indirectly, with my professional world.</p><p>This is a moment to recognise that food safety begins long before the factory gate. It starts with the cloud, the droplet, the hidden chemistry that travels from the sky to the soil. And at the heart of it all lies testing &#8211; the invisible act that turns uncertainty into safety and protects health across every continent.</p><p>Some decisions remain invisible. A pH test that determines whether water will lock iron in the soil or release it. A chromatographic analysis that detects nitrates or heavy metals before roots can absorb them. A microbiological test confirming the absence of E. coli before harvest. These acts do not make headlines, but they draw the boundary between a healthy crop and a compromised one, between a nutritious meal and a source of chronic illness.</p><h5>For me, this is not a metaphor.</h5><blockquote><p>It is the daily fabric of Quality, Food Safety, and Compliance. </p></blockquote><p>And this week, the global community gathers in Stockholm to turn its attention to water &#8211; not as a simple resource, but as the foundation of life, agriculture, and human health.</p><h4>Rainwater &#8211; The Chemistry of the Cloud</h4><p>Rainwater is not pure water. Carbon dioxide gives it a natural pH of about 5.6 &#8211; slightly acidic, essential for mobilising phosphorus and making minerals like calcium and iron available to plants. These minerals are not just plant nutrients; they build our bones, sustain our hearts, and carry oxygen in our blood. </p><blockquote><p>When rain nurtures the soil, it nurtures us.</p></blockquote><p>Lightning fixes nitrogen from the atmosphere, creating natural fertiliser that falls freely on fields. This nitrogen becomes the protein in our bread, the amino acids in our vegetables.</p><p>But in industrialised areas, <em>sulphur</em> and <em>nitrogen oxides</em> turn rain acidic. This acid rain leaches nutrients from the soil and releases<em> toxic aluminium</em>. <em>Heavy metals</em> like cadmium and lead enter the food chain &#8211; cadmium damages kidneys and bones, lead harms brain development in children. </p><p>Testing rainwater pH is a public health sentinel, an early warning that the air we breathe is reflected in the food we eat.</p><h4>Irrigation Water &#8211; The Chemical Reactor at the Root</h4><p>If rainwater is nature's gift, irrigation water is our responsibility. It carries ions that interact with soil and roots. <em>High sodium</em> disperses soil, creating a crust that suffocates roots. High salt content stresses plants, reducing yields. But the health impact goes further.</p><p><em>Nitrates</em> from fertilisers accumulate in leafy vegetables. In the body, they convert to nitrites, which reduce blood's oxygen-carrying capacity &#8211; especially dangerous for infants, causing blue baby syndrome. <em>Chlorine</em> in water can form disinfection by-products linked to cancer. <em>Calcium deficiency in plants</em> means calcium deficiency in our diets &#8211; leading to osteoporosis and hypertension. </p><blockquote><p>Water quality is health quality.</p></blockquote><h4>Testing Systems &#8211; The Unseen Eye</h4><p>Laboratories stand guard between field and fork. ISO 17025-accredited labs monitor heavy metals like arsenic &#8211; found in groundwater across Bangladesh, India, China, and parts of the US and Canada. Arsenic is a silent killer, causing cancers and cardiovascular disease. The WHO ( World Health Organization) has called it "<em>the largest mass poisoning of a population in history.</em>" </p><p><em>Microbiological testing </em>detects E. coli and Salmonella &#8211; pathogens that cause outbreaks globally. <em>Pesticide residues</em> are tracked through chromatography, linked to endocrine disruption and neurological disorders. Without this data, farmers work blind. With it, they can adjust, change, or certify. Testing is not an expense; it is a public health investment.</p><h4>Regulatory Systems &#8211; Protection Through Law Across Regions</h4><p>Regulation has made testing an obligation. But the frameworks differ across the world, reflecting different priorities and challenges.</p><p>In the European Union, Regulation 2020/741 classifies irrigation water into four classes &#8211; Class A mandatory for raw vegetables, with zero detectable E. coli. The Nitrates Directive prohibits fertiliser application during periods with high runoff risk, preventing nitrate leaching into groundwater &#8211; a problem that has caused methaemoglobinaemia outbreaks across rural <strong>Europe</strong>. The EU enforces some of the strictest limits for pesticide residues, driven by the precautionary principle.</p><p>In the <strong>United States</strong>, the Food Safety Modernization Act (FSMA) &#8211; specifically the Produce Safety Rule &#8211; establishes science-based standards for agricultural water quality, including testing for generic E. coli. The Safe Drinking Water Act and Clean Water Act regulate water at the source, while the EPA sets maximum contaminant levels for over 90 contaminants. The US approach is often more risk-based and flexible than the EU's, but this can create variability across states.</p><p>In <strong>Canada</strong>, the Safe Food for Canadians Regulations (SFCR) require preventive controls for water used in food production. The Canadian Food Inspection Agency (CFIA) enforces standards that align closely with Codex Alimentarius and US FSMA, with particular emphasis on water quality in fresh produce. Canada has some of the strictest limits for arsenic and lead in drinking water.</p><p>In <strong>Asia</strong>, the regulatory landscape is highly diverse. <strong>Japan</strong> has the Food Sanitation Act and the Positive List System &#8211; among the strictest in the world for pesticide residues. <strong>China</strong> has the Food Safety Law and National Standards for Drinking Water Quality, but enforcement varies widely between urban and rural areas. <strong>India</strong> has the Bureau of Indian Standards (BIS) for drinking water and the Food Safety and Standards Authority of India (FSSAI), but groundwater arsenic and fluoride contamination remain critical public health crises. Southeast Asian nations like <strong>Vietnam</strong> and <strong>Thailand</strong> are increasingly adopting international standards to maintain export market access.