it’s been so refreshing to ease off the gas, settle back into a routine, and not have a training plan looming over the calendar.

April was a big month! Pushing toward a big goal, accomplishing it, and then giving myself the space to truly unwind after. Exactly what I needed.