</p><p>When limits are violated, consequences are immediate. Citrus rejected at EU borders, rice rejected for cadmium in Asia, E. coli outbreaks leading to lawsuits in North America. Compliance is not a luxury; it is a shield between the consumer and chronic illness.</p><h2>Sustainability Systems &#8211; Protecting Planet and Health Worldwide</h2><p>This week reminds us that sustainability is a necessity &#8211; whether in the rice paddies of Vietnam, the cornfields of Iowa, or the wheat fields of Saskatchewan.</p><p>&#183; <strong>Rainwater harvesting </strong>reduces pressure on aquifers and brings water with natural pH. This practice is widespread in parts of India and China, and increasingly adopted in Europe and North America.</p><p>&#183; <strong>Drip irrigation </strong>cuts water use and limits pathogen spread &#8211; now standard in California, Israel, and increasingly in water-scarce regions of Asia and Africa.</p><p>&#183; <strong>Conservation agriculture </strong>(no-till) reduces erosion and runoff of pesticides &#8211; growing in the US, Canada, Brazil, and Australia.</p><p>&#183; <strong>Healthy soils filter contaminants naturally</strong> &#8211; now a priority in EU agricultural policy, US conservation programs, and Chinese agro-ecological initiatives.</p><p>&#183; <strong>Agroforestry</strong> intercepts pollutants &#8211; practiced traditionally in parts of Asia and Africa, and increasingly promoted in Europe and the Americas.</p><blockquote><p>The <strong>water footprint</strong> is not just environmental &#8211; it is a health metric. </p></blockquote><p>When we reduce grey water, we reduce pollutants. When we optimise toward green water, we reduce reliance on groundwater that may be contaminated with arsenic or fluoride &#8211; a critical global concern. </p><blockquote><p>Sustainability is health &#8211; whether in rural India, suburban America, or urban Europe.</p><p>Treatment costs for contaminated water are dwarfed by healthcare costs of chronic diseases. Yield losses translate into malnutrition &#8211; when crops fail, children go hungry, and the long-term impact of childhood malnutrition is irreversible. </p><p><strong>Testing and certification costs are miniscule compared to the cost of a foodborne illness outbreak.</strong> </p><p>A single outbreak can cost a farming community millions &#8211; and more importantly, it can cost lives.</p><p>In 2011, an E. coli outbreak in Germany linked to contaminated sprouts killed dozens and sickened thousands. The economic cost exceeded &#8364;1.3 billion &#8211; and the ripple effects were felt across Africa, Asia, and Europe. In 2018, a romaine lettuce outbreak in the US and Canada linked to contaminated irrigation water caused illnesses and a nationwide recall, costing the industry hundreds of millions. Quality is the most cost-effective public health intervention available &#8211; from the US to Canada to Asia to Europe.</p><h4>Human Systems &#8211; Testing as an Act of Care for Bodies and Communities</h4><p>Beyond the numbers are human bodies &#8211; farmers, workers, communities across every continent. Safe water protects the farmer who walks barefoot through the furrows in Vietnam, whose skin absorbs pesticides. It protects the migrant worker who washes vegetables in California, who inhales chlorine vapours. It protects the Indigenous community in Canada that drinks from the same well from which they irrigate. It protects the family in rural India that depends on the same source for drinking, cooking, and subsistence.</p><p>Testing is not merely a technical procedure. It is an act of care for human flesh and bone &#8211; everywhere. Chronic exposure to nitrates causes blue baby syndrome &#8211; documented across Europe, North America, and Asia. </p><p><em>Pesticide exposure </em>from irrigation water leads to higher rates of cancer and neurological disorders &#8211; from the farmlands of India to the vineyards of France to the orchards of California. </p><p><em>Arsenic, lead, and cadmium </em>accumulate over decades, causing damage often diagnosed too late whether in Bangladesh, the US, or Japan.</p><p>When a laboratory validates water, it is not simply saying "parameters are within specifications." It is saying: "this community is safe for one more season." It says "this child can drink without risk".  It says "this pregnant woman can eat these vegetables without fear" &#8211; Their <strong>wellbeing</strong> is not separate from our <strong>quality systems. </strong></p><blockquote><p>It is the human side of prevention &#8211; what transforms a written procedure into an act of care <strong>across every border.</strong></p></blockquote><h4>The Thread That Connects Us All</h4><p>This week reminds us that we manage not just pipes, but the relationship between chemistry, biology, economy, and human dignity &#8211; a relationship that <strong>transcends borders.</strong> Every test report, every sample taken from rain or from a well, every decision to stop a pump, every investment in a drip irrigation system, every audit of an upstream water source is an act of prevention &#8211; not just against a technical non-conformance, but against disease, disability, and death, whether in the European Union, the United States, Canada, Asia, or beyond.</p><blockquote><p>In my field, we do not test to find problems. We test to protect life &#8211; everywhere. We test because we know that water &#8211; whether falling from the sky or delivered through pipes &#8211; is the unseen foundation of human health. </p></blockquote><p>We test because <strong>prevention, in its essence, is nothing other than respect for the fragile bodies </strong>that depend on what we grow, whether they are halfway around the world or in our own neighbourhood.</p><blockquote><p>Health is not the absence of illness. It is the presence of systems that protect, prevent, and preserve &#8211; from the cloud to the root, from the root to the plate, from the plate to the person. </p></blockquote><p><strong>Resilience</strong> &#8211; whether of a crop, an irrigation system, a community, or a human body &#8211; is not the absence of the storm. It is the presence of systems that anticipate, adapt, and endure. And that endurance begins with a single droplet &#8211; measured, tested, understood, and respected &#8211; in any corner of this interconnected planet.</p><p><em>This article, written at the heart of World Water Week 2026, is dedicated to all those who, behind a microscope, at the edge of a field, or in front of a regulatory spreadsheet  worldwide, understand that water is not merely a resource. It is the architect of health, the bridge between science and survival, and the oldest promise of our planet. Because over the past few months, this exercise (choosing an international day and reflecting it in what I do in my professional life, directly or indirectly) has become a kind of anchor. I started on LinkedIn almost a year ago, then it expanded to Substack. It is not just content, it is a way of realising that my work has deeper roots than the tasks in front of me.</p><p>So when July 24 passed and I was already caught up in other waves, my first thought was: I have broken the thread. My second thought: but isn't this exactly the opposite of what this day celebrates?</p><p><strong>Because self-care is not about calendar perfection.</strong> </p><p>It is not about posting exactly on that day, having a flawless reel or writing an inspiring article while drinking green tea. <em>Self-care is, rather, about giving yourself the space to arrive later, but to arrive.</em></p><p>So today, July 31, I decided not to break the tradition. I recalibrate it.</p><h3>                      Why July 24?</h3><blockquote><p>The date of <strong>July 24 (7/24)</strong> is not chosen by chance. It conveys a universal, simple and profound message: <strong>seven days out of seven</strong>, <strong>twenty-four hours out of twenty-four.</strong> Self-care is not an occasional luxury, but a continuous commitment, one that deserves to be celebrated on a planetary scale.</p></blockquote><p>Officially recognised in over <em>170 countries</em>, this day brings together communities, organisations and individuals from all corners of the world, in a common effort to redefine our relationship with health, wellbeing and inner balance.</p><h4>The deep connection with the themes that matter.</h4><p><strong>1. Achievement</strong></p><p><strong>International Self-Care Day</strong> is not about perfection, but about conscious action. Every small step, a walk in nature, a moment of deep breathing, a conscious food choice&#8230; is a personal achievement. The day celebrates the courage to put health first in a world that often glorifies overwork. </p><p>And for me, even this article written a week late is an achievement, because I chose not to give up on the intention.</p><p><strong>2. Wellness</strong></p><p>From mental health to physical health, from rest to nutrition, this day encourages a holistic approach. It is an opportunity to reflect on the <strong>seven pillars of self-care</strong>: healthy eating, physical activity, quality rest and sleep, emotional health, authentic social connections, medical prevention, and stress management. Looking back, I realise that exactly these pillars were missing in the week I missed July 24. The supplier hesitates. The testing was only done on the first batch of the year, not the last three. She stops the entire lot from entering production. No one thanks her that day. fraud.</p><p>When the purchasing manager wants to change the supplier of dried herbs because the new one is cheaper, you do not just say "no." You sit down with him and explain, without drama: "The new supplier does not test for aflatoxins. If we get a contaminated batch, we are not looking at a fine. We are looking at a recall that will cost us six months of revenue and possibly someone's liver." </p><p><em>You speak his language &#8211; money and reputation &#8211; while holding the line on safety.</em></p><p>When the commercial team pushes to launch a new gummy vitamin with a "natural colour" from carrot extract, you ask for the full pigment profile. The supplier substituted a cheaper synthetic dye. Identical colour. Completely different safety profile. You reject the batch. The launch is delayed. The children eating those gummies will never know your name. That is the point.</p><blockquote><p>Being a voice also means you walk to the real place. In Japanese, they call it Gemba (the actual place, where value is created). In plain English, it means you leave your desk. </p></blockquote><p>A <strong>Gemba walk</strong> concept is simply the habit of going to see the actual process, in the actual location, with the actual people who do the work, so where the real work is happening.  </p><p><em>At Toyota, this was never a suggestion. It was the rule: engineers and managers spent hours on the factory floor, not to find someone to blame, but to see with their own eyes where the problem actually lived.</em></p><p>Same in food manufacturing: you go to the loading dock where the summer heat is melting the seal on the delivery door. You go to the brining station where the floor is always wet and someone has placed an electrical cable right across the walking path. You go to the bakery at 3 a.m  when the night shift is alone, and you kneel next to the mixer to see if the cleaning schedule was actually followed. You do not stay at your desk all day buried in papers, reports, and procedures.</p><p><strong>Those documents are useful, but they are not the truth. The truth lives on the floor, in the hands of the people doing the work. </strong></p><p>You go there with a question: "What makes it hard for you to do this job safely?" Then you shut up and listen. The operator will tell you exactly what the monthly report hid. She will tell you about the pressure to skip a rinse cycle. About the scale that drifts and nobody has calibrated. About the bag of "organic" flaxseed that smells slightly of solvent &#8211; reported three weeks ago, and nobody answered.</p><blockquote><p>But here is the hardest part of being a voice. You have to stay calm when the pressure is real.</p></blockquote><p>Friday afternoon, three hours before a long weekend. Production is behind by two shifts. The commercial team is pacing. The CEO is sending tense emails. And you notice that a batch of ready-to-eat product has been sitting at the wrong temperature for just enough time to create doubt &#8211; not enough to be sure it is bad, but enough to know it is not safe. Everyone looks at you. The cheapest path is to ship it and hope. </p><blockquote><p>Being a voice means you say, quietly, "We are not shipping this until we test." You do not shout. You do not threaten to resign. You simply state the boundary, and you accept that for the next hour, you will be the most unpopular person in the building.</p></blockquote><p>Then, on Monday, when the test comes back positive for spoilage organisms, nobody apologizes to you. But the next time a similar situation happens, the production manager hesitates. And then she calls you. And that is how culture changes &#8211; one uncomfortable decision at a time.</p><h3>The person who trully represents food safety culture does not see herself as a hero. </h3><p>She sees herself as a gardener and a detective. She pulls out the small weeds &#8211; the broken thermometer that nobody replaced, the hand sink that is too far from the line, the instruction that is written in a language not everyone reads &#8211; before they become big problems. She also follows the quiet scent of fraud: the supplier who rushes the paperwork, the certificate of analysis that looks too perfect, the "sourdough" bread that contains no live culture, only vinegar and baking powder for the tang. She protects the people who speak up, even when their timing is inconvenient. And she measures success not by how many non-conformities she found, but by how many problems were reported by others before she even knew they existed.</p><p>In the end, being a voice in a food safety culture &#8211; whether you work with bread, protein bars,  vitamins, frozen vegetables, supplements , or whatever &#8211; has very little to do with happiness. It has everything to do with the quiet, stubborn refusal to look away. </p><p><em>Because somewhere, on the other end of the supply chain, someone will open that package and trust that you did your job. That trust is the only thing that matters.</em></p><p>Looking back after years of this work &#8211; day shifts, night shifts, twelve-hour shifts, overtimes, weekends, holidays, the cold of the freezer, the heat of the bakery, the smell of reagents in the laboratory &#8211; this is what it all adds up to. Beyond the research and the scientific side, beyond the data and the validations, there was also the real hands-on work. Standing next to the line. Listening to the operators. Getting my shoes dirty. Not a big hero moment. Not a trophy on a shelf. Just a small piece of impact, buried in every batch that left the door clean and every recall that never had to happen. The next one is &#8220;nut-free.&#8221; Three extra minutes are the difference between a label and a lawsuit.</p><p>A cooler reads 3&#176;C. Not 4&#176;C. Not &#8220;close enough.&#8221; The number gets logged, exactly as it is.</p><p>An allergen label prints slightly off-center. The line stops. Two cases are scrapped because &#8220;probably readable&#8221; isn&#8217;t good enough for a kid with a peanut allergy.</p><p>In the morning meeting, a junior tech speaks up. No sighs. No eye rolls. People listen.</p><p>None of that makes the World Food Safety Day poster. But that&#8217;s the difference between awareness and protection.</p><blockquote><p>For those of us in Quality, Food Safety, EHS, and Compliance, June 7 isn&#8217;t the work. It&#8217;s the reminder of the work we do every other day.</p></blockquote><p><strong>No one saves a meal alone</strong></p><p>Food safety is a web held by strangers.</p><p>A farmer tests irrigation water at sunrise.</p><p>A driver checks a reefer at 4&#176;C and calls it in anyway, because one degree below danger still feels too close.</p><p>A lab tech waits the full 24 hours on a PCR test before signing off.</p><p>A receiving clerk checks every allergen statement against the spec. The PO says &#8220;may contain soy.&#8221; The spec says &#8220;soy-free.&#8221; The truck waits.</p><p>Miles away, a parent reads a label twice before handing a snack to a child and never thinks of any of them.</p><p>One thread connects them all: the belief that the person before you did the job right.</p><p>Break it anywhere,  a missed allergen wipe-down, a silenced concern, a moment of &#8220;probably fine&#8221;, and the ripple reaches someone&#8217;s kitchen, someone&#8217;s hospital.</p><p>World Food Safety Day exists because that thread snaps more often than we admit.</p><p><strong>Three tables. One conversation.</strong></p><p>I&#8217;ve been in rooms where the lab says, &#8220;We found almond protein. Below the legal limit.&#8221;</p><p><em>Production</em> says, &#8220;But we&#8217;re running nut-free on that line tomorrow.&#8221;</p><p><em>Quality</em> says, &#8220;Then we clean, we verify, and we don&#8217;t start until the swab says zero. Get me data.&#8221;</p><h5>That&#8217;s interdisciplinarity. Microbiologists, CHEMISTS, engineers, sanitation crews, auditors. Everyone owns a piece.</h5><blockquote><p>Ownership without talking is just noise.</p></blockquote><p>The best cultures don&#8217;t avoid disagreement. They ask for it, early and with respect. The goal isn&#8217;t being right. It&#8217;s getting it right.</p><p><strong>The quiet war: authenticity vs. fraud</strong></p><p>Posters don&#8217;t show this part: not everyone plays by the rules.</p><p>"Pure" olive oil cut with cheaper oils. Honey diluted with syrup. &#8220;Wild&#8221; salmon that never saw a river. &#8220;Allergen-free&#8221; spices run on shared lines with no validation.</p><p><em>Food fraud</em> is not a mistake. It&#8217;s a decision made when no one asks, &#8220;How sure are we?&#8221; It hides behind the same labels honest producers earn.</p><p><em>Authenticity</em> is the opposite. It&#8217;s the choice to verify, even when it costs time and money. Even when no regulator is watching. To test. To trace. To say, "Show me the data."</p><p>Labs aren&#8217;t cost centers here. They&#8217;re truth departments. A mass spec doesn&#8217;t get tired. An ELISA test for peanuts doesn&#8217;t play favorites.</p><p>A strong culture doesn&#8217;t fear what the lab might find. It&#8217;s a contract written in science.</p><p><em>World Food Safety Day </em>celebrates those systems. Safety culture uses them, quietly, every day.</p><p><strong>Safety culture is not a poster</strong></p><ul><li><p>It&#8217;s not a slogan in the breakroom.</p></li><li><p>It&#8217;s not a training module you click through.</p></li><li><p>It&#8217;s not &#8220;we value safety&#8221; printed on a badge.</p></li></ul><blockquote><p>Safety culture lives in the decisions people make when no one is checking.</p></blockquote><p>The sanitation tech still runs the ATP swab after the allergen changeover.</p><p>The operator still stops the labeler for that off-center print.</p><p>The tech still flags the trace-positive result, even if it delays release.</p><p>It shows up in small frictions. Moments where the right thing costs you time, money, or comfort. People do it anyway because they trust the system will back them up.</p><p>Without that, June 7 is just a date.</p><p><strong>So what can you do this June 7?</strong></p><p>One thing. No new policy. No new software.</p><p>Pick one routine task: a temp log, an allergen changeover, a label check, and ask the person who does it:</p><p>&#8220;What makes this hard to do right?&#8221;</p><p>Then listen. Don&#8217;t fix. Don&#8217;t defend. Just listen.</p><p>You might hear:</p><p>&#8220;The washdown SOP says 15 minutes, but we can&#8217;t hit zero unless we do 18.&#8221;</p><p>&#8220;The &#8220;may contain&#8221; vs &#8220;free-from&#8221; list changes weekly and I&#8217;m not sure which is current.&#8221;</p><p>&#8220;I flagged a label issue last month. Nothing changed. So I stopped.&#8221;</p><p>Those aren&#8217;t people failures. They&#8217;re system failures. Culture failures.</p><p>They are the only ones worth fixing, on June 7 and every day after.</p><p>Because food safety is not a day of awareness. It&#8217;s the quiet, daily, unglamorous choice to protect people we&#8217;ll never meet.</p><p>That choice doesn&#8217;t need a hashtag.</p><p>It needs a culture.</p><div><hr></div><p><em>World Food Safety Day &#8211; June 7</em> &#8211; is led by the World Health Organization (WHO) and the Food and Agriculture Organization of the United Nations (FAO). It is the daily fabric of Quality, Food Safety, Nutrition, EHS, and Compliance.</p><p><strong>A personal discipline</strong></p><p>For several months now, I have been choosing one internationally recognized day each month that touches, directly or indirectly, what I do. Not to celebrate. To pause for a moment.</p><p>May brings us <em>World Metrology Day</em>. Technically, it is about standards, units of measurement, accredited laboratories. But beneath all that lies something less comfortable: trust that says nothing.</p><p>In our field, we do not wait for a deviation to react. We design HACCP plans. We validate methods. We calibrate instruments. We trace root causes. We verify every result along the chain.</p><p>The same logic applies beyond the factory: a nutritional claim, a temperature log, an audit non-conformity. These are not separate from quality. They are quality applied to evidence.</p><blockquote><p><strong>More than instruments</strong></p></blockquote><p>World Metrology Day is often seen as a niche observance for laboratory professionals and weights-and-measures inspectors. But beyond the instruments and certificates lies something less technical and more annoyingly vague: <strong>Trust</strong>.</p><p>A critical control limit is just a number on paper if the sensor measuring it is not calibrated.</p><p>A nutritional claim is only as accurate as the analysis behind it.</p><p>An audit is only meaningful if the data can be trusted.</p><p>Metrology protects consumers without them ever knowing. It supports teams making decisions under pressure. It ensures that when we say "safe," that is not an opinion, but a verified fact.</p><p>But that is the pretty part, the one we write into procedures. In your own decisions.</p><ol><li><p>Check the calibration log.</p></li><li><p>Test the sample again.</p></li><li><p>Ask yourself why that result looks too convenient.</p></li></ol><p>Not because you are paranoid. But because<em> trust without evidence is not a strategy. It is a daily chore, just as you do not audit once a year or test only when a problem appears.</p><p>It should be celebrated day after day, in every measurement, every verification, every quiet calibration.</p><blockquote><h4>What matters is not the devices themselves. It is the systems that turn them from inert objects into the foundation of trust.</h4></blockquote><p>This May, I do not propose a grand gesture. I propose a quiet audit: look at the measurements you depend on: at work, in your supply chain, in your compliance decisions, and ask whether they are designed to confirm before they fail.</p><p>And ask whether you are waiting for proof of deviation, or verifying before it begins.</p><p>Precision is not dramatic. Verification is not cynical. It is the presence of systems that protect, prevent, and preserve.</strong></p><p>Some decisions are invisible. A well-calibrated instrument in a laboratory. A verified cold chain during transport. A documented corrective action before a deviation becomes a crisis. These acts do not make headlines, but they shape the boundary between safety and harm.</p><p>For me, this is not a metaphor. It is the daily fabric of Quality, Food Safety, Nutrition, EHS, and Compliance.</p><p>As part of a reflection I have adopted, each month I choose an internationally recognized day that intersects, directly or indirectly, with my professional world. April brings us World Health Day &#8211; a moment to acknowledge that health begins long before a diagnosis. It begins with a preventive mindset. And prevention begins with the disciplines that most people never see.</p><p>In my field, we do not wait for contamination to react. We design HACCP plans. We validate cleaning protocols. We audit suppliers. We trace root causes. We assess every risk along the chain. The same logic applies to broader health: clean water, safe air, stable working conditions, mental wellbeing, access to nutritious food. These are not separate from quality. They are quality, applied to life itself.</p><blockquote><p><strong>A safe and healthy workplace is not a privilege</strong>. </p></blockquote><p>It is the foundation of sustainable performance. When people feel physically safe, mentally supported, and valued beyond their output, they bring their best judgment, creativity, and care. Well-being at work means psychological safety, fair workload, recognition, and the trust that speaking up will not be punished. Health and well-being are not separate from quality systems. They are the human side of prevention. World Health Day is a reminder that a healthy team is more creative, more loyal, and more performant in the long term.</p><blockquote><p><strong>There is another layer to this. Fraud.</strong> </p></blockquote><p>Not the spectacular kind. The quiet, everyday substitution of a cheaper ingredient, a falsified certificate, a skipped test. In food safety and quality, we do not assume honesty. We assume that without verification, deviation is only a matter of time. We do not wait. We test. This is not merely a set of procedures. It is food safety culture &#8211; the shared commitment to doing things right even when no one is checking.</p><p>That mindset is exactly what health systems, workplaces, and supply chains need. Not passive hope. Active verification. Sample the water. Test the raw material. Check the temperature log. Audit the supplier. Not because we distrust, but because trust without evidence is not a strategy. It is a risk.</p><p>Universal Health Coverage Day (December) reminds us of access to care. World Health Day reminds us of everything that should prevent the need for care in the first place. A safe workplace. A reliable food supply. A laboratory result that is accurate the first time. An environment where people do not get sick because someone followed the standard &#8211; or because someone tested when no one was watching.</p><p>What can be done, even this month? Ask your colleagues what they truly need &#8211; not through a form, but through a real conversation. Offer one free hour for a walk or a guilt-free break. Check whether your benefits include mental health, not only medical coverage.</p><blockquote><p><strong>Small actions, consistently applied, build a culture where well-being is not a slogan.</strong></p></blockquote><p>But this day should not stand alone. Health is not an annual reminder. It is a daily discipline. The same way we do not audit only once a year, or test only when a problem appears. This day should be celebrated day after day &#8211; in every decision, every verification, every quiet act of prevention.</p><p><strong>I don&#8217;t work in health. I work in the systems that make health possible.</strong></p><p>This April, I do not propose a grand gesture. I propose a quiet audit: look at the systems you oversee &#8211; at work, at home, in your community &#8211; and ask whether they are designed to protect health before it fails. And ask whether you are waiting for proof of fraud, or testing for it.</p><p><strong>Prevention is not dramatic. Verification is not cynical. guidelines</p><h4 style="text-align: center;"><strong>Two Pyramids, One Question</strong></h4><p style="text-align: justify;">I found myself thinking about the inverted food pyramid, the one emerging from the U.S. dietary guidelines for 2025&#8211;2030, which everyone in the industry seems to be referring to lately. And while I was turning the idea around in my mind, another pyramid came back to me: Maslow&#8217;s hierarchy of needs.</p><p style="text-align: justify;">It is a model I used at the beginning of my career, about 20 years ago, when I spent a few years teaching at university in Quality and the Science of Goods (Merchandising). I used to walk my students through it, explaining how human needs build on one another, from the most basic to the most complex.</p><p style="text-align: justify;">Since then, my path moved from education into industry and regulatory work. Over time, the way I think has shifted. I no longer look at concepts separately. I tend to place them side by side, to see what they reveal when viewed together.</p><p style="text-align: justify;">Looking at these two pyramids, I started to wonder whether there might be a connection between them. One comes from psychology, the other from nutrition, food safety, and regulation. Different worlds, different purposes. And yet, when it comes to food, they seem to converge.</p><p style="text-align: justify;">In the end, they both point to the same place, what actually ends up on our plate.</p><h4 style="text-align: justify;"><strong>Maslow&#8217;s Pyramid. What We Need as Humans</strong></h4><p style="text-align: justify;">Maslow&#8217;s pyramid is not about food, but it begins with it. At the base are the essentials, food, water, air, sleep. Without these, nothing else matters.</p><p style="text-align: justify;">But today, having food is not enough. What matters is having food that is safe, that you can trust, and that supports your body rather than working against it over time.</p><p style="text-align: justify;">Once those basic needs are met, the question becomes one of safety, not just in the immediate sense, but over the long term. Then comes something more human, connection. Food brings people together, carries memory, creates moments.</p><p style="text-align: justify;">What we eat influences far more than what we see. In the short term, it affects energy, concentration, mood, and sleep. Over the long term, it plays a fundamental role in preventing chronic disease and supporting healthy aging. Through what we now understand about the gut-brain axis, it is increasingly clear that the microbiome, strongly influenced by what we eat, plays a central role in overall health, including mental well-being.</p><p style="text-align: justify;">Further up, it becomes more personal. The choices you make, the way you take care of yourself, the sense that you are doing something right for your own body.</p><p style="text-align: justify;">And at the top, food is no longer about survival or comfort. It becomes a way to support how you live, your energy, your clarity, your ability to stay present and to age well.</p><h4 style="text-align: justify;"><strong>The Inverted Food Pyramid. What We Are Told to Eat</strong></h4><p style="text-align: justify;">The inverted food pyramid, coming from a completely different space, seems to describe the same journey from the outside in.</p><p style="text-align: justify;">The recent dietary guidelines mark a shift that is difficult to ignore. Ultra-processed foods are no longer simply something to limit, but something to avoid as a category. This reflects a growing recognition that a diet built on industrial formulations does not align with how the body actually functions.</p><p style="text-align: justify;">This is also why the model appears inverted compared to the traditional pyramid many of us grew up with. What used to sit at the base, primarily grains and high-carbohydrate staples, is no longer the central foundation. Instead, the base is redefined around protein, healthy fats, fruits, and vegetables, while grains move into a supporting role. It is less a visual inversion for the sake of design, and more a reflection of a shift in priorities, from volume and energy density to quality, metabolic function, and long-term health.</p><p style="text-align: justify;">At the same time, protein is no longer treated as something to restrict, but as a foundation. The idea of including a meaningful source of protein at each meal is becoming central.</p><p style="text-align: justify;">Meals are increasingly built around <strong>protein, healthy fats, fruits, and vegetables</strong>, while grains move into a supporting role rather than being the centerpiece.</p><p style="text-align: justify;">Another important shift is the recognition of the <strong>microbiome</strong>. We are not only feeding ourselves, but also supporting a complex internal system.</p><p style="text-align: justify;">The principle becomes simple. The closer food is to its natural form, the more likely it is to support long-term health.</p><h4 style="text-align: center;">Real Food vs Ultra-Processed. Where the Gap Appears</h4><p style="text-align: justify;">And yet, when we look at what is widely available, there is often a gap between these principles and reality.</p><p style="text-align: justify;">Instead of real food, many products are built around extracts and isolates. Proteins separated from their original source, fibers added back in, plant compounds extracted and reintroduced so that products can carry appealing claims.</p><p style="text-align: justify;">At the same time, producing these extracts often requires significant resources, while other equally valuable parts of the original food are left aside. What may appear efficient from a formulation perspective is not always aligned with how sustainable food systems should function.</p><p style="text-align: justify;">This raises a simple but important question. Is this how food is meant to work?</p><p style="text-align: justify;">And perhaps more importantly. Is this what people are actually looking for?</p><p style="text-align: justify;">There is a subtle but important distinction between what makes a product more appealing and what actually supports health. Nutritional needs do not change from one year to the next. Treating them as trends risks creating confusion and, over time, eroding trust.</p><p style="text-align: justify;">More and more, the answer seems to be no. People who are trying to eat better are not looking for more complexity. They are looking for simplicity, for ingredients they recognize, for food that feels real.</p><p><strong>Ozempic and the Shift Toward Nutrient Density</strong></p><p style="text-align: justify;">At the same time, another development is making this even clearer.</p><p style="text-align: justify;">The rise of <strong>GLP-1 medications</strong> such as Ozempic is changing how people eat. When appetite decreases, quantity becomes less important, and quality becomes essential.</p><p style="text-align: justify;"><em>When you eat less, every bite matters. There is less space for food that does not bring real value. Nutritional density is no longer a recommendation, it becomes a necessity.</em></p><p style="text-align: justify;">This creates both an opportunity and a challenge. It is no longer enough to adjust labels or positioning. The focus shifts to the food itself.</p><p style="text-align: justify;">It is an opportunity to rethink how food is designed, not just to meet claims, but to deliver real nutritional value. An opportunity to move beyond reformulation for marketing purposes and toward products that genuinely support health. The real question becomes: does it support the body? Does it deliver what it promises?</p><h4 style="text-align: justify;"><strong>Where the Two Pyramids Meet</strong></h4><p style="text-align: justify;">Looking at these two pyramids together, the connection becomes clearer.</p><p style="text-align: justify;">The person described by <em><strong>Maslow</strong></em>, the one trying to build a stable life, to grow, to reach some form of fulfillment, depends on something very concrete at the base. Food that not only sustains life, but supports it. Food that builds trust.</p><p style="text-align: justify;">The <em><strong>inverted pyramid</strong></em>, with its emphasis on real food, protein, and a reduced role for ultra-processed products, offers a practical way of getting there.</p><p style="text-align: justify;">One explains what we need as humans.</p><p style="text-align: justify;">The other shows what food looks like when it actually supports those needs.</p><h4 style="text-align: justify;">In the End&#8230;</h4><p style="text-align: justify;">Food is the foundation. Without it, everything else becomes less stable. Not immediately, but gradually. Energy fades. Clarity weakens. Resilience drops.</p><p style="text-align: justify;">Because what we choose to produce and what people choose to eat is not trivial. Every product placed on the market, and every choice made at the table, has an impact on present and future health.</p><p style="text-align: justify;">What remains is a simple idea. <em>Health does not come from what is written on the package, but from what is actually on the plate.</em></p><p style="text-align: justify;">The body understands food in its natural form. Beyond that, things become less certain.</p><h5 style="text-align: justify;">So perhaps the question is not what we need to add, but what we need to return to.</h5><p style="text-align: justify;">Cooking more often. Choosing ingredients we understand. When everything works as intended, nothing dramatic happens. Food reaches consumers safely and the system moves forward without headlines.</p><p>And yet some microorganisms continue to appear again and again in outbreak reports and public health alerts.</p><p>One of them is <strong>Salmonella enterica</strong>.</p><p>For people working in food safety, the name appears regularly in hazard analyses, laboratory reports, regulatory guidance, and outbreak investigations. For the public, it usually becomes visible only when something goes wrong: a recall linked to eggs or poultry, a contaminated ingredient, or a cluster of illnesses that triggers a public health investigation.</p><p>Despite decades of progress in food safety systems, <strong>Salmonella remains one of the most frequently reported bacterial causes of foodborne illness worldwide</strong>.</p><p>Recently, however, scientists have begun exploring a different way of reducing the impact of this pathogen. Not by changing how food is produced or processed, but by preparing the human immune system to recognize the bacterium before infection occurs.</p><p>That idea is now taking shape in the form of a <strong>Salmonella vaccine currently being tested in clinical trials</strong>.</p><h4><strong>One bacterium, several diseases</strong></h4><p>Salmonella is not just one disease but a large group of bacteria capable of causing different types of infections.</p><p>Some strains cause <strong>typhoid fever</strong>, a systemic disease associated with contaminated food or water. The bacterium responsible, <em>Salmonella Typhi</em>, can spread beyond the digestive system and cause severe complications if untreated.</p><p>Other strains cause <strong>salmonellosis</strong>, one of the most common foodborne illnesses globally. Salmonella strains simultaneously.</p><h5><strong>The vaccine is called the Trivalent Salmonella Conjugate Vaccine (TSCV).</strong></h5><p>The term &#8220;trivalent&#8221; means the vaccine targets <strong>three different bacteria at the same time</strong>:</p><ol><li><p><em>Salmonella Typhi</em></p></li><li><p><em>Salmonella Enteritidis</em></p></li><li><p><em>Salmonella Typhimurium</em></p></li></ol><p>The first causes typhoid fever. The latter two are among the most common causes of foodborne Salmonella infections.</p><p>Together, these pathogens represent a large share of the global burden of Salmonella disease.</p><h4><strong>When did this vaccine research begin?</strong></h4><p>The development of this vaccine did not start recently.</p><p>The research program began <strong>in the mid-2010s</strong>, when scientists started working on combining antigens from several Salmonella strains into a single conjugate vaccine.</p><p>Preclinical studies- laboratory and animal studies designed to evaluate safety and immune response- were carried out during the <strong>late 2010s</strong>.</p><p>Once those studies showed promising results, researchers were able to move toward human clinical trials.</p><p>Regulatory authorities authorized the <strong>Phase 1 clinical trial in the early 2020s</strong>, allowing the vaccine to be tested for the first time in healthy adult volunteers.</p><p><strong>Results from the first clinical trial</strong></p><p>The <strong>Phase 1 clinical trial</strong> was conducted to evaluate two main questions: safety and immune response.</p><p>The study included <strong>22 healthy adult participants</strong>.</p><p>Each participant received either the vaccine or a placebo. Researchers then monitored their immune response and any possible side effects.</p><p>The results were encouraging.</p><p>All vaccinated participants developed measurable antibodies against the targeted Salmonella strains. This immune response, known as <strong>seroconversion</strong>, indicates that the immune system recognized the vaccine and produced antibodies.</p><p>The vaccine was also <strong>well tolerated</strong>.</p><p>The reported side effects were mild and mostly limited to temporary soreness at the injection site. More often, it comes from several layers of protection working together.</p><p>And sometimes, one of those layers begins in a laboratory studying how the immune system responds to a bacterium that It&#8217;s part of the value proposition. </p><p></p><p>As of January 1, 2026, Canada began requiring a front-of-package (FOP) nutrition symbol on foods high in sugar, sodium and/or saturated fat.</p><p>Most people talk about this change as a public-health measure. And it is.</p><p>But that&#8217;s not the whole story.</p><p>Because when nutrition moves to the front of the pack, it stops being background information. It no longer lives quietly in tables and footnotes. It becomes visible. Immediate. Commercial.</p><p>At that point, nutrition is no longer just compliance.</p><p>It becomes part of the value proposition.</p><p>Formulation matters more. Ingredient choices matter more. Product positioning matters more. Not eventually; now.</p><p>This shift is especially important in a global trade context.</p><p>Products don&#8217;t travel alone anymore. Nutritional standards travel with them. A formulation that performs well in one market may suddenly trigger a front-of-package symbol in another.</p><p>That dynamic isn&#8217;t very different from tariffs, sustainability claims, or origin rules. Each one quietly reshapes access, perception, and competitiveness.</p><p>Seen this way, the symbol itself isn&#8217;t a constraint.</p><p>It&#8217;s a filter.</p><p>Some companies will encounter it late, as a compliance issue - reacting under time pressure and at higher cost. Others will recognize it early, while there is still room to adjust. Those companies can reformulate deliberately, reposition strategically, and move across markets with confidence.</p><p>What&#8217;s often overlooked is that the tools to do this work already exist.</p><p>One example is SCAN!, a free tool launched in 2024 by the Observatory on the Quality of the Food Offer. It allows manufacturers to assess alignment with Canada&#8217;s front-of-package thresholds, compare their products with similar ones on the market, and explore reformulation scenarios that could reduce sugar, sodium, or saturated fat - sometimes enough to avoid the symbol altogether.</p><p>This is where regulation quietly shifts roles.</p><p>From obligation to insight.</p><p>From constraint to signal.</p><p>Not every regulation is designed to stop you.</p><p>Some are simply telling you where the market is going.</p><p>Sometimes regulation doesn&#8217;t close doors.</p><p>It just tells you which ones are likely to stay open &#8212; and for whom.</p><p>What changes when nutrition is no longer background information? </p><div class="captioned-image-container"><figure><a
